4 medium tomatoes, chopped
2 medium potatoes, peeled and cubed
2 cups halved fresh green beans
2 small zucchini, cubed
1 medium yellow summer squash, cubed
4 small carrots, thinly sliced
2 celery ribs, thinly sliced
1 cup cubed peeled eggplant
1 cup sliced fresh mushrooms
1 small onion, chopped
1 tablespoon minced fresh parsley
1 tablespoon salt-free garlic and herb seasoning
4 cups reduced-sodium V8 juice

Steps:

  • Combine all ingredients in a 5-qt. slow cooker. Cook, covered, on low 7-8 hours or until vegetables are tender.

My My My Minestra - Italian Vegetable Soup With Pasta image

Some of Italy's finest ingredients make up this warming soup. Adapted from 'Pasta Cooking' by Parragon.... the original recipe called for spinach, which I didn't fancy, so I subbed zucchini. I get the impression that our zucchini are generally a bit smaller than those in the Northern hemisphere, so balance the amount used with your other vegetables, just feel your way! You don't want your soup to be over-loaded with any one vegetable. Hope you enjoy!

1 medium onion, sliced
1 large carrot, cut into matchsticks
2 stalks celery, cut into matchsticks
3 medium zucchini, cut into matchsticks
2 tablespoons olive oil
3 pints water
salt and pepper
1 (420 g) can chopped tomatoes
120 g short-cut macaroni
2 garlic cloves, crushed
2 tablespoons chopped fresh parsley
1 teaspoon fresh rosemary
60 g parmesan cheese, grated

Steps:

  • Heat oil in large heavy pan and fry vegetable strips until just browning, stirring occasionally. Pour on water, season to taste with salt and pepper, and let simmer for 30 minutes.
  • Add tomatoes, garlic, macaroni, parsley and rosemary to the soup, and simmer for a further 10 minutes. Adjust seasoning to taste.
  • Serve with grated Parmesan cheese if desired.

An easy slow-cooker recipe that is a great way to use your summer vegetables. My husband prefers V-8 juice but I like tomato juice, so I compromise and use half of each. You can season to your liking.

4 medium tomatoes, chopped
2 medium potatoes, peeled and cubed
2 cups halved fresh green beans
2 small zucchini, cubed
1 medium yellow squash, cubed
4 small carrots, thinly sliced
2 celery ribs, thinly sliced
1 cup cubed peeled eggplant
1 cup sliced fresh mushrooms
1 small onion, chopped
1 tablespoon minced fresh parsley
1 tablespoon salt-free garlic and herb seasoning
1 whole bay leaf
1/2 teaspoon dried thyme
1/2 teaspoon dried basil
4 cups V8 vegetable juice or 4 cups tomato juice

Steps:

  • Add all the ingredients to a 5-quart slow cooker.
  • Cover and cook on LOW for 7-8 hours or until the vegetables are tender.
  • Season to taste with salt and pepper (I add cayenne pepper). Remove bay leaf before serving.

Delicious vegetable soup using fresh veggies from the garden or farmer's market. Use whatever you can pick/buy fresh that day! I used a combination of green and yellow beans, zucchini, carrots, spinach, peas and corn cut from the cob. This is summer in a bowl! Serve with crusty bread, olives, and fresh mozzerella cheese and you've got yourself a meal.

2 tablespoons extra virgin olive oil
5 cups fresh garden vegetables, chopped
1 small onion, chopped
4 garlic cloves, chopped
1 tablespoon fresh basil, chopped
1 tablespoon fresh oregano, chopped
4 sprigs fresh thyme, leaves removed
1 (28 ounce) can crushed tomatoes
4 cups chicken broth
1 (14 ounce) can cannellini beans, rinsed and drained
1/4 cup parmesan cheese, freshly grated

Steps:

  • Heat the olive oil over medium heat and saute the onions, garlic and any other veggies that need time for softening (like carrots and zucchini). Saute for 10 minutes.
  • Add crushed tomatoes and chicken broth and bring to a boil. Add smaller vegetables such as peas, beans and corn, and reduce heat to a simmer. Simmer for 20 minutes and add the fresh herbs and cannellini beans. Simmer for 10 more minutes or until veggies are crisp-soft.
  • Serve in bowls with 1 tablespoons of freshly grated parmesan cheese sprinkled on top.

