MY CROCK POT SPAGHETTI SAUCE
This is a spaghetti sauce recipe that I've developed over time. You may alter the ground meat as you please; sometimes I use all ground beef when I find a good sale but half beef/half pork is pretty tasty. My crock pot is my best friend at times when I'm having busy days at work but still want a decent meal on the table for my family. I serve spaghetti with crusty bread and a romaine salad. Cook time is the crock pot cooking time. This recipe is for a 4 quart crock pot, halve it if your pot is smaller.

Steps:
- Peel and coarsely chop tomatoes. Do this by hand and not food processor. Transfer tomatoes to a slow cooker.
- Melt butter over medium heat in a medium skillet. Add the onion and garlic, and saute until softened but not browned. Scrape into slow cooker.
- Cover and cook on low for 2 to 3 hours.
- At the end of the cooking time, stir in herbs. Cover and cook an additional 10 minutes. Taste for salt and add the sugar, if desired. Serve on top of your favorite pasta, you will have enough sauce for 1 lb of pasta.
- I also add olives to the sauce, during the last phase of cooking. Whatever is left over, I freeze.
- Another great tip -- when peeling the tomatoes use a vegetable peeler (one suited for softer skin) and it will make life so much easier!

SPICY SUN-DRIED TOMATO SAUCE
Medium-spicy flavor, tangy tomato taste (only for real sun-dried tomato lovers) and a bright, sweetish accent from the touch of orange and cinnamon. Use the best sun-dried tomatoes for this recipe. Try it on pasta (I suggest about 1/2 cup per 4 ounces pasta) with parmesan cheese or crumbled feta or toss with beans. It would also make a terrific pizza sauce. This recipe is easily halved and the sauce can be frozen. From Angelica's Home Kitchen in NYC, voted 2006 best vegetarian restaurant.

Steps:
- Pat the chicken breasts dry with paper towels and season them on both sides with sea salt and black pepper.
- Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and sear for 3-8 minutes per side, until golden brown and almost cooked through (internal temperature should reach 160 degrees F). Time will vary depending on the thickness of your chicken and whether it's whole or cut into strips.
- Remove the chicken from the pan, cover with foil to keep warm, and set aside.
- Meanwhile, in a small bowl, vigorously whisk the arrowroot powder into the chicken broth.
- Add the minced garlic to the skillet (add a little more oil if it's dry). Cook for about 1 minute, until fragrant.
- Add the arrowroot/broth mixture, cream, sun dried tomatoes, and half of the fresh basil. Increase the heat to bring to a gentle boil, then reduce heat and simmer for 1-2 minutes, until the sauce thickens. Adjust salt and pepper to taste if needed.
- Add the chicken back to the pan and spoon the sauce over it. Cook for 1-2 minutes, until chicken is fully cooked through (internal temperature reaches 165 degrees F).
- Top with the remaining fresh basil before serving.

- Vegan Sun-Dried Tomato Pesto. Vegan pesto? Yes please. This fresh sauce could be spread on toast and still enjoyed—it’s that flavorful.
- Chickpea Tomato “Meat” Sauce. Whether you’re vegetarian, vegan, or just trying out Meatless Mondays, this pasta sauce has just enough texture to make you feel like you’re eating a hearty meat sauce, minus the meat of course.
- Roasted Garlic Tomato Sauce. Purists, this one’s for you. It’s a no-frills, only-the-good-stuff kind of recipe. All you need are tomatoes, olive oil, garlic, fresh basil, salt, and pepper.
- Meat Sauce With Peppers and Carrots. Puréed veggies are kind of a genius way to get an extra serving or two into picky eaters (kids, husbands, yourself… ).
- Crock-Pot Veggie Tomato Sauce. Crock-Pots are major time-savers and a perfect compromise for a lazy Sunday (you’re making dinner for the week, sort of!).
- Turkey Bolognese Sauce. Ground turkey takes pasta sauce up a notch in both the protein and taste departments. We love that this recipe uses cinnamon instead of sugar (one of our favorite healthy swaps) and chicken stock for even more flavor.
- Puttanesca Sauce. This classic Italian dish is best served over pasta, but also works great on top of a plain ol’ piece of chicken breast—trust us, it’s far from short on flavor.
