Steps:
- Place the frying pan on the stove on medium heat. Add 3 tbsp of extra virgin olive oil and to this, add the 2 diced potatoes.
- Stir in seasoning mix until potatoes are well-coated. Cover the pan with lid and let sit for 5 minutes. Uncover pan and stir briefly
- Now, cover the pan with lid again and let sit for another 5 minutes. Then, uncover the pan and garnish with 1 tbsp chopped spinach.
- Serve warm.

- Place potatoes in a Dutch oven; cover with water. Cover and bring to a boil. Cook until very tender, 20-25 minutes; drain well., In a large bowl, mash potatoes. Add the sour cream, cream cheese, 2 tablespoons butter, salt, onion salt and pepper; beat until fluffy. , Transfer to a greased 2-qt. baking dish. Dot with the remaining butter. Bake, uncovered, at 350° until heated through, 20-25 minutes.

- Place potatoes in a Dutch oven and cover with water.
- Cover and bring to a boil.
- Reduce heat and simmer 20-25 minutes until potatoes are very tender.
- Drain well.
- In a large mixing bowl, mash potatoes.
- Add sour cream, cream cheese, 3 tablespoons butter, onion salt and pepper; beat until nice and fluffy.
- Transfer to a greased 2-qt. baking dish.
- Dot with remaining butter and bake uncovered in a 350 degree oven for 15 minutes.
- Remove from oven; sprinkle with the Frenches fried onion then return to oven.
- Bake an additional 5 minutes.

- In a large bowl, combine the potatoes, onion, salt and pepper and mix well.
- Heat the oil in a large skillet over medium heat. Add the potato mixture and press down with a metal spatula to form a cake.
- Cook until the potatoes turn golden brown on the bottom, 5 to 7 minutes.
- Loosen the potatoes from the pan with the spatula and flip them over onto a large plate . Slide back into the pan and cook to brown the other side, about 5 minutes longer. Serve hot.
