8 sun-dried tomatoes
1 (300 g) package firm silken tofu
3 garlic cloves
1/4 cup fresh basil, tightly packed
1/2 teaspoon salt
2 cups broccoli, cut into bite-sized pieces

Steps:

  • Cook pasta.
  • While pasta is cooking, blend tomatoes, tofu, garlic, basil, and salt in a food processor or blender until smooth.
  • Set aside.
  • When pasta is almost done, add broccoli to pasta water and cook for an additional 3 minutes.
  • Drain and return pasta/broccoli to pot.
  • Add sauce and toss well.
  • Serve immediately.

1 Cod Fillet
2 tablespoon Extra-Virgin Olive Oil
to taste Salt
1/2 teaspoon Fennel Seeds
5 Sun-Dried Tomatoes in Olive Oil
1 clove Garlic
1/2 Lemon
1/2 tablespoon Balsamic Vinegar
4 Fresh Basil Leaf
20 gram Parmesan Cheese
80 gram Breadcrumbs
2 Anchovy
1 clove Garlic
to taste Ground Black Pepper
as needed Olive Oil
1 sprig Fresh Rosemary

Steps:

  • Preheat oven to 355 degrees F (180 degrees C).
  • In a baking tray pour Extra-Virgin Olive Oil (2 tablespoon) and sprinkle Salt (to taste), Fennel Seeds (1/2 teaspoon), and Ground Black Pepper (to taste).
  • Lay Cod Fillet (1) and coat it well into the oil on both sides. Tack the tail under itself to make it evenly thick.
  • Bake for 5 minutes.
  • Zest the Lemon (1/2).
  • Once zested, juice the same lemon half.
  • Grate the Parmesan Cheese (20 gram).
  • Place Sun-Dried Tomatoes in Olive Oil (5), Garlic (1 clove), lemon juice and zest, Balsamic Vinegar (1/2 tablespoon), Fresh Basil Leaf (4), and parmesan cheese into a food processor.
  • Pulse until creamy.
  • Spread the paste on the top of the cod fillet.
  • Crush Garlic (1 clove) with a garlic press or finely mince.
  • In the same food processor pulse Breadcrumbs (80 gram) with Anchovy (2), garlic, and Ground Black Pepper (to taste).
  • Use the mixture to create a thick crust on the fish.
  • Drizzle some Olive Oil (as needed) on Fresh Rosemary (1 sprig) and lay it on the fish. Bake on the bottom rack of the oven for about 10 mins, or until a golden crust forms on the fish. Serve with rice or salad, enjoy!

I like using tofu on occasion but let's face it, it is blah tasting. You really have to do something to it to make it appetizing. With the Italian flavours enhancing this dish it works perfectly. I put mine on some pasta and it was delicious. Chicken or turkey would also work in this dish.

2 (14 ounce) packages firm tofu
1/2 teaspoon black pepper
1/2 teaspoon kosher salt
1 1/2 cups italian panko breadcrumbs (bread crumbs)
1/2 cup sun-dried tomato packed in oil, drained and sliced
6 large garlic cloves, peeled
1/2 cup white spelt flour
1 egg
2 tablespoons water
2 tablespoons olive oil
3/4 cup dry white wine (Wine Recommendation-Sauvignon Blanc or a Light Rhone)
2 tablespoons capers
2 tablespoons fresh lemon juice
1/4 cup butter, cold, thinly sliced
1/4 cup sun-dried tomato packed in oil, drained and chopped
1/4 cup fresh parsley, chopped

Steps:

