Steps:
- Place sausage on a 15-in. X 10-in. X 1-in. baking pan. Bake at 375 degrees for 15-20 minutes or until sausage is no longer pink, turning once. Drain sausage and slice into 1/4 inch coins. In a large bowl, combine the eggs, milk, mustard, salt and pepper. Stir in the hash browns, cheese, peppers, onions and sausage; mix well. Transfer to a greased 13-in. x 9-in. X 2-in. baking dish. Cover and refrigerate overnight. Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350 degrees for 65-70 minutes or until set and golden brown. Sprinkle with additional cheese at end of cooking time if desired. Let stand 10 minutes before serving Serve with salsa if desired.

I found this in the Sunday ads this morning and plan to make this for breakfast Easter morning. Prep time does not include overnight refrigeration.

- Cook sausage according to package directions. Cool slightly, cut into 1/4 inch slices. Place English muffin cubes in the bottom of a greased 13x9 baking dish Drizzle with butter. Layer with sausage, cheese, onion and bell pepper. In a large bowl, combine the eggs, milk, salt and pepper. Pour over cheese. Sprinkle with bacon, cover and refrigerate overnight.
- Remove from the fridge 30 minutes before baking. Uncover and bake 350 for 45-50 minutes or until a knife inserted in the center comes out clean. Let stand.

SUNRISE SAUSAGE BAKE
We love breakfast casseroles such as this one, everything in one dish, and always so yummy and satisfying. Can also make the night before. I think they taste better when preparing the night before, and leaving the flavors mingle.

Steps:
- Preheat your oven to 350º F. Grease 13 x 9-inch baking dish.
- Combine milk, eggs, sausage, cheese, red pepper, green onions, onion powder and garlic powder in large bowl. Add bread cubes, stirring gently to moisten bread. Pour mixture into baking dish.
- BAKE for 45 minutes or until set. Serve warm. Note: May be assembled ahead of time and refrigerated. Let stand at room temperature for 30 minutes before baking.
HOMEMADE VEGETARIAN SMOKY BREAKFAST SAUSAGE LINKS
I haven't tried this, but it looks so good! Adapted from Vegetarian Times magazine! These sausages were a hit among Vegetarian Times vegan staffers, who loved the idea of homemade veggie links. They are a snap to make in a 2-layer bamboo steamer, but you may use a metal steamer in a large saucepan, you may just have to do several batches.

- Prepare bamboo steamer(or use steamer in a large saucepan), and lay out 25 sheets of foil, each about 5 inches square.
- Mash beans with fork in a bowl until smooth. Stir in remaining ingredients.
- Roll walnut sized pieces of bean mixture into small links(they don't have to be perfect). Wrap each link in foil, and twist both ends so it looks like a tootsie roll.
- Place wrapped links in steamer, cover, and steam 30 minutes. Serve immediately, or refrigerate until ready to use.
- Warm gently in the oven or toaster oven 8-10 minutes if not serving immediately.

HOT SAUSAGE LINKS AND BEANS CASSEROLE
Potatoes, beans sausage and cheese, who could ask for more. It's savoury, spicy and slightly sweet all at the same time. One of my DH's favourites and easy to throw together. Delicious!!!

- Preheat oven to 350*F (175*C).
- In a medum skillet, heat 1 TBS of the olive oil over medium heat.
- Add the garlic and cook for 30 seconds.
- Stir in the onion, oregano, parsley, salt and peppr.
- Cook for 1 minute and remove from the heat.
- Grease the bottom of an 8X8X2inch baking dish with the remaining TBS olive oil.
- On this layer the cubed cooked potatoes.
- Top the potatoes with the onion mixture.
- On the onion mixture, evenly distribute the sliced hot links.
- Ina small bowl, combine the brown sugar, baked beans and the barbecue sauce.
- Pour this evenly over the sausage.
- Top with the shredded Cheddar Cheese.
- Place in the pre-heated oven for 45 minutes.
- Serves 4.
