SUGAR PIE - FRENCH CANADIAN COOKING
French Canadian sugar pie - delicious, decadent, but also incredibly easy to make. You might already have the ingredients in your pantry.

Steps:
- Mix sugar and molasses together. Mix in milk, then beat in eggs, melted butter and flour.
- Divide between two uncooked pie crusts that have been dusted with flour.
- Place the pies on cookie sheets in case they bubble over (although they shouldn't unless you put all the filling in one crust.) Bake at 400F for about half an hour.
- Let cool completely before eating.

SUGARPLUMS

Steps:
- Put the almonds, plums, apricots, and figs into the bowl of a food processor and pulse 20 to 25 times or until the fruit and nuts are chopped into small pieces, but before the mixture becomes a ball.
- Combine the powdered sugar, anise seeds, fennel seeds, caraway seeds, cardamom, and salt in a medium mixing bowl. Add the nut and fruit mixture and the honey and mix using gloved hands until well combined.
- Scoop the mixture into 1/4-ounce portions and roll into balls. If serving immediately, roll in the coarse sugar and serve. If not serving immediately, put the balls on a cooling rack and leave uncovered until ready to serve. Roll in the coarse sugar prior to serving.
- The Sugarplums may be stored on the cooling rack for up to a week. After a week, store in an airtight container for up to a month.

- Make the crust: Pulse the flour and salt in a food processor. Add the butter and shortening and pulse until the mixture looks like coarse meal with pea-size bits of butter. Drizzle in 3 tablespoons ice water and pulse until the dough begins to come together (add more water, 1/2 tablespoon at a time, if necessary). Turn out onto a sheet of plastic wrap and pat into a disk; wrap tightly and refrigerate at least 1 hour and up to 1 day.
- Roll out the dough into an 11-inch round on a lightly floured surface. Ease into a 9-inch pie plate. Fold the overhanging dough under itself and crimp the edges with your fingers. Pierce the bottom all over with a fork. Refrigerate the crust until firm, about 30 minutes.
- Place a baking sheet on the middle oven rack and preheat to 425 degrees F. Make the filling: Whisk the heavy whipping cream, sugar, flour and vanilla in a bowl. Pour into the chilled crust, dot with the butter and sprinkle the nutmeg on top. Carefully transfer the pie plate to the hot baking sheet and bake 10 minutes. Reduce the oven temperature to 350 degrees F and continue baking until the crust is golden and the filling is bubbly in spots, about 55 more minutes (the center will still jiggle slightly); cover the crust edges with foil if they're browning too quickly. Transfer to a rack and let cool completely. Serve chilled or at room temperature.

- In a small bowl, combine brown sugar and crumbs. Line a 9-in. pie pan with bottom crust; sprinkle with brown sugar mixture and pack gently. Cover with plums. Combine the sugar, flour and cinnamon; cut in butter until crumbly. Sprinkle over plums., Roll out remaining pastry to fit top of pie. Make small cuts or slits in top crust; place over plums. - Combine all ingredients and pour into unbaked pie shell.
- Bake at 400° F until it raises and knife inserted in center comes out clean.
- (8/14/06: I made this pie for the first time today and baked it for 50 minutes. It did not look quite set, but after I let it cool for a half hour it cut beautifully. It could take 45-60 minutes depending on your oven).
- Note: original recipe called for butter the size of a walnut---I researched it and found this to mean 1 ounce, or 2 tbsp, of butter.

My grandmother use to make a "tarte au sucre" for every family gathering. The kids would be wired all day, lol. I have been looking for a recipe that turns out like hers for a long time now. I have tried a few, all delicious, but not quite the same. A few weeks ago, my Mom was looking through a box of stuff left behind after my grandma passed away a while back and , there it was....... Her recipe for tarte au sucre. Hope you all enjoy it as much as I do. You might want to have a glass of milk with you when you do eat it, it is extremely sweet!

- Preheat oven to 350 degrees.
- In bowl, mix brown sugar and flour.
- In seperate bowl, whisk together milk, eggs and vanilla.
- Gradually add to flour mixture mixing well.
- Place cookie sheet under pie crust.
- Fill pie crust with mixture.
- Drop cold butter cubes throughout mixture.
- Cook for 45 to 50 minutes, until outside edges are firm and center is slightly jelly like.

SUGARPLUM PIES
With dreams of sugarplums dancing in their head. This is a cookie that is a favorite at Christmas time. They are a little labour intensive, but worth it.

Steps:
- Mix dry ingredietnts and set aside.
- Beat butter and sugar until pale and fluffy. Then add in egg and vanilla until blended.
- On low speed mix in dry ingredients, alternating with milk, until well blended. Divide dough into 4 pieces, wrap in plastic and refrigerate for an hour.
- Filling: cook prunes, apricots, water and sugar in a small uncovered saucepan over medium low heat for 5 minutes, stirring 2-3 times until water is absorbed and fruit is tender. Remove from heat and stir in remaining ingredients. Cool completely.
- Assembling cookies to bake: preheat to 350°F Rollout dough and pinch out round pieces with cookie cutter or drinking glass. Place 1 tbsp filling on one round and top with another, dampen sides of round to stick the two together. Cut a small cross in the top with a sharp knife.
- Bake for about 12 minutes.