Number Of Ingredients 20

3 tablespoons olive oil
3 leeks, white and light green parts, rinsed and chopped
1 pinch saffron thread
3 carrots, diced
3 potatoes, chopped
3 turnips, peeled and diced
3 zucchini, sliced into 1/2 inch rounds (or other summer squash)
3/4 lb green beans, trimmed and cut into 1-inch lengths
2 tomatoes, peeled, seeded and diced
2 garlic cloves, minced
salt
pepper
2 quarts vegetable broth
1 cup pasta
3 cups basil leaves, stemmed
1 garlic clove, peeled
3 tablespoons pine nuts
1/2 cup parmigiano-reggiano cheese, grated
2 tablespoons parmigiano-reggiano cheese, grated
1/2 cup olive oil

Steps:

  • In a large soup pot over medium heat, add the oil.
  • Stir in leeks and saffron and cook for 10 minutes or until leeks are translucent.
  • Stir in remaining vegetables (carrots - garlic) - include any juice from the tomatoes and 1 1/2 teaspoons salt. Cook for 5 more minutes.
  • Stir in broth/stock and bring to a boil. Lower the heat to a simmer and cook for 30 more minutes.
  • While the soup is simmering cook pasta according to package directions, drain and rinse and set aside.
  • Meanwhile prepare the pesto: drop basil in a pot of boiling water for a second or so, drain, rinse and pat dry. Using a food processor (you can also do this by hand using a mortar and pestle if desired) process the garlic, 1/4 teaspoon salt and pine nuts until chopped - add in the basil and olive oil and puree until smooth. Add cheeses and process until combined.
  • Stir pasta into soup and ladel soup into bowls , topped with a spoonful of pesto.

Caponata is a great farmer's market recipe. It uses bright red bell peppers, eggplant, and tomatoes. It's perfect to make on a weekend afternoon. And it will last all week. Caponata is a thick vegetable relish. Serve it at room temperature with grilled bread, toast or crackers. You can dress it up by crumbling some feta or goat cheese over it. You can also use it to make a sandwich: bread, caponata, crumbled goat cheese, alfalfa sprouts.

1 medium onion, diced
celery, diced,half the onion amount
4 tablespoons extra virgin olive oil
3 -4 cloves garlic
4 anchovies
1 teaspoon salt
1/4 teaspoon pepper
1 red bell pepper, diced into 1/2 inch cubes
1 medium eggplant, diced into 1/2 inch cubes (approx. 1-1/4 pounds)
3 cups peeled and diced tomatoes
1 tablespoon red wine vinegar
3 tablespoons capers, drained
1/2 cup chopped black olives

Steps:

  • Briskly sauté the onions and celery in the olive oil until the onions are brown around the edges.
  • Meanwhile, mince the garlic, anchovies, salt and pepper together.
  • Add to the onions, turn the heat way down and let it stew while dicing the bell pepper and eggplant.
  • Add the diced pepper and eggplant.
  • Cook over moderate heat until the eggplant is completely cooked, almost falling apart.
  • (Eggplant is insatiable when it comes to oil. Don't feed it. If the eggplant sticks too much, toss in a spoonful of water to loosen it.) Add the tomatoes and simmer, partially covered, until the tomatoes are cooked — 10 to 15 minutes.
  • Stir in the vinegar, capers, and olives.
  • Simmer uncovered for a few minutes (until it's no longer watery) then fine-tune the seasoning with salt and pepper.
  • Put in a bowl and let it cool uncovered.
  • When it's at room temperature, serve or refrigerate.

1 (4 ounce) can green chilies, Chopped
1 jalapeno, Chopped
1/2 cup ranch dressing
1/2 lb bow tie pasta
16 ounces sour cream, a dollop for each serving

Steps:

  • 1. Brown the ground beef then add the onion and Jalapeno. Cook until softened. Add the tomatoes, kidney beans, chilies, Ranch Dressing, Stir until heated through.
  • 2. Cook the pasta and stir into the soup.
  • 3. Serve with a dollop of Sour Cream.
