FLUFFY WAFFLES
A friend shared this fluffy waffle recipe with me a few years ago. The cinnamon cream syrup is a nice change from maple syrup, and it keeps quite well in the fridge. Our two children also like it on toast. -Amy Gilles, Ellsworth, Wisconsin

- In a bowl, combine the flour, sugar, baking powder and salt. Combine the egg yolks, milk and oil; stir into dry ingredients just until moistened. In a small bowl, beat egg whites until stiff peaks form; fold into batter. Bake in a preheated waffle iron according to manufacturer's directions., Meanwhile, for syrup, combine sugar, corn syrup and water in a saucepan. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in the milk, vanilla and cinnamon. Serve with waffles. If desired, serve with fresh berries.Freeze option: Cool waffles on wire racks. Freeze between layers of waxed paper in a resealable plastic freezer bag. Reheat waffles in a toaster on medium setting. Or, microwave each waffle on high for 30-60 seconds or until heated through.

- Preheat waffle iron. Preheat oven to 225°F or set on warm setting (only if you want to keep waffles warm and crispy while cooking remaining waffles.) Place a rack on a large baking sheet and place inside the oven.
- In a large bowl, whisk together all purpose flour, sugar, salt baking powder and baking soda (if using). Set aside.
- In a medium bowl, combine room temperature milk, eggs, vanilla extract and melted (and cooled) butter. Whisk to combine.
- Add the wet ingredients to the dry ingredients and stir just until combined. A few small lumps are fine. Let the waffle batter sit for 10 minutes.
- Grease waffle iron if needed with butter, oil or cooking spray (refer to product instructions if necessary) and scoop or ladle the batter onto the preheated waffle iron until batter is within ½ an inch from the edge. (I use about ¾ cup of batter for my iron.)
- Cook until golden brown and waffle iron indicates the waffle is ready. If your waffle iron doesn't have a light that goes off, keep an eye on the steam coming from the iron. When it is almost gone, check your waffle as that is in indication it is done cooking.
- Remove waffle from iron and serve with butter, maple syrup, berries and/or whipped cream. You can also keep warm by placing cooked waffles in the preheated oven on the rack while the rest of the waffles are cooked.

- Place strawberries and 3 tablespoons sugar in food processor, cover and pulse just until coarsely chopped.

- Heat oven to 375°F. Place paper baking cup in each of 30 to 36 regular-size muffin cups.
- In large bowl, beat cake mix and water with electric mixer on low speed 30 seconds; beat on medium speed 1 minute. Pour batter into muffin cups, filling each 3/4 full.
- Bake 12 to 20 minutes or until cupcakes are golden brown and cracks on top feel dry. Remove from muffin cups to cooling rack. Cool.
- In medium bowl, beat whipping cream with electric mixer on medium-high speed until slightly thickened. Reduce speed; beat in granulated sugar and vanilla bean paste. Increase speed; beat mixture until stiff peaks form. Spoon whipped cream into decorating bag fitted with large star tip.
- Pipe whipped cream on top of cooled cupcakes; garnish with berries. Sprinkle tops with powdered sugar.

Steps:
- Mix flour, sugar and vanilla sugar.
- Add butter and eggs.
- Leave to rest for minute 2 hours in the fridge.
- Put dough on the waffle maker (use two teaspoons or tablespoons according to the size of waffles you would like to make).
- Bake for a few minutes until the waffles are golden brown.
- Leave to cool. You can keep these waffles for some time in a plastic box, but couldn't tell you how long as they never last for more than 2-3 days.
- Enjoy!

- In a small saucepan, heat the milk over medium heat until bubbles form around the edges.
- Remove from the heat.
- Split the vanilla bean in half lengthwise and use a small knife to scrape the beans into the milk.
- Add the vanilla pod and let stand, 30-60 minutes.
- In a medium bowl, toss the strawberries and 4 T sugar; macerate, stirring occasionally, until the berries soften and form a syrup, 30-60 minutes.
- Preheat a Belgian waffle maker.
- In the bowl of a stand mixer using the whisk attachment, whip the egg whites on med-high speed until soft peaks form, 3 minutes.
- Add the remaining 3 T sugar and whip until firm peaks form, 2-3 minutes.
- Remove the vanilla pod and place the infused milk in a medium bowl.
- Slowly whisk in the egg yolks and butter.
- In a large bowl, mix together the flour, baking powder, and salt.
- Make a well in the center of the dry ingredients and pour in the milk mixture, stirring until just combined.
- Gently fold in the egg whites.
- Ladle the batter into the waffle maker, using ½-3/4 cup batter per batch.
- Spread the batter so that is almost reaches the edges of the waffle maker.
- Cook until the waffles are crisp and browned, 3-4 minutes.
- Using a spatula, remove the waffles from the waffle maker and serve right away, or place on a baking sheet in a single layer in a 200 degree oven for up to 20 minutes before serving.
- Top with the strawberries and whipped cream and dust with powdered sugar.
- To make the whipped cream-in the bowl of a stand mixer using the whisk attachment, whip the cream on med-high speed until soft peaks form, about 3 minutes.
- Add the sugar and vanilla and whip until firmer peaks form, 1-2 minutes.

- Divide the egg whites and yolks in separate bowls (I think this is easiest to do by dumping the egg in your hand and letting the egg white strain through your fingers into a bowl). With an electric hand mixer beat the egg whites to "stiff peak" stage (if you want to get a workout in then you can do this by hand with a whisk) and set aside.
- Combine the egg yolks, buttermilk, and vanilla. Add to the dry ingredients. When halfway mixed stir in the melted butter and mix until just combined. Fold in the beaten egg whites.
