Steps:
- Combine the cranberries and water in a medium saucepan. Cook over medium heat until all the berries pop, about 5-7 minutes. Add the other ingredients and reduce the heat to low. Cook until desired thickness. It will thicken further as it cools.
- Store in the fridge for up to 2 weeks or you can freeze it. I love having some on hand to put on top of my Baked Brie.

- Boil gently, uncovered, over medium heat 8 minutes, stirring occasionally (skins will pop).

SUGAR FREE THANKSGIVING CRANBERRY SAUCE
I asked for some sugar free cranberry sauce recipes on the diabetic forum and got this recipe from LARavenscroft! I added it for safe keeping and to share. Cranberries have 6 carbs per half cup. Total recipe has 12 carbs

Steps:
- Rinse berries and simmer on stove until all the berries are popped.
- Remove from heat and cool to room temperature.
- You may strain the berries if you want a smooth sauce.
- In a microwave safe container pour the 1 cup of cold water and sprinkle the gelatin over the top.
- Allow the gelatin to soften (about 1 minute).
- Microwave on high for a couple of minutes until the water is hot and the liquid is clear. It is not necessary to boil.
- Stir this into the cooked cranberries or the strained juice.
- Make sure it is cooled to room temperature, then add your sweetener.
- Taste to see if it is sweet enough and then refrigerate.

THANKSGIVING CRANBERRY SAUCE (DIABETIC)
I got this recipe in response to a request on the diabetic forum from LARavenscroft. I just made this for my DH for Thanksgiving. It is so easy to make and looks like a whole berry sauce. This is the simplest of homemade cranberry sauces - no spices, no orange peel, nothing extra. It is about the thickness of pudding. Use it not only only with turkey, but to put over yogurt or ricotta cheese for breakfast or a snack, or accompanying cheeses and nuts as a dessert.

Steps:
- Put cranberries in a pot on the stove, and pick through to remove soft and/or brown ones.
- Add the rest of the ingredients, stir, and bring to a boil on medium-high heat.
- Stir frequently - the cranberries will pop, and then release their "gel" and the sauce will come together like magic. This takes about 10 minutes.
- Remove from heat and let cool completely before refrigerating.
