5 1/2 cups vegetable stock
1/3 cup sun-dried tomato packed in oil
1 onion, chopped
2 cups arborio rice
1 cup shredded mozzarella cheese
1 cup grated parmesan cheese
1/4 cup chopped fresh basil
salt and pepper

Steps:

  • In a large saucepan, bring the vegetable stock to a simmer.
  • While the stock is heating, drain the sun-dried tomatoes and reserve the oil.
  • Chop the tomatoes coarsely and set them aside.
  • In a large frying pan, warm 2 tablespoons of oil from the tomatoes, add onion and saute until translucent; about 6 minutes.
  • Add rice to the frying pan and stir until white spots appear in the center of the grains; about 1 minute.
  • Spoon a ladleful of vegetable stock into the frying pan and cook the mixture on low until all the stock is absorbed; about 2 minutes.
  • Continue adding the stock, a ladleful at a time until the rice is tender and the mixture is creamy, approximately 20 to 25 minutes.
  • Add the mozzarella cheese, Parmesan cheese, sun-dried tomatoes, 2 tablespoons of the remaining oil from the tomatoes, chopped basil, and salt and pepper.
  • Mix well and serve.

6 cups vegetable broth
1 cup dried shiitake mushroom
3 tablespoons olive oil
1 cup finely chopped shallot
3 cups thinly sliced cremini mushrooms
1/4 cup chopped sun-dried tomato
2 garlic cloves, minced
1 tablespoon minced fresh thyme
2 teaspoons minced fresh rosemary
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
fresh ground black pepper
1 1/2 cups arborio rice
black truffle oil (optional)

Steps:

  • Bring broth to a simmer in a medium-size saucepan.
  • Add dried shiitake mushrooms and simmer for about 2 minutes, until the mushrooms are tender.
  • Using a slotted spoon, transfer the mushrooms to a plate.
  • When cool enough to handle, coarsely chop them.
  • Cover the broth and keep warm over very low heat.
  • In a medium-size saucepan over moderate heat, sautee the shallots for about 5 minutes; add the cremini mushrooms and sun-dried tomatoes, and cook until mushrooms are tender and most of the moisture has been released, about 7 minutes.
  • Add the garlic, shiitakes, herbs, spices and salt; sautee another 3 minutes.
  • Add the rice and stir with a wooden spoon for 2 minutes.
  • Add 1 C of broth; stirring often, simmer until the liquid is absorbed, about 6 minutes.
  • Continue to cook and stir, adding more broth by cupfuls, until the rice is tender and creamy and all the broth is absorbed. (If the rice is not tender yet but you are out of broth, keep adding water in the same manner as the broth until the rice is tender and creamy.).
  • This should take about 30 minutes.
  • Spoon onto plates and sprinkle some truffle oil over each serving if you like.

3 cups water
3 tablespoons olive oil
1 white onion, finely chopped
2 garlic cloves
1 cup arborio rice

Steps:

  • Dilute broth with water and set aside.

  • Add basil, parsley, and sun dried tomatoes.
  • Continue adding broth 1 cup at a time, until all liquid is absorbed, stirring constantly.
  • Risotto will be tender and slightly creamy when done.
  • Stir in freshly grated parmesan and serve.

A lightly flavored, smooth, creamy risotto featuring sun dried tomatoes and Parmesan cheese. If you've never tried risotto before, this is an easy recipe to follow and produces a scrumptious dish.

64 ounces low sodium chicken broth
2 cups arborio rice
6 medium sun-dried tomatoes, chopped
2 medium onions, chopped
2 tablespoons garlic, minced
4 tablespoons olive oil
2 tablespoons butter (optional)
3/4 cup parmesan cheese (optional)
1/2 teaspoon salt
1/2 tablespoon pepper

Steps:

  • Pour olive oil into a very large pan or deep, large based pot and heat at medium.
  • On a second burner, warm the chicken stock in a pot on medium heat.
  • Once hot, add onion and salt. Carmelize onion or cook until soft.
  • When onion is transparent, add garlic and sun dried tomato. Cook until garlic is soft.
  • Add risotto rice and stir until all of the rice is well coated. Let the rice "brown" -- let it cook in the pan for about two minutes, stirring frequently.
  • Add approximately two cups of the chicken stock. Add enough so that the rice is slightly covered by the stock and stir. As the rice cooks, the stock will be absorbed. Keep adding stock, one cup at a time. Add your pepper at any point while adding the stock.
  • The key to risotto is to slowly add the stock as the rice "dries" in the pot and keep stirring. You do not want to walk away for 5 minutes!
  • When you get near the end of cooking, you'll think you have a cup or more of stock left over. You don't. Use that stock! When you pour in the remaining stock, add the butter (optional).
  • When fully cooked, your risotto will be creamy, look a little wet, and will be very slightly firm. Once you reach this stage, add your Parmesan cheese and mix.
  • Serve and enjoy!

