Peak summer fruit is best prepared simply, especially in warm desserts like cobblers. In this recipe, the tartness of blackberries (or raspberries) balances the sweetness of yellow peaches (or nectarines), and the filling only needs the tiniest amount of sugar to get the juices flowing. Topped with a thin layer of fluffy cornmeal batter, the berries boil up to form juicy pockets, and a finish of raw sugar adds a satisfying crack. Serve this cobbler warm, or enjoy it any time of day, even for breakfast.

Number Of Ingredients 14

3 pounds ripe yellow peaches (or nectarines), pitted and chopped into 1-inch chunks
1 pint/6 ounces blackberries (or raspberries)
1/4 cup/50 grams granulated sugar
1 tablespoon tapioca starch or cornstarch
1 lemon, halved, zest reserved for cobbler topping
1/2 cup/120 milliliters whole milk
1 large egg
3/4 cup/114 grams fine-grind cornmeal
3/4 cup/96 grams all-purpose flour
1/4 cup/50 grams granulated sugar
1 1/2 teaspoons baking powder
1/2 teaspoon fine sea salt
4 tablespoons/57 grams cold unsalted butter (1/2 stick), cut into 1/2-inch cubes
1 tablespoon turbinado, or any raw sugar, for topping

Steps:

  • Heat the oven to 425 degrees. Prepare the filling: In a large bowl, combine the peaches, blackberries, granulated sugar and starch. Squeeze the juice of 1/2 lemon on top and toss to combine. Scrape the mixture into a 10-inch cast-iron skillet.
  • Make the topping: In a small bowl, combine milk, egg and juice from the remaining 1/2 lemon; whisk to combine.
  • In a large bowl, combine cornmeal, flour, granulated sugar, baking powder, salt and reserved lemon zest; stir to combine. Add the cold butter. Using your fingertips, smear and rub the pieces into the cornmeal mixture until it looks like wet sand.
  • Make a well in the center of it and add the milk mixture. Using a spatula, stir until thoroughly combined, then spoon it over the top of your fruit. Level the topping to cover more of the fruit. Sprinkle the surface of the topping with the raw sugar.
  • Bake for 30 to 35 minutes until the fruit is bubbly and the topping is a deep golden brown. Let cool slightly, then serve warm.

1 1/2 cups sugar, divided
1 cup flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup margarine
1/2 teaspoon vanilla
1/2 cup milk
1/2 cup water

Steps:

  • Grease a 9 x 13-inch pan and line with peaches.
  • Combine 1/2 cup sugar, flour, baking powder, salt, margarine, vanilla and milk.
  • Stir till smooth.
  • Pour over peaches.
  • Combine 1 cup sugar and water.
  • Pour over batter.
  • Bake 1 hour at 350°F.
  • Serve warm or room temperature.

1/3 cup cold butter, cubed
1-1/4 cups buttermilk
1 tablespoon coarse sugar

Steps:

  • In a large bowl, combine the peaches, flour, honey, lemon juice and salt; let stand for 15 minutes. Fold in blackberries. Transfer to a 13-in. x 9-in. baking dish coated with cooking spray., For topping, in a large bowl, combine the flour, sugar, baking powder, salt and baking soda. Cut in butter until crumbly. Make a well in the center; pour in buttermilk. Stir just until a soft dough forms. Drop by tablespoonfuls over fruit mixture; sprinkle with coarse sugar. , Bake at 400° for 40-45 minutes or until filling is bubbly and a toothpick inserted in topping comes out clean. Serve warm.,

3 cups sliced fresh peaches (about 1 lb)
2 cups blackberries
1 cup all-purpose flour, divided (about 4 1/2 oz)
1 tablespoon all-purpose flour, divided (about 4 1/2 oz)
1 cup sugar, divided
1/4 teaspoon ground ginger
1 tablespoon baking powder
1/4 teaspoon salt
1 cup 1% low-fat milk

Steps:

  • Preheat oven to 350 degrees.
  • Pour 2 tablespoons melted butter into the bottom of a 2-quart dish coated with cooking spray.
  • Combine peaches, blackberries, and 1 tablespoons flour in a large bowl; toss gently.
  • Add 1/4 cup sugar and ginger; toss gently to combine.
  • Pour peach mixture into prepared baking dish.
  • Lightly spoon remaining 1 cup flour into a dry measuring cup; level with a knife.
  • Combine 1 cup flour, remaining 3/4 cup sugar, baking powder, and salt in a large bowl, stirring with a whisk.

