SUMMER VEGETABLE CHOWDER



Summer Vegetable Chowder image

A hearty yet light vegetarian chowder using all of summers best vegetables!

Provided by Kelley

Number Of Ingredients 17

2 tablespoons butter
1 cup sliced leeks (or yellow onion)
1 cup diced celery
1 cup diced carrots
1 cup diced potatoes (no need to peel)
2 cloves garlic, minced
4 cups vegetable stock
1 bay leaf
1/2 cup milk (I used 2%)
1/2 cup half-and-half
1 cup grated cheddar cheese
1 cup diced bell pepper
1 cup diced zucchini
1 cup diced roma tomatoes
1 cup fresh corn kernels removed from cob
1/4 cup chopped fresh parsley
salt and pepper to taste

Steps:

  • In a large pot, melt butter over medium heat. Add onion, celery, carrot, potato and garlic. Season with a pinch of salt and pepper and sauté for 10 minutes or so until vegetables are soft and start to caramelize. Add vegetable stock and bay leaf. Simmer for 15-20 minutes until potatoes are cooked through.
  • Remove bay leaf. Using a measuring cup, scoop out about 2 cups of vegetable/broth mixture and add it to a large blender along with milk, half-and-half and cheddar. Pulse until fully combined and all vegetables are pulverized and you have a nice, thickish consistency. Add this back to the pot of soup.
  • Bring soup back to a bare simmer. Add peppers and zucchini. Cook for 10 minutes. Then add corn and tomatoes. Cook for 10 minutes more. Season with salt and pepper and stir in chopped parsley.
  • Serve with warm bread of crackers for a light, filing summer dinner!

4 ears corn
1 yellow potato
1 carrot
1 zucchini
2 cups spinach (chopped)
1/2 yellow onion (finely chopped)
3 tablespoons butter
3 tablespoons flour
4 cups vegetable broth
2 cups milk
1 teaspoon fresh thyme
salt and pepper

Steps:

  • Carefully cut corn off of each ear. Chop all the vegetables into small, bite-size pieces.
  • In a large pot, over medium heat, melt butter. Add onion and saute for a minute. Add flour and mix together.
  • Add broth, corn, potato, and carrot and bring to a boil. Lower heat to medium and simmer for 15 minutes.
  • Add zucchini, spinach and milk and simmer for 5-10 minutes. Season with salt, pepper and thyme.

1 small onion, quartered and thinly sliced
1 tablespoon olive oil
4 cups reduced-sodium chicken or vegetable broth
1 cup sliced zucchini
1 can (15-1/2 ounces) navy beans, rinsed and drained
1/2 cup diced peeled red potato
1/2 cup cut fresh green beans (2-inch pieces)
1/2 cup chopped peeled tomato
1/4 teaspoon pepper
1/8 teaspoon ground turmeric
1/4 cup chopped celery leaves
2 tablespoons tomato paste

Steps:

  • In a large saucepan, saute onion in oil until tender. Add the next eight ingredients. Bring to a boil. Reduce heat; cover and simmer for 20-30 minutes or until vegetables are tender. , Stir in celery leaves and tomato paste. Cover and let stand for 5 minutes before serving.

8 slices bacon, chopped
1 medium onion, chopped
1/4 cup Gold Medal™ all-purpose flour
5 cups Progresso™ chicken broth (from two 32-oz cartons)
2 medium Yukon gold potatoes, cut into 1/2-inch cubes
1/2 teaspoon salt
1/4 teaspoon pepper
2 bags (10 oz each) Cascadian Farm™ frozen organic sweet corn
2 medium zucchini, cut in half lengthwise, then into 1/4-inch slices crosswise
2 medium tomatoes, chopped
1 cup heavy whipping cream
1/3 cup julienned fresh basil leaves
12 (1/2-inch) slices ciabatta bread
1/4 cup butter, melted
3/4 cup shredded Parmesan cheese

Steps:

  • Heat 5-quart Dutch oven over medium heat. Add bacon; cook 10 to 13 minutes, stirring occasionally, until it begins to brown. Add onion; cook about 6 minutes or until softened. Sprinkle with flour; cook and stir 1 minute.
  • Stir in broth, potatoes, salt and pepper; heat to simmering. Reduce heat to medium; cook 10 to 15 minutes or until potatoes are just tender. Stir in frozen corn, zucchini, tomatoes, whipping cream and basil; cook 10 to 14 minutes or until vegetables are tender.
  • Meanwhile, set oven control to Broil. Arrange ciabatta slices on ungreased large cookie sheet; brush both sides with melted butter. Broil with tops 6 inches from heat 1 to 2 minutes on each side or until lightly toasted. Sprinkle rounded tablespoon of Parmesan cheese on top of each slice. Broil 1 to 2 minutes or until cheese is lightly browned. Remove and place on rack to cool.
  • Ladle chowder into bowls; serve with croutons.

