1/2 cup margarine (I used butter buds and it worked great)
1/2 teaspoon almonds or 1/2 teaspoon vanilla extract
1/2 cup brown sugar, packed
2 cups rolled oats

Steps:

  • Melt margarine, combine with extract and sugar.
  • Add oats and mix well.
  • Press into 8-inch square baking pan.
  • Bake at 350°F for 15 minutes or until bubbling and golden brown.
  • Cool and cut into 25 squares.

1 1/2 cups oatmeal
1 3/4 cups flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup walnut pieces
1 cup brown sugar
1 teaspoon cinnamon
1 cup butter, melted
raspberry jam

Steps:

  • Mix all ingredients, except jam, well, in order given.
  • Put 1/2 the mixture on bottom of greased 9"x13"x2" pan. Spread with raspberry jam. Crumble the remaining oatmeal mixture over top of jam.
  • Bake at 325 for 30 minutes or until done.

2 eggs
1/2 cup white sugar
1/2 cup brown sugar
1/2 teaspoon salt
1 cup flour
1 cup rolled oats
2 teaspoons vanilla
1 cup icing sugar
water

Steps:

  • Preheat oven to 375°F.
  • Combine all ingredients and pour into a greased 8" or 9" square baking dish.
  • Bake for 30 minutes.
  • Frost when completely cool, then cut into bars.
  • To make frosting: Add water to icing sugar, a teaspoon at a time, and mix until you achieve a spreadable consistency.

Fast easy oatmeal cookies for the dieter or diabetic in the family. You can add raisins or craisins. This recipe came from a friend and then I changed it to add the splenda instead of sugar. For the oatmeal, I personally used the 3-minute type. I like the cookies because I love cookies and since I am now diabetic I can't have any so of course I think these are great!

3/4 cup Crisco shortening
1/2 cup Splenda sugar substitute
1/4 cup water
1 cup flour
1/2 teaspoon baking soda
1/4 cup Splenda brown sugar blend
1 egg
1 teaspoon vanilla
1 teaspoon salt
1 cup raisins
3 cups quick-cooking oatmeal
1 teaspoon cinnamon

Steps:

  • Beat together: shortning, sugars, egg, water, and vanilla until creamy.
  • Combine in a separate bowl, flour, salt and soda and cinnamon.
  • Add to creamy mixture, then fold in the raisins and oats, mix well.
  • Drop by rounded teaspoons onto ungreased cookie sheet.
  • Makes 5 dozen small or you can make them larger.
  • Bake 12-15 minutes.

This cake tastes really good with a cup of tea. I like to mix in the raisins and nuts instead of sprinkling them on top. I found that they become to dry and over done on top for my taste. I have guessed at the servings as it depends on how you cut it and a lot of the prep time is just letting it sit there.

1 1/2 cups low-fat buttermilk
1 cup organic rolled oats
1/2 cup applesauce (originally ask for 4 ounces, I think thats 1/2 a cup)
2 beaten eggs (or 1/2 cup Eggbeaters)
1/4 cup honey or 1/4 cup Splenda granular, sugar substitute
1 cup whole wheat flour
1/2 cup unbleached self raising flour
1 1/4 teaspoons baking powder
3/4 teaspoon ground cinnamon (or to taste)
1/4 cup roughly chopped walnuts
2 tablespoons sultanas

Steps:

  • Combine the buttermilk and rolled oats in a bowl and set aside for 15-20 minutes until the oats have softened.
  • While the buttermilk and oats are standing, pre-heat your oven to 350°f and line a standard baking tin with greaseproof paper.
  • Beat the eggs and add to the oatmeal mix along with the applesauce.
  • If using honey add to wet ingredients.
  • It using Splenda add to dry ingredients.
  • Mix the dry ingredients together, stirring to combine and add to the wet, mixing well.
  • Transfer the solid batter into the prepared baking tin. Using a wooden spoon, spread the batter to even it out.
  • Sprinkle the cake with roughly chopped walnuts and sultanas and let it sit for 20 minutes before baking.
  • Bake cake for approximately 1 hour or until a skewer inserted into the cake comes out clean.

1/2 cup unsweetened applesauce
1/4 cup vegetable oil
1 cup Splenda granular
2 cups milk
1 tablespoon baking powder
2 teaspoons cinnamon

4 cups rolled oats (not instant)
1 cup raisins (optional)

Steps:

  • Preheat oven to 350*.
  • Grease baking dish (dishes - I use 4 individual ramekins, but could also be 9x13 pan).
  • Crack & whip eggs.
  • Add applesauce, oil and splenda.
  • Mix in milk, baking powder, vanilla & cinnamon.
  • Add oats & raisins - stir well.
  • Pour into pan(s).
  • Bake for 35 minutes - until set.
  • You can also enjoy with any other type of dried or fresh fruit mixed.
  • Serve with cream and splenda - Enjoy!

1 cup quick oats
1 1/2 cups boiling water
1 cup flour
1 1/2 cups sugar
1/2 cup cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
2 eggs
1/2 cup shortening
1 teaspoon vanilla

Steps:

  • Pour boiling water over oats, set aside.
  • Combine: shortening, vanilla and oats.
  • Beat with mixer till well-blended.
  • Then beat for 2 minutes.
  • Add eggs.
  • Beat 2 minutes more.
  • Combine flour, sugar, cocoa, soda, salt.
  • Add dry ingredients to wet.
  • Pour into greased/sprayed 9x13 pan.
  • Bake, preheated 350°F oven for 30-35 minutes.
  • No need for icing this one.
  • It's so moist and dark and "delish".
