SZECHUAN SHRIMP RECIPE

This Szechuan shrimp recipe is easy to make and perfect for the spicy food lover with crispy shrimp and vegetables tossed in a vibrant Szechuan sauce.

1 pound shrimp (peeled and deveined)
1/4 cup soy sauce
Salt and pepper to taste
1/2 cup corn starch
1 tablespoon sesame oil (or use olive oil)
1 large bell pepper (chopped)
2 jalapeno peppers (chopped (Optional for extra spicy! Use jalapenos for medium heat.))
1 cup Snap peas
1 tablespoon Szechuan peppercorns (or use black peppercorns)
1/4 cup peanuts (chopped (plus more for garnish - cashews are great here, too!))
1/4 soy sauce
2 tablespoons rice vinegar
1 tablespoon sesame oil
1 tablespoon ground ginger (fresh minced ginger is good too)
1 tablespoon honey (or more for sweeter)
1 tablespoon chili garlic sauce
1 teaspoon garlic powder (fresh minced garlic is good too)
1 teaspoon sriracha (or more to taste)
1 teaspoon crushed red pepper flakes
1/2 cup chicken stock
1-2 tablespoons cornstarch for thickening
1/2 - 1 teaspoon Szechuan peppercorns (lightly toasted and ground or use black peppercorns instead)
1/2 - 1 teaspoon Chinese 5 spice
Cooked white rice or noodles (spicy chili flakes)

Steps:

  • Add the shrimp to a large bowl. Add soy sauce, salt and pepper and toss to coat. Marinate for 10 minutes.

Another recipe to celebrate the Chinese New Year! I included the chilling time with the recipe. Some very nice and crunchy shrimp appetizers with a hot Asian sauce.

1 lb fresh shrimp or 1 lb frozen raw shrimp
1 egg, slightly beaten
1 tablespoon cornstarch
1 teaspoon dry white wine
1/2 teaspoon soy sauce
1/4 teaspoon salt
vegetable oil
1/2 cup all-purpose flour
1/2 cup water
3 tablespoons cornstarch
1 tablespoon vegetable oil
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup red wine vinegar
1/2 cup catsup
1/3 cup granulated sugar
1/2 teaspoon red pepper sauce

Steps:

  • RED SWEET AND SOUR SAUCE:.
  • Mix all ingredients.
  • Have ready for shrimp.
  • SHRIMP:.
  • Remove shells from shrimp, leaving tails intact.
  • If shrimp are frozen do not thaw; peel under running cold water.
  • Make a shallow cut lengthwise down back of each shrimp and devein.
  • Slit shrimp lengthwise down the back almost in half.
  • Mix eggs, the 1 tablespoon cornstarch, the wine, soy sauce and the 1/4 teaspoon salt in glass bowl; stir in shrimp.
  • Cover and refrigerate 10 minutes.
  • Heat oil(1-1/2 inches) in 3 quart saucepan to 375°F.
  • Mix flour, water, the 3 tablespoons cornstarch, 1 tablespoon oil, baking soda and the 1/2 teaspoon salt.
  • Stir shrimp into batter until coated.
  • Fry 5 or 6 shrimp at a time, turning occasionally, until golden brown, 2-3 minutes; drain.
  • Serve hot with sauce.

2 lbs jumbo ocean-caught shrimp
2 tablespoons kosher salt
3 egg whites
1 cup cornstarch
4 cups peanut oil
2 tablespoons oil, reserved from the 4 cups
12 scallions, cut in 2-inch lengths
1 tablespoon coarse sea salt
1 teaspoon white pepper
2 tablespoons sugar
5 dried red chilies
1/2 cup shallot, thinly shaved
1/4 cup serrano pepper, thinly sliced
1/3 cup soy sauce
1/4 cup chicken stock
3 tablespoons chinese rice wine or 3 tablespoons sake
3 tablespoons sugar (to taste)
1 tablespoon ginger, minced
3 garlic cloves, thinly sliced

Steps:

  • Butterfly and devein the shrimp, leaving tail and shell attached. Toss with kosher salt and let sit for 15 minutes refrigerated. Press gently in a dry towel to remove moisture.
  • Mix dipping sauce ingredients together and set aside.
  • Heat peanut oil to 375 degrees F over high heat in a large wok. Dip shrimp in egg whites, then dredge in cornstarch. Shake shrimp free of cornstarch and fry till crispy in several batches.
  • Carefully top off the oil, leaving 2 tbsp behind, and increase the heat to high under the wok. When the oil starts smoking, add the scallions and chilies; toss quickly; then add shrimp.
  • Toss to coat, adding the sea salt, pepper and sugar as you rotate the food across the wok surface. Toss and serve with dipping sauce.
