SUMMER BEAN SALAD WITH TARRAGON VINAIGRETTE

- Combine the first 10 ingredients in a large mixing bowl. Set aside while you make the vinaigrette using the remaining ingredients.
- Place the wine in a saucepan with the tarragon stems and reduce over medium-high heat to 1-cup liquid. Immediately pour the hot, reduced wine over the chopped shallots and lemon zest in a medium-sized bowl. Let sit together and cool to room temperature (or place in refrigerator to speed up process). Remove the tarragon stems and discard. Whisk in the lemon juice and rice vinegar. Continue whisking, drizzling in the olive oil, tasting as you go. Season with salt and pepper as needed, and add a bit more lemon juice or rice vinegar if more acidity is desired.

SUMMER BEAN SALAD WITH CREAMY LEMON DRESSING
This recipe is from Eat This Book by Tyler Florence. Tyler came up with this recipe while strolling through the Union Square Greenmarket in New York City and he came across some really cool summer beans -- yellow wax beans and haricots verts. He put together a simple vinaigrette of lemon juice, mustard, and creme fraiche.

- Bring a large pot of salted water to a boil. Add all of the beans and cook until crisp-tender, 3 to 5 minutes (they'll all be done at roughly the same time). Drain, transfer to a bowl of salted ice water to stop the cooking, and drain well. Transfer to a mixing bowl and toss int he shallots, walnuts, and parsley.
- In a jar, combine the mustard, water, sugar, lemon juice, oil, creme fraiche, salt, and pepper. Put the cap on and shake vigorously to emulsify. Just before you serve the salad, pour the dressing over the beans and toss well to coat with the dressing.
GREEN BEAN AND TOFU SALAD WITH PEANUT DRESSING
Inspired by the combination of peanut sauce with vegetables in southeast Asia, found in dishes such as gado gado in Indonesia and summer rolls in Vietnam, this streamlined salad would work just as well as a vegetarian main dish to eat with rice or noodles. The green beans are cooked for only a short while so that they stay crunchy. If you prefer floppy beans, you can cook them longer. And if you want something more refreshing and don't want to turn on the stove, you can skip the beans altogether and use cut-up cucumbers and tomatoes instead.

- Bring a large saucepan of salted water to a boil. Meanwhile, stir the peanut butter, hoisin, lime juice, sugar and red-pepper flakes in a large bowl. Add 2 tablespoons boiling water from the saucepan to the peanut dressing and stir well. The dressing should be runny but still thick. If needed, stir in another tablespoon boiling water.
- Add the green beans to the boiling water and cook until brighter in color and just tender, 2 to 3 minutes. Drain well, rinse under cold water until cool, then drain again. Transfer the green beans and tofu to the peanut dressing and stir gently until evenly coated. Season to taste with salt, then sprinkle with more red-pepper flakes. Serve immediately or refrigerate in an airtight container for up to 2 days.

- In a large pot, combine the stock with 1/3 cup of the olive oil, 1 tablespoon of salt and 1 teaspoon of black pepper. Add the ham, if using, and the crushed red pepper and bring to a boil. Reduce the heat to moderately low and simmer for 15 minutes. Add the lima beans, remove from the heat and let cool in the cooking liquid for 1 hour. Set a fine sieve over a large bowl and strain the beans; discard the ham. Transfer the beans to a serving bowl. Reserve 3/4 cup of the cooking liquid. Save the remaining liquid for another use.
- Meanwhile, light a grill and oil the grate. Brush the corn with olive oil and season with salt and black pepper. Grill the corn over moderate heat, turning, until lightly charred, about 8 minutes. Transfer to a work surface and let cool slightly, then cut the kernels from the cob. Add the corn to the bowl with the lima beans.
- Prepare an ice bath. In a large pot of salted boiling water, blanch the haricots verts until crisp-tender, 3 minutes. Using a slotted spoon, transfer them to the ice bath to cool, then pat dry and add to the bowl with the lima beans and corn.
- Return the water in the pot to a boil and blanch the fava beans until tender, 2 minutes. Drain and transfer to the ice bath to cool. Drain. Squeeze the favas from their skins and add to the bowl with the other vegetables; discard the skins.
