Baked ziti is one of those super easy recipes the whole family will love. Ziti is cooked, then tossed with spaghetti sauce, ricotta, and mozzarella cheeses.

16 ounces ziti pasta
1 large egg
15 ounces ricotta cheese
1/2 teaspoon garlic powder
1/4 cup chopped fresh basil, optional
2 cups shredded mozzarella cheese, divided
4 1/2 cups store-bought or homemade spaghetti sauce , divided
1/2 cup grated Parmesan cheese

Steps:

  • Gather the ingredients. Preheat oven to 350 F.
  • Prepare pasta according to package directions for "al dente." Drain.
  • In a large bowl, beat egg. Add ricotta cheese, garlic powder, basil (if using), and 1 cup of the mozzarella. Mix well.
  • Add cooked pasta and 2 cups of the spaghetti sauce.
  • Pour 1 cup of the spaghetti sauce in a 9 x 13-inch pan.
  • Top with the ziti mixture. Top with the remaining sauce. Sprinkle remaining mozzarella and Parmesan cheese over the sauce.
  • Cover with foil and bake for 20 minutes.
  • Remove foil and bake another 10 to 20 minutes until golden brown and bubbly. Let the pasta rest 10 minutes before serving.

When I first saw this recipe I could not believe how easy it was. Of course, I can't leave a recipe alone, and added a few changes to make it more "mine."

1/2 lb dried ziti pasta
1 lb ricotta cheese (part skim)
3 cups shredded mozzarella cheese
3 cups spaghetti sauce
1 tablespoon fresh oregano (or 1 teaspoon dried)
1 tablespoon sweet paprika
1/2 cup parmesan cheese

Steps:

  • Heat the oven to 350 degrees F.
  • Bring a large pot of salted water to boil and add the ziti. Cook until tender, about 8 minutes, then drain the pasta.
  • Place the ziti in a large bowl.
  • Mix with the ricotta and half of the mozzarella.
  • Grease a 9 x 13-inch casserole dish. Use butter, it tastes better.
  • Mix the oregano and the paprika into the spaghetti sauce.
  • Pour half of the spaghetti sauce on the bottom of the pan.
  • Add the ziti mixture and cover with the remaining sauce.
  • Sprinkle with Parmesan and the remaining mozzarella.
  • Bake uncovered, for 20 to 30 minutes, until the casserole bubbles on the edges.

1 lb. ziti
Kosher salt
2 tbsp. olive oil
3 large cloves garlic, finely chopped
1/2 tsp. red pepper flakes
1/2 c. dry white wine
1 26-oz jar marinara sauce
2 oz. cream cheese, cut into small pieces, at room temperature
1/2 c. half-and-half
2 oz. Pecorino Romano, finely grated (about ½ cup)
2 oz. Parmesan, finely grated (about ½ cup), divided
6 oz. mozzarella, coarsely grated (about 1½ cups), divided
2 tbsp. panko

Steps:

  • Cook pasta per package directions, reducing cooking time by 2 minutes. Drain.
  • Meanwhile, in large, deep broiler-proof skillet, heat oil, garlic, and red pepper flakes on medium until fragrant, about 2 minutes.
  • Add wine and simmer 2 minutes. Stir in marinara and simmer 5 minutes.
  • Stir in cream cheese, then half-and-half, pecorino, and all but 2 tablespoons Parmesan and simmer until sauce thickens, 2 to 3 minutes.
  • Fold in 1 cup mozzarella, then cooked pasta, tossing to coat. Season with additional salt if desired. Remove from heat.
  • Heat broiler. In small bowl, combine panko and remaining 2 tablespoons Parmesan. Sprinkle remaining ½ cup mozzarella on top, then sprinkle with panko mixture and broil until golden brown, about 2 minutes.

This is fast comfort food that is sure to please everyone at your table. Tip: Just add a tossed salad for a complete meal in a snap. Also, leftovers will freeze well.
