This came from FBGMOMOF4 on allrecipes.com. I needed to use up some fresh peaches and this worked perfectly. This recipe is for 16 large muffins but I made 2 pans of mini muffins and a loaf. Enjoy.

Number Of Ingredients 8

3 cups all-purpose flour
1 tablespoon ground cinnamon
1 teaspoon baking soda
1 teaspoon salt
1 1/4 cups vegetable oil
3 eggs, lightly beaten
2 cups white sugar
2 cups peaches, peeled, pitted, and chopped

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Lightly grease 16 muffin cups.
  • In a large bowl, mix the flour, cinnamon, baking soda, and salt. In a separate bowl, mix the oil, eggs, and sugar.
  • Stir the oil mixture into the flour mixture just until moist. Fold in the peaches. Spoon into the prepared muffin cups.
  • Bake 25 minutes in the preheated oven, until a toothpick inserted in the center of a muffin comes out clean.
  • Cool 10 minutes before turning out onto wire racks to cool completely.

1 1/2 cups all-purpose flour
1 cup sugar
3/4 teaspoon salt
1/2 teaspoon baking soda
1/8 teaspoon ground cinnamon
2 eggs
1/2 cup vegetable oil
1/2 teaspoon vanilla extract
1 (15 1/4 ounce) can sliced peaches, drained and finely chopped

Steps:

  • In a bowl, combine the dry ingredients.
  • In another bowl, combine the eggs, oil and vanilla; Stir into dry ingrediants just until moistened (batter will be thick).
  • Fold in peaches.
  • Fill paper-lined muffin cups two-thirds full.
  • Bake at 350* for 25-30 minutes or until toothpick comes out clean.
  • Cool for 5 minutes before removing from pan to a wire rack.

1 cup vegetable oil, plus extra for the pan (see Cook's Note)
3 extra-large eggs
2 teaspoons pure vanilla extract
2 cups grated carrots, unpeeled and grated on a box grater
1 Granny Smith apple, unpeeled and grated on a box grater
1 (8-ounce) can crushed pineapple, drained
1/2 cup pecans, roughly chopped
1/2 cup sweetened shredded coconut
1/2 cup raisins
2 1/4 cups all-purpose flour
1 1/4 cups sugar
1 tablespoon ground cinnamon
2 teaspoons baking soda
1 teaspoon kosher salt

Steps:

  • Preheat the oven to 350 degrees F and arrange two racks evenly spaced in the oven. Line two muffin pans with paper muffin cups.
  • In a large bowl, whisk together the eggs, oil, and vanilla. Add the carrots, apple, pineapple, pecans, coconut, and raisins and stir together. In a medium bowl, sift together the flour, sugar, cinnamon, baking soda, and salt. Add the dry ingredients to the wet ingredients and stir just until combined. Scoop the batter with a standard (2 1/4-inch) ice cream scoop (I use rounded scoops of batter) into the prepared muffin cups. Bake for 30 to 35 minutes, until a toothpick comes out clean. Place the pans on a baking rack to cool and serve the muffins warm or at room temperature.

1 1/2 cups flour
3/4 teaspoon salt
1/2 teaspoon baking soda
1/2 cup sugar
1/2 cup light brown sugar
1/4 teaspoon cinnamon
2 eggs, well beaten
1/2 cup oil
1/2 teaspoon vanilla
1/4 cup chopped almonds (optional)
1 1/4 cups chopped peaches

Steps:

  • Preheat oven to 350. Lightly grease muffin tins or greased/floured 9" x5" bread loaf pan.
  • In a large mixing bowl, combine the flour, salt, baking soda, sugars and cinnamon. Make a well in the center; add the eggs, oil and vanilla and stir just until dry mixture is moistened.
  • Stir in almonds, if using them.
  • Stir in the chopped peaches.
  • Pour about 1/3 cup of batter into the muffin tins. Bake at 350 for 20-25 minutes or until toothpick tests done.
  • If baking in the loaf pan, bake at 350 for 1 hour or until done.

1 teaspoon salt
4 1/2 teaspoons baking powder
2 cups brown sugar
1/2 teaspoon allspice
1/2 teaspoon nutmeg
1 teaspoon cinnamon
2 eggs
3/4 cup vegetable oil
1 1/4 cups milk
4 peaches, diced
granulated sugar

Steps:

  • Combine flour, salt, baking powder,brown sugar, allspice, nutmeg, and cinnamon in a large bowl.
  • Stir in eggs, vegetable oil and milk, then gentley stir in fruit.
  • Grease 16 muffin cups, and heap batter into cups; they'll be very full.
  • Sprinkle with granulated sugar.
  • Bake at 400 degrees for 25-30 minutes, or until toothpick inserted in centre comes out clean.

1/2 teaspoon pumpkin pie spice
1 (16 ounce) can sliced cling peaches in light syrup
1 cup kelloggs all-bran cereal
1/2 cup skim milk
1 egg white
2 tablespoons oil
1/3 cup sugar
2 tablespoons cornstarch
1 1/2 cups cold water
1 teaspoon grated lemon peel
1 tablespoon lemon juice

Steps:

  • Stir together four, sugar, baking powder, salt and pumpkin pie spice. Set aside. Drain peaches and reserve 1/3 cup syrup. set aside 8 peache slices; chop remaining peaches. Measure cereal, mlik and 1/3 cup cyrup into large bowl. Stir to combine and let stand 2 minutes still cereal is soft. Add egg white and oil; beat well, stir in peaches. Add flour mixture, stir only till combined. Portion batter evenly into 8 lightly greased muffin cups. Place 1 peach over top each muffin. Bake 400 25 minutes. serve with sauce.

  • combine sugar and cornstarch in 2 qt pan. Add water, stir till smooth. Cook over medium heat, stir constantly till it boils. Continue cooking and stirring 3 minutes longer. remove from hear; stir in peel and juice. serve hot over muffins.

125 g unsalted butter, softened
200 g golden caster sugar
2 eggs, beaten
1 teaspoon vanilla, esence
200 g ground almonds
200 ml Greek yogurt
2 peaches, stoned & sliced
3 tablespoons peach jam

Steps:

  • Preheat the oven to 180c/gas4.
  • Cream the butter with the sugar & beat in the eggs, vanilla, flour, ground almonds & a pinch of salt.
  • Fold in the greek yogurt.
  • Grease a 12 hole muffin tin or line with muffin cases.
  • Spoon into the cases or holes so that they are two-thirds full, then place a couple of peach slices on each one, lightly pressing them into the mixture.
  • Bake for 20-25minutes until lightly golden & firm to the touch.
  • While still warm, spread some peach jam over the peaches to glaze.
  • If not using cases, loosen cakes with knife to remove.