The best peach cobbler I've tried. Tested and retested until just right, made with fresh peaches. It just screams summertime.

CRUST
2 1/2 c flour
1 tsp salt
1/4 c sugar
1/2 c cold butter, cubed
2/3 c shortening, chilled and cubed
8-10 Tbsp ice cold water
FILLING
1/2 c butter
4 lb fresh peaches
1 c sugar
3 Tbsp light brown sugar
1/2 tsp cinnamon
1 Tbsp cornstarch
1/2 tsp vanilla extract
TOPPING
1/4 c butter, melted
2 Tbsp sugar
2 tsp cinnamon

Steps:

  • 1. Preheat oven to 350 degrees. Spray a 9x13 inch baking dish with nonstick spray; set aside.
  • 2. Place a large bowl in refrigerator to chill for 30 minutes. Sift flour, salt and sugar into chilled bowl and add butter and shortening, working into the flour mixture with fingers until large crumbs form, leaving chunks of butter and shortening in flour mixture. Don't overwork. Add the water, 1 Tablespoon at a time, until the dough holds together. Form into two balls and wrap each in plastic wrap. Refrigerate for 30 minutes while making the filling.
  • 3. To make the filling, peel, pit and slice peaches. In a large saucepan, melt the butter on medium heat. Add the peaches. In a medium bowl, mix the sugar, brown sugar, cinnamon and cornstarch together with a whisk; Add to the peaches and mix to combine. Cook on medium heat, stirring occasionally, for 5 minutes. Remove from heat and add vanilla; Stir.
  • 4. Remove dough from refrigerator and roll out one ball into a large circle, cutting to fit on bottom and halfway up sides of the baking dish. Pour filling over crust. Roll out second ball and cut into 1 inch strips or wider. Weave together or leave top crust whole, cutting to fit top, and cut slits in the top. Brush top with melted butter. Combine sugar and cinnamon and sprinkle on top. Bake for 45-60 minutes, until top is golden. Let set for 10 minutes before serving.

2 lb peaches (6 medium), peeled, pitted, and cut into 1/2-inch-thick wedges
3 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
2 sticks (1 cup) cold unsalted butter, cut into 1/2-inch cubes
1 cup plus 3 tablespoons whole milk

Steps:

  • Put oven rack in middle position and preheat oven to 425°F. Butter a 13- by 9- by 2-inch glass or ceramic baking dish (3-quart capacity).
  • Whisk together cornstarch and 1 1/2 cups sugar in a large bowl, then add blackberries and peaches and toss to combine well. Transfer to baking dish and bake until just bubbling, 10 to 15 minutes.
  • While fruit bakes, whisk together flour, baking powder, and salt in another large bowl, then blend in butter with your fingertips or a pastry blender until mixture resembles coarse meal. Add milk and stir just until a dough forms.
  • Drop dough onto hot fruit mixture in 12 mounds (about 1/3 cup each), then sprinkle dough with remaining teaspoon sugar. Bake cobbler until top is golden, 25 to 35 minutes. Serve warm.

1 1/4 cups sugar
2 tablespoons sugar
1 cup flour
1 1/4 teaspoons baking powder
1/8 teaspoon salt
1 cup milk
2 cups fresh blackberries (or frozen)

Steps:

  • Preheat oven to 350 degrees. Grease a 3-quart baking dish.
  • In a medium bowl, whisk 1 cup of the sugar with the flour, baking powder, salt and milk. Whisk in melted butter.
  • Meanwhile, rinse the blackberries and pat them dry. Pour the batter into the greased baking dish and sprinkle blackberries evenly over the top of the batter. Sprinkle 1/4 cup sugar over the blackberries.
  • Bake for one hour, or until golden brown and bubbly. When 10 minutes of cooking time remain, sprinkle the remaining two tablespoons of sugar over the top, and let that get all mouth-wateringly crispy and carmelized.
  • Try to stop drooling.
  • Serve with vanilla ice cream and enjoy!