400g can chopped tomato
1l vegetable stock
knob of butter
1 tbsp olive oil
1 onion, finely chopped
2 garlic cloves, finely chopped
1 rosemary sprig, finely chopped
250g risotto rice
300g cherry tomato, halved
small pack basil, roughly torn
4 tbsp grated parmesan

Steps:

  • Tip the chopped tomatoes and half the stock into a food processor and pulse until smooth. Pour into a saucepan with the remaining stock, bring to a gentle simmer and keep over a low heat.
  • Meanwhile, place the butter and oil in the base of a large saucepan and heat gently until the butter has melted. Add the onion and gently cook for 6-8 mins until softened. Stir in the garlic and rosemary, then cook for 1 min more. Add the rice and cook, stirring, for 1 min.
  • Start adding the hot stock and tomato mixture about a quarter at a time. Let the risotto cook, stirring often, adding more stock as it is absorbed. After you have added half the stock, add the cherry tomatoes. After 20-25 mins, the rice should be creamy and tender, the cherry tomatoes softened and all of the stock should be used up.
  • Cover and leave for 1 min, then stir in the basil. Serve sprinkled with Parmesan and a good grinding of black pepper.

Imagine all the best bits of arancini - a golden, crunchy exterior; cheesy, oozing rice - in risotto form and you have this moreish baked tomato, mozzarella and basil risotto. It's deliciously comforting

2 tbsp olive oil
1 onion, finely chopped
300g arborio rice
small glass of white wine (optional), or 100ml extra stock
750ml hot vegetable stock
100g cherry tomatoes, halved
small handful of basil leaves, finely shredded, plus a few extra small leaves to serve
25g parmesan or vegetarian alternative, finely grated
150g ball mozzarella, torn into small chunks
25g dried breadcrumbs (panko are good but any will do)

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Heat half the oil in an ovenproof pan or casserole dish, then stir in the onion and cook over a low heat for 8-10 mins until golden. Scatter over the rice and mix well until coated. Pour over the wine, if using, and cook for 2 mins until absorbed. Pour over the hot stock, then give the rice a quick stir. Put the dish in the oven and bake the rice for 10 mins.
  • Remove from the oven and stir through the tomatoes, basil, half of the parmesan and some seasoning. Flatten everything out roughly with the back of a spoon, then nestle the chunks of mozzarella evenly into the risotto. Sprinkle over the breadcrumbs and the remaining parmesan, and drizzle with the rest of the olive oil. Put the dish back in the oven, and bake everything for another 10-15 mins until the rice is just cooked through, heating it under the grill if you want a deep, golden crust. Leave to stand for a few minutes, scatter with a few extra basil leaves and serve scooped straight from the dish.

1 ounce sun-dried tomatoes (not packed in oil, about 10)
1 cup water
2 1/2 cups chicken broth
1 cup finely chopped onion
1 garlic clove, minced
4 tablespoons olive oil
1 cup Arborio rice (available at specialty foods shops and some supermarkets)
1/4 cup freshly grated Parmesan
finely chopped fresh parsley leaves for sprinkling the risotto if desired

Steps:

  • In a small saucepan simmer the tomatoes in the water for 1 minute, drain them, reserving the liquid, and chop them. In a saucepan combine the reserved cooking liquid and the broth, bring the liquid to a simmer, and keep it at a bare simmer. In a large saucepan cook the onion and the garlic in the oil over moderately low heat, stirring, until they are softened, add the rice, stirring until each grain is coated with oil, and stir in the tomatoes. Add 1/2 cup of the simmering liquid and cook the mixture over moderate heat, stirring constantly, until the liquid is absorbed. Continue adding the liquid, 1/2 cup at a time, stirring constantly and letting each portion be absorbed before adding the next, until the rice is tender but still al dente. (The rice should take about 17 minutes to become al dente.) Stir in the Parmesan and salt and pepper to taste and sprinkle the risotto with the parsley.

A truly easy weeknight dinner, this rice dish is like a simple paella or jambalaya - add broad beans or sweetcorn for extra colour

400g cooking chorizo, peeled and diced
1 onion, chopped
350g risotto rice
1 tbsp red wine vinegar
400g can chopped tomatoes
1l hot chicken stock
85g frozen peas
1 tbsp grated parmesan, plus extra to serve (optional)
small pack parsley, chopped (optional)

Steps:

  • Heat the olive oil in a saucepan and sizzle the chorizo for 1 min until some of the oil starts to come out. Add the onion and cook for 5 mins until soft, then add the risotto rice and cook for 1 min. Splash in the vinegar, then add the tomatoes and stir well.
  • Gradually add the hot stock, a ladleful at a time - stir the rice until the stock is absorbed, then add the next ladleful. With the last ladleful of stock, add the peas and keep stirring until the rice is cooked. Turn off the heat and stir through the Parmesan and parsley, if using. Serve straight from the pan, with extra Parmesan, if you like.
