BRAISED CORNED BEEF WITH MAPLE



Braised Corned Beef With Maple image

This recipe is delicious and extremely tender. I had gotten this recipe at a local Maple Festival and thought it was excellent. Very simple, only a few ingredients, but tastes delicious!

4 lbs corned beef brisket, desalted
1 cup pure maple syrup
1/4 cup Bourbon

Steps:

  • Preheat oven to 325.
  • Place corned beef on rack in roasting pan and bake for 1/2 hour.
  • Reduce heat to 275, cover and bake for 2 hours.
  • Uncover and discard all but 1 cup liquid.
  • Add maple and bourbon and continue baking and basting frequently for 1 hour more.
  • Remove from oven and serve hot. Use reserved liquid as a table sauce over the meat.

2 corned beef briskets with spice packets (3 pounds each)
1 large sweet onion, sliced
12 garlic cloves, peeled and halved
1/4 cup kosher salt
1/4 cup whole peppercorns
8 bay leaves
2 tablespoons dried basil
2 tablespoons dried oregano
4 quarts water
3 cups beef broth
1/4 cup maple syrup
1/3 cup packed brown sugar

Steps:

  • Place briskets and contents of the spice packets in a stockpot. Add onion, garlic, salt, peppercorns, bay leaves, basil and oregano. Pour in water and beef broth. Bring to a boil. Reduce heat; cover and simmer for 2-1/2 to 3 hours or until meat is tender., Transfer meat to a broiler pan. Brush with maple syrup; sprinkle with brown sugar. Broil 4-6 in. from the heat for 2-3 minutes or until beef is glazed. Thinly slice across the grain.

This is a recipe I got from Woman's World magazine. It sounds easy and tasty on these cold Autumn nights.

1 teaspoon salt, divided
1/4 teaspoon pepper, plus,divided
1/8 teaspoon pepper, divided
3 lbs beef beef eye round
1 lb carrot, diagonally cut into 1/2 inch pieces
1 lb parsnip, diagonally cut into 1/2 inch pieces
1/2 cup maple syrup
3 tablespoons white wine
3 tablespoons mustard, preferably dijon
1 tablespoon butter or 1 tablespoon margarine

Steps:

  • Preheat oven to 450 degrees.
  • Combine 3/4 tsp.
  • salt and 1/4 tsp.
  • pepper; sprinkle over roast.
  • Place beef in roasting pan.
  • Add carrots and parsnips; roast 20 minutes.
  • Meanwhile in pot over medium heat combine syrup, wine, mustard, butter and remaining salt and pepper.
  • Bring to boil.
  • Reduce heat to simmer; cook until thickened about 10 minutes.
  • Reduce oven temperature to 350 degrees.
  • Cook roast until meat thermometer inserted in thickest part of beef registers 140 degrees for medium-rare, 35-40 minutes, brushing roast with glaze during last 15 minutes of cooking time.
  • Let stand 10 minutes before slicing.

3 lbs corned beef brisket (comes with seasoning packet)
1 cup brown sugar
1 tablespoon mustard
1/4 cup corn syrup

Steps:

  • Rinse off corned beef and put in a large pot of water.
  • Add package of spices and bring to a boil over high heat.
  • Reduce and simmer over low for 60-90 minutes.
  • Remove from pot and place in a baking dish.
  • Cover with foil and bake at 350F for 60-90 minutes.
  • Mix Brown sugar, mustard, and corn syrup in a small saucepan.
  • Bring to a boil and remove from heat.
  • Pour over cooked corned beef and place back into oven for about 5-10 minutes.
  • Serve with cooked cabbage. You can add the extra glaze to the cabbage.

Add 1 cup stout beer and then cold water to cover everything by 1 inch. Heat to a gentle simmer over medium heat.
  • Step 2: Place a piece of parchment paper over the top of the pot. Add the lid and carefully slide it into the oven. Bake covered, stirring once or twice, for 2 hours.
  • Step 3: Add 12 ounces of carrots to pot; cover and continue baking until a fork inserted into meat releases easily, 1 to 1 ½ more hours. Use a slotted spoon to scoop out and discard the orange slices. (Recipe can be prepared to this point and refrigerated in the liquid, covered up to 2 days. Reheat everything over medium-low heat on top of the stove.)
  • Step 4: In a small saucepan, mix ¼ cup maple syrup, 1 tablespoon molasses if using, 1 tablespoon Dijon mustard and ½ teaspoon ground black pepper. Heat to a simmer. Cook and stir until mixture reduces to a thick syrup consistency, about 1 minute. Remove from heat.
