PERFECT SUMMER FRUIT SALAD



Perfect Summer Fruit Salad image

The perfect fruit salad for a backyard bbq or any occasion. There are never leftovers! This is one of my favorite fruit salad recipes, as I think the sauce really makes it. This salad is tastier the longer you can let it soak in its juices. I prefer 3 to 4 hours in the refrigerator before I serve it. Enjoy.

⅔ cup fresh orange juice
⅓ cup fresh lemon juice
⅓ cup packed brown sugar
½ teaspoon grated orange zest
½ teaspoon grated lemon zest
1 teaspoon vanilla extract
2 cups cubed fresh pineapple
2 cups strawberries, hulled and sliced
3 kiwi fruit, peeled and sliced
3 bananas, sliced
2 oranges, peeled and sectioned
1 cup seedless grapes
2 cups blueberries

Steps:

  • Bring orange juice, lemon juice, brown sugar, orange zest, and lemon zest to a boil in a saucepan over medium-high heat. Reduce heat to medium-low, and simmer until slightly thickened, about 5 minutes. Remove from heat, and stir in vanilla extract. Set aside to cool.
  • Layer the fruit in a large, clear glass bowl in this order: pineapple, strawberries, kiwi fruit, bananas, oranges, grapes, and blueberries. Pour the cooled sauce over the fruit. Cover and refrigerate for 3 to 4 hours before serving.

PINEAPPLE CREAM CHEESE DRESSING:
1/3 cup sugar
4 teaspoons cornstarch
1/4 teaspoon salt
1 cup pineapple juice
1/4 cup orange juice
2 tablespoons lemon juice
2 eggs, lightly beaten
2 packages (3 ounces each) cream cheese, softened
SALAD:
2 cups sliced fresh strawberries
2 cups pineapple tidbits
1-1/2 cups seedless green or red grapes, halved
1-1/2 cups diced peaches or nectarines
1 cup fresh blueberries or raspberries
1/4 cup sugar
Leaf lettuce

Steps:

  • In a small saucepan, combine the sugar, cornstarch and salt. Stir in the juices until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat. Stir a small amount into the eggs; return all to the pan, stirring constantly. Cook and stir until mixture reaches 160° and is thickened. Remove from the heat; cool slightly. In a small bowl, beat cream cheese until smooth. Add juice mixture; mix well. Cover and refrigerate overnight., In a large bowl, combine the fruit. Sprinkle with sugar; toss to coat. Cover and refrigerate overnight. Serve in a lettuce-lined bowl with the dressing.

  • Place fruit in large bow.
  • Mix margarita mix, honey and lime juice. Pour over fruit.

This salad is fresh and delicious! And really does taste like a margarita! You can use pretty much any fruit combo you'd like. I used strawberries, grapes, and oranges because that's what looked the freshest at the market but any type of melons, mango, and/or pineapple would be great too! Rim your bowls with lime and coconut or sugar and enjoy!!

2 small shots of tequila
2 tablespoon(s) orange liqueur
2 - limes, juiced
3 tablespoon(s) sugar
1 tablespoon(s) orange juice
- fresh fruit cut in bite size chunks, around 4 cups worth

Steps:

  • In a small bowl combine the Tequila, orange liqueur, lime juice, sugar, and orange juice. Mix well.
  • In a medium to large bowl combine the chopped fresh fruit with the margarita dressing and mix well.
  • Chill for 4-8 hours or overnight to let the flavors marry.

My dad love to invent new things. I don't know if he made this up himself or someone told him....nevertheless, it is really wonderful. Over the years, I tweaked this to a more healthy style (he used sour cream and sugar).

16 ounces fat-free cottage cheese (may use low-fat)
2 -3 tablespoons nonfat plain yogurt
1 tablespoon sugar substitute (more to taste)
12 large seedless grapes, halved (red or green)
12 medium strawberries, halved
1 medium kiwi, peeled and cut into bit-sized chunks
1 large banana, cut into bite-sized chunks*
1/2 medium cantaloupe, seeded and cut into bite-sized chunks
12 walnuts, coarsely chopped
salt and pepper

Steps:

  • There should be more fruit than dressing.
  • Choose any other types of fruit as they come into season.
  • * Open and slice banana last to maintain its' color.
  • Combine yogurt, cottage cheese, and sugar substitute.
  • Season lightly with salt and pepper.
  • Add all fruits, nuts, and toss gently to coat.
  • Do not break down the fruit.
  • Chill at least 1/2 hour.
  • Serve.