1 large onion, diced

Steps:

  • Heat olive oil and butter in a Dutch oven over low heat. Add onion; cook until tender, about 10 minutes. Sprinkle flour over onion; cook and stir until onion is coated, about 5 minutes.
  • Stir vegetable broth and potatoes into the onion mixture; bring to a boil. Reduce heat to medium; cook partially covered until potatoes are tender, about 10 minutes. Add corn, red pepper, green pepper, half-and-half, ground black pepper, and salt. Reduce heat to low; cook and stir until corn is softened, about 8 minutes.

¼ cup olive oil, divided, plus more for drizzling
20 oz riced cauliflower
5 oz leek, tough green ends removed, cut into half moons and rinsed
5 cloves garlic, smashed
1 tablespoon kosher salt, plus 2 teaspoons, divided, plus more to taste
4 cups vegetable stock
2 cups non-dairy milk, plus more to taste, divided
10 oz asparagus, woody stems removed, cut into 1/2 in (1 1/4 cm) pieces
6 oz english pea, frozen
1 lemon, zest
¼ cup fresh basil, plus more for garnish
1 ½ lb medium red potato, cut into 1/2 in (1 1/4 cm) cubes
cold water
2 tablespoons fresh lemon juice
freshly ground black pepper, for garnish

Steps:

  • In a large pot, heat 2 tablespoons of olive oil over medium heat. Once the oil is shimmering, add the riced cauliflower, leeks, garlic, and 1 teaspoon of salt. Sauté for 2 minutes, until the leeks just begin to soften.
  • Pour in the vegetable stock and 2 cups (480 ml) of non-dairy milk. Increase the heat to medium-high and bring to a boil. Reduce the heat to medium, cover, and simmer for 15-20 minutes, until the cauliflower is completely broken down and tender.
  • Meanwhile, in a large pan, heat 2 tablespoons of olive oil over medium heat. Add the asparagus, peas, and 1 teaspoon of salt. Sauté for 2 minutes, until the vegetables are bright green with some crunch. Remove the pan from the heat and stir in the lemon zest and basil. Transfer to a bowl and set aside.
  • Wipe out the pan and add the potatoes and enough cold water to cover by 1 inch (1 ¼ cm). Season with 1 tablespoon of salt. Bring to a boil. Once boiling, reduce the heat to medium-low and simmer for 8-10 minutes, until the potatoes are easily pierced with a fork but not mushy. Drain and set aside.
  • Remove the pot with the cauliflower from the heat. Blend with an immersion blender until completely smooth and creamy. Add up to 1 cup (240 ml) non-dairy milk or water if needed to thin to your desired consistency.
  • Stir in the reserved asparagus, peas, potatoes, and the lemon juice. Season to taste with salt.
  • Ladle into bowls and garnish with fresh basil, a drizzle of olive oil, and freshly ground black pepper.
  • Enjoy!

This is one of my favorite winter time soups! Really comforting on a cold day! Very easy to make and everyone I know seems to love it. This re-heats well but it never lasts longer than a day at my house!

3 cups diced peeled potatoes (1-inch dice)
2 1/2 cups broccoli florets
1 cup chopped onion
1 cup grated carrot
2 cups diced celery
4 teaspoons chicken bouillon
3 cups water
3/4 cup butter
4 cups milk
1 cup cooked diced ham (1-inch cubes)
1 cup shredded cheddar cheese
3/4 cup flour

Steps:

  • In a soup kettle add all vegetables and the 3 cups water and chicken bouillon.
  • Simmer 20 minutes or until vegetables are tender.
  • In a large saucepan melt butter.
  • Stir in flour and cook for 2-3 minutes until nice and bubbly.
  • Whisk in milk; bring to a boil.
  • Add this to the vegetable-water mixture in soup kettle.
  • Bring all to a simmer and add ham and shredded cheese.
  • Bring to a simmer again and cook until cheese is melted and all is heated through.
  • Serve and ENJOY!
