Sun-drenched summery goodness in an icy glass... this iced tea will transport you to afternoons on the porch swing at the first sip!

1 quart strong brewed apricot-flavored black tea
15 ounces canned apricots in juice or syrup (undrained)
2 12-oz. cans apricot or peach-flavored seltzer water
sugar (to taste)
2-3 cups ice cubes

Steps:

  • Brew the apricot-flavored black tea double-strength and chill in the refrigerator at least one hour.
  • Drain the canned apricots and reserve juice. Mash the apricots in a small bowl with a fork or potato masher, or puree in a food processor.
  • In a 2-quart pitcher, combine the chilled tea, mashed apricots, apricot juice, and seltzer water. Stir well and taste for sweetness. Add sugar to taste, 1-2 tablespoons at a time.
  • Stir in 2-3 cups of ice cubes and serve immediately.

7 tea bags
1 cup sugar
1 can (12 ounces) frozen lemonade concentrate, partially thawed
1 cup chilled apricot nectar
4 cups cold water
Ice cubes
Mint sprigs

Steps:

  • In a saucepan, bring 4 cups water to a boil; remove from heat. Add tea bags; steep, covered, 5 minutes., Discard tea bags. Stir in sugar until dissolved; cool slightly. Transfer to a pitcher; cool completely., Add lemonade concentrate and nectar to tea; stir in cold water. Serve over ice with mint.

4 orange pekoe tea bags
2 sprigs fresh rosemary
1 quart water, just-boiled
1 1/3 cups apricot nectar
6 fresh apricots, halved, pitted, sliced
12 ounces sparkling water
12 ice cubes

Steps:

  • In a heatproof pitcher, pour just-boiled water over the tea bags & rosemary, & let steep for 10 minutes before removing & discarding the tea bags.
  • Let tea cool, then chill in the refrigerator for 1 hour before removing & discarding the rosemary.
  • Stir in the apricot nectar & apricots & pour into 6 tall glasses with 2 ice cubes in each glass.
  • Top each drink with some of the sparkling water & ENJOY!

3 ounces dark rum
3 ounces tequila
1 (24-ounce) bottle sweetened iced tea
Ice
Lemon slices, to garnish

Steps:

  • Pour the limoncello, rum, tequila and tea into a pitcher filled with ice and stir vigorously. Serve in ice filled highball glasses with a straw. Garnish with a lemon slice on the rim.

  • In a large pitcher, stir together cool water, apricot nectar and superfine sugar.

2 cinnamon sticks
4 small slice orange peel
4 small slice lemon peel
3 cups freshly brewed hot apricot-flavored black tea
brown sugar (optional)

Steps:

  • Combine the apricot nectar, cinnamon sticks, orange peel, and lemon peel in a saucepan and simmer over low heat for 1 to 2 minutes, stirring occasionally. Add the tea and stir to mix all the ingredients together. Remove the cinnamon sticks and the orange and lemon peel and pour 6 ounces of the mixture into each of 4 cups. Add the brown sugar, if desired.

1/2 cup chilled simple syrup, or to taste
For the simple syrup:
1 1/3 cups sugar
1 1/4 cups water

Steps:

  • To make the tea:
  • Put tea bags in a heatproof pitcher.
  • In a saucepan bring water just to a boil and pour over tea bags. Steep tea 5 minutes and remove tea bags. Cool tea and chill, covered, until cold, about 1 hour.
  • Stir in nectar and syrup. Serve tea over ice in tall glasses.
  • To make the syrup:
  • In a saucepan bring sugar and water to a boil, stirring, and boil until sugar is completely dissolved. Let syrup cool and chill, covered. Syrup may be made 2 weeks ahead and chilled, covered.
  • Makes about 2 cups.