  • Preheat oven to 375º. Slice each brick of Tofu in half lengthwise to make 2 even sized cutlets; season with pepper and salt.
  • Pulse the Panko breadcrumbs, tomatoes, and garlic in a food processor.
  • Transfer to a shallow dish. Place flour in a second shallow dish. Blend eggs and water with a fork in a third shallow dish.
  • Dredge both sides of the tofu lightly in flour, shake off excess flour, and then dip into egg mixture to coat. Transfer tofu to crumb mixture and pat onto both sides; place on a baking sheet or plate.
  • Heat the oil over medium-high heat. Cook tofu approximately 3 minutes per side until golden brown. In an ovenproof pan, place tofu to roast 8 to 10 minutes, or until thoroughly cooked through.
  • Make the sauce while tofu is in the oven. Simmer wine in a skillet until reduced by half on medium heat. Add capers and lemon juice, reduce heat to low. Whisk in butter one piece at a time, stirring constantly. As each piece of butter melts, add another. Stir in tomatoes and parsley.
  • Remove the tofu from oven, plate, and serve with sauce on top.
  • Sprinkle with a little grated cheese if desired.
  • Bon Appetit!

  • Thinly slice a baguette; arrange in a single layer on a baking sheet. Brush with olive oil and sprinkle with salt. Bake at 425 degrees F until lightly golden, about 7 minutes. Let cool slightly.
  • Cut off the top inch of 2 heads of garlic. Drizzle with olive oil, wrap in foil and roast 1 hour at 400 degrees F. Squeeze the garlic out of its skin and mash. 1 bunch kale, stems and ribs cut away and discarded, leaves finely chopped (about 4 cups)
1 tablespoon olive oil
1 1/2 cups chopped onion
3 garlic cloves, minced
7 ounces firm tofu (half of one 14-ounce package), drained, cut into 1/2-inch pieces
4 ounces grated reduced-fat provolone cheese
1/2 cup grated Asiago cheese
2 tablespoons chopped fresh dill
1 1/2 teaspoons all purpose flour
6 oil-packed sun-dried tomato halves, patted dry, chopped
Nonstick olive oil spray
6 frozen phyllo pastry sheets, thawed
Red Pepper Sauce

Steps:

  • Cook kale in large pot of boiling salted water until tender, about 5 minutes. Drain. Cool; squeeze dry. Heat oil in heavy large skillet over medium heat. Add onion and garlic and sauté until tender, about 7 minutes. Cool.
  • Finely chop tofu, cheeses, dill and flour in processor. Transfer to bowl. Stir in onion mixture, kale and sun-dried tomatoes. Season with salt and pepper.
  • Preheat oven to 350°F. Spray large baking sheet with oil spray. Stack 2 phyllo sheets, one atop the other, on work surface; spray phyllo with oil spray. Top with 2 more phyllo sheets. Spray with oil spray. Repeat with remaining 2 phyllo sheets. Spread tofu mixture lengthwise down center of phyllo in 3-inch-wide strip, leaving about 1 1/2-inch border on each short side. Fold short sides of phyllo in over filling, then roll up into log, enclosing filling completely. Spray phyllo log with oil spray. Transfer strudel to prepared baking sheet.
  • Bake strudel until golden brown, about 40 minutes. (Can be made 2 hours ahead. Let stand at room temperature. Rewarm in 350°F oven until heated through, about 15 minutes.) Cool 10 minutes. Cut strudel crosswise into 6 pieces. Place on plates. Spoon Red Pepper Sauce alongside.

2 garlic cloves, minced fine
2 tablespoons fresh basil, chopped fine
2 tablespoons fresh oregano, chopped fine
salt and pepper

Steps:

  • Core the stem area out from each tomato.
  • Cut each tomato in half crosswise.
  • Take each tomato half in hand- with the cut-side out- and give it a quick, gentle squeeze to force out the seeds.
  • Use a finger to sweep remaining seeds out.
  • Place each tomato, cut-side up, on a cookie sheet.
  • Spray or drizzle olive oil across the top of each tomato half.
  • Sprinkle garlic, basil, oregano across the tomatoes.
  • Season with salt and pepper to taste.
  • Bake in a 200°F oven for 4-6 hours or until the tomatoes are"dry" to the touch.
  • When they are cool, cut each tomato half in quarters and store in fridge-- or start nibbling immediately.
