1 1/2 pounds vine ripe tomatoes
1/2 teaspoon garlic, roasted
2 teaspoons extra virgin olive oil
1/2 teaspoon fresh oregano
5 to 7 leaves fresh basil
Dash salt

Steps:

  • Cut the tomatoes in half and lay face up on a sheetpan prepared with olive oil. Sprinkle the tomatoes with olive oil, salt and pepper. Let dry in a 200 degree oven for 4 to 5 hours. Tomatoes will not dry out completely. Put the tomatoes, garlic, olive oil, oregano, basil, and salt in a blender or food processor.
  • Process until the mixture is rough-textured, not completely smooth

1 (8 or 8.5-ounce) jar sun-dried tomatoes in oil (about 1 cup drained and tightly packed)
1/4 to 1/2 cup extra-virgin olive oil
1/2 cup toasted walnuts (roughly chopped)
1/2 cup fresh basil leaves (tightly packed)
1/3 cup Parmesan cheese (freshly grated)
2 cloves garlic (peeled)
1/2 teaspoon lemon zest (finely grated)
1/2 teaspoon kosher salt
1/4 teaspoon red pepper flakes, optional

Steps:

  • Gather the ingredients.
  • Heat an oven to 350 F. Spread out the walnuts on a small baking sheet and toast in the oven until fragrant, about 8 to 10 minutes; let cool completely.
  • Pour the reserved sun-dried tomato oil into a liquid measuring cup. Add enough olive oil to the sun-dried tomato oil to make 1/2 cup total.
  • Add the walnuts to a food processor and pulse a few times until coarsely chopped.
  • Add the sundried tomatoes, oil mixture, basil, Parmesan, garlic, lemon zest, salt, and red pepper flakes (if using).
  • Process until the desired consistency is reached, stopping to scrape down the sides once or twice. If needed, add more olive oil in a slow stream (up to 1/4 cup more). If the mixture is too thick, add a tablespoon or two of water to loosen the consistency.
  • Taste for seasoning and adjust, if necessary. Use immediately or store in the fridge.

12 ounces penne pasta
1 (8.5-ounce) jar sun-dried tomatoes packed in olive oil
2 garlic cloves
Salt and freshly ground black pepper
1 cup (packed) fresh basil leaves
1/2 cup freshly grated Parmesan

Steps:

  • Cook the pasta in a large pot of boiling salted water until tender but still firm to the bite, stirring occasionally, about 8 minutes. Drain, reserving 1 cup of the cooking liquid.
  • Meanwhile, blend the sun-dried tomatoes and their oil, garlic, salt and pepper, to taste, and basil in a food processor and blend until the tomatoes are finely chopped. Transfer the tomato mixture to a large bowl. Stir in the Parmesan.
  • Add the pasta to the pesto and toss to coat, adding enough reserved cooking liquid to moisten. Season the pasta, to taste, with salt and pepper and serve.

Steps:

  • Cook pasta as directed on package, omitting salt. Meanwhile, drain tomatoes, reserving half the oil. Process tomatoes and reserved oil in food processor or blender until smooth. Add cheese and nuts; process 30 sec. or until blended. Transfer to small saucepan.
  • Add half-and-half; stir. Cook on medium heat until 3 to 5 min. or heated through, stirring occasionally.

I went to a market and bought some lovely pesto sauce, which the family loved. The market being so far away and the price or the pesto, meant I had to come up with something myself. So I did and the family love this even more. I have made it both with without the pine nuts, and it tastes great either way. This sauce can be chilled and served as a dip or spread on focaccia, fresh rolls or mountain bread...... our favourite is heated and stirred through pasta. This is so quick and easy and would be great with chicken or meat.. Freezers well also!!!!!!

1 cup freshly grated parmesan cheese
1/4 cup extra virgin olive oil
1/4 cup packed fresh basil leaf

fresh ground pepper, to taste

Steps:

  • Process all the ingredients in a food processor fitted with the metal blade until the mixture forms a coarse paste.

3 cloves garlic
1/2 tsp salt + 1/2 tsp black pepper
1 cup basil leaves
1/4 cup pine nuts
1 pinch red chilli flakes
1/3 cup grated parmesan
1/3 cup extra virgin olive oil

Steps:

  • Blend all the ingredients together in a food processor except the olive oil. Start the food processor and drizzle in the olive oil slowly while still mixing. Stop the machine, scrape down the sides, and adjust salt and pepper, according to taste.
  • Any leftover pesto can be stored in a jar with a tight fitting lid. Pesto can be refrigerated for up to one week. You can also freeze the pesto in ice cube trays, and this will keep for up to 2 months.
