SUNNY'S EASY BBQ BRAISED BRISKET WITH SWEET POTATO AND CARROT MASH



Sunny's Easy BBQ Braised Brisket with Sweet Potato and Carrot Mash image

Number Of Ingredients 10

1 beef brisket (approximately 3 pounds)
1/4 cup BBQ rub
2 tablespoons vegetable oil, plus more for drizzling
2 cups pearl onions (frozen or fresh)
2 cups baby carrots
Two 1.5-pound bags steamable sweet potatoes, peeled and halved lengthwise
4 cloves garlic
2 cups BBQ sauce, store-bought or homemade
2 cups beef stock
1/4 cup finely chopped fresh parsley

Steps:

  • Coat the brisket on all sides with the rub and actually rub it in. Pull out a length of plastic wrap for the brisket and drizzle some oil where you plan to place the brisket. Place the brisket on top and drizzle the top with oil. Wrap tightly and rest at room temperature for 2 hours. If you are making this ahead of time, you can refrigerate, then rest on the counter for 2 hours before braising.
  • Add 2 tablespoons of oil to a large Dutch oven over medium-high heat. When the oil begins to swirl, add the brisket and sear on all sides until browned, 3 to 4 minutes per side. Remove to a plate.
  • Add the onions, carrots and potatoes to the pot and cook for a few minutes to coat them in the fat and get a bit of color. Make the contents of the pot as level as possible, toss in the garlic, then place the seared brisket on top of the vegetables.
  • Stir together the BBQ sauce and stock in a medium bowl. Add to the pot around the brisket, being careful to only fill halfway up the brisket, leaving a bit of the seared meat above the liquid line (you may not use all the liquid). Raise to a boil and lower to a low simmer. Cook, covered, for 2 to 3 hours without peeking, until the brisket is tender!
  • Remove the brisket from the pot to a plate and cover gently with aluminum foil. Remove the vegetables from the pot with a slotted spoon and place in a food processor. Blitz until smooth, adding liquid from the pot if needed for texture. Use the remaining liquid as a sauce for the brisket, if desired. Transfer the mash to a bowl and fold in the parsley. Serve with the sliced brisket and additional sauce.

1 side of salmon (2 to 2 1/2 pounds)
1 tablespoon mesquite liquid smoke
Kosher salt
3 tablespoons olive oil
1/4 cup plus 1 tablespoon sugar
1/4 cup sweet paprika
2 tablespoons onion powder
2 tablespoons garlic powder
1 teaspoon red chile flakes
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
One 8-ounce container spring mix lettuce
1/4 cup thinly sliced red onion
1 teaspoon fresh lemon juice
Kosher salt and freshly ground black pepper
2 tablespoons olive oil

Steps:

  • For the salmon: Pat the salmon dry. Place the salmon skin-side down on a piece of nonstick aluminum foil on a baking sheet or a cedar plank that was soaked in water for 1 to 2 hours. In a zigzag motion, drizzle the liquid smoke over the flesh of the salmon and brush it in; let rest 5 minutes. Season the salmon with salt.
  • For the rub: In a medium bowl, stir together the sugar, paprika, onion powder, garlic powder, chile flakes, salt and pepper. Gently pour the seasoning blend over the entire top of the salmon, patting it into the flesh evenly. Let rest at room temperature for 1 hour.
  • Preheat the oven or a grill to 300 degrees F.
  • Drizzle the olive oil over the salmon. Place the salmon on the foil directly onto the grill or in the oven (or the salmon on the plank). Cook until medium rare, 20 to 25 minutes, depending on the size.
  • For the easy salad: In a large bowl, toss the lettuce, onion and lemon juice. Sprinkle lightly with salt and a few grinds of black pepper. Rest for a few minutes, then drizzle over the olive oil and toss again.
  • Remove the salmon from the skin and flake over the salad.

SUNNY'S CLASSIC BBQ CHICKEN

1 cup sweet tea
Kosher salt and freshly ground black pepper
4 boneless, skinless chicken thighs
2 boneless, skinless chicken breasts
1 to 2 tablespoons canola oil
1/2 cup chopped Vidalia onions
Kosher salt and freshly ground black pepper
1 cup ketchup
1/2 cup beer
1/4 cup tightly packed light brown sugar
1/2 teaspoon sweet paprika
1/2 teaspoon red chile flakes
1/2 teaspoon garlic powder
2 cloves garlic, finely minced or grated on a rasp

Steps:

  • For the brine and chicken: In a medium pot on high heat, add the tea, 1/4 cup salt and 1 cup water. Cook, stirring, until the salt dissolves. Remove from the heat and let cool to room temperature.
  • Pour the cooled brine into a large resealable plastic bag. Add the chicken thighs and breasts and refrigerate overnight.
  • About 2 hours before grilling, remove the chicken from the bag and pat dry. Let rest on a plate in the refrigerator for 1 1/2 hours, then at room temperature for 30 minutes.
  • For the sauce. In a medium pot over medium-high heat, heat the oil. Add the onions and saute until tender, about 4 minutes. Season with salt and pepper, then add the ketchup, beer, brown sugar, paprika, chile flakes, garlic powder and garlic. Cook, stirring, until the sauce thickens and the sugar is completely dissolved, about 10 minutes. Set aside.
  • Preheat a grill to high heat.
  • Salt and pepper both sides of the chicken pieces. Over the direct heat, put the chicken on the grill on what would be the skin side. Grill until the chicken easily releases and there are grill marks, 6 to 8 minutes. Flip and move the chicken to the indirect heat area of the grill and brush with the sauce. Cover and grill until cooked through, brushing with the sauce again once or twice, another 6 to 8 minutes.

1 teaspoon onion powder
1 teaspoon kosher salt
2 tablespoons brown sugar
3 tablespoons olive oil
1 ½ tablespoons coconut oil
⅓ cup yellow popcorn kernals

Steps:

  • In a small bowl, mix together the paprika, chili powder, garlic powder, onion powder, and salt. Set aside.
  • In a separate small bowl, mix together the brown sugar and olive oil. Set aside.
  • Melt the coconut oil in a large pot over medium heat. Add 3-4 popcorn kernels and cover with the lid. Once they pop, add the rest of the kernels and cover, shaking every 10 seconds, until they begin pop. Once the pops are more than 3 seconds apart, turn off the heat and let sit for 15 seconds to allow any final kernels to pop.
  • Uncover and drizzle the brown sugar mixture over the popcorn. Carefully toss to coat.
  • Sprinkle the spice mixture over the popcorn and stir to coat evenly.
  • Transfer to a bowl and eat immediately, or spread in a single layer on a baking sheet and let cool completely before storing in a sealed container for up to 2 days.

2 cups root beer
2/3 cup ketchup
1/2 cup packed light brown sugar
2 tablespoons fresh lime juice
2 cloves garlic, grated on a rasp (not minced)
One 2-inch piece fresh ginger, cut into 1/4-inch discs
1 ghost pepper or habanero pepper, pierced with the tip of a knife
1 1/2 cups all-purpose flour
1/2 cup cornstarch
Kosher salt and freshly ground black pepper

12 chicken wings, tips intact and not trimmed
Peanut or vegetable oil, to fry
2 lime wedges, for garnish
2 to 3 tablespoons black sesame seeds, for garnish

Steps:

  • For the glaze: In a pot on medium-high heat, add the root beer, ketchup, sugar, lime juice, garlic and ginger. Whisk together until the mixture begins to boil and the ketchup and sugar are dissolved into the root beer. Lower to a simmer and when it begins to reduce in volume and thicken, turn off the heat and add the pepper. Allow to steep in the residual heat for 10 minutes, then discard the pepper and stir the glaze.
  • For the wings: In a large paper bag, add the flour, cornstarch, a nice pinch of salt and a few grinds of black pepper. Crimp it shut and gently toss it to mix the contents. In batches, add a few wings and toss them from side to side to fully coat. Remove to a wire rack and allow to rest until the flour soaks into the skin, about 15 minutes. Repeat the process for 2 dry coats. After the second resting period, the wings are ready to fry.
  • In a deep fryer or deep heavy pot, add enough oil to fill to about 4 inches. Heat the oil until a deep-fry thermometer registers 350 degrees F. Add the wings in batches to keep the temperature and fry each batch 12 minutes. Remove the wings to a paper towel-lined plate and sprinkle immediately with a pinch of salt.
  • In batches, add a bit of the glaze to a large bowl and a few wings, then toss them to coat. Remove the wings to a platter, top with a spritz of lime and a sprinkle of sesame seeds and serve.

1/2 cup popcorn kernels
Salt
1/4 cup butter
1/4 cup maple syrup
1/2 teaspoon cayenne
1/2 teaspoon ground cumin
1/2 teaspoon ground cinnamon
Pinch chili powder

Steps:

  • In a heavy pot on high heat, add the oil and 1 kernel of popcorn; then cover. When the kernel pops, add the rest of the kernels and cover. Pop while gently sliding and shaking the pot back and forth to move kernels around inside. Cook until the popping slows dramatically to 1 or 2 pops per second. Remove the popcorn from the pot and pour on top of a wire rack in a parchment-lined baking sheet. Lightly salt. Using the same pot, add the butter, maple syrup, cayenne, cumin, cinnamon and chili powder and stir to combine. Cook over medium-high heat until it bubbles. Gently pour over the popcorn, allow to cool slightly, then tranfer to a bowl, toss with tongs, and serve immediately.
