SUGAR FREE MAPLE FUDGE
Steps:
- Prepare a baking dish for nonstick. I like parchment paper that overhangs the dish. Butter is another option.
- Use a whisk or sifter to sift the sugar free powdered sugar into a large mixing bowl (whisk attachment can work on low speed).
- To make this recipe on a stove top: simply heat the ingredients in a saucepan on low heat, stirring constantly. When the ingredients appear to be combined and there are no clumps, transfer the fudge to your prepared baking dish. Refrigerate for at least two and a half hours or until firm before cutting into squares.
- Make this recipe in a microwave- place the ingredient in a microwave safe bowl. Heat on full power, stirring every thirty seconds, until until smooth and combined. Transfer to the prepared baking dish and refrigerate until firm.
- Note- if you are adding nuts, the should be stirred in after the heating process and before the transfer to the baking dish. Also, substituted ingredients can alter the heating and firming steps. Lastly, when adding the liquid ingredients, start with the smallest amount and add additional as needed for consistency (you may need more or less milk depending on the consistency of your fudge).

- Line an 8-in. square pan with foil; grease foil with 1 teaspoon butter., Cube remaining butter. In a large saucepan, combine cubed butter, brown sugar and milk. Bring to a full boil over medium heat, stirring constantly. Cook 10 minutes, stirring frequently. Remove from heat., Stir in maple flavoring, vanilla and salt. - Line an 8x8-inch baking pan with waxed paper. Butter the paper.
- Bring maple syrup, heavy cream, and brown sugar to a boil in a saucepan over medium heat. Continue to boil, without stirring, until mixture starts to bubble and registers 240 degrees F (166 degrees C) on a candy thermometer.
- Remove from heat. Add butter and salt but do not mix. Let sit until mixture reaches 105 degrees F (41 degrees C).
- Add walnuts and vanilla; beat until mixture loses its gloss. Pour into the prepared pan and let cool to room temperature. Cut, wrap, and store in the refrigerator.

- Line an 8-inch square baking pan with aluminum foil.
- Place chocolate in a food processor; pulse until finely chopped.
- Pour evaporated milk into a microwave-safe bowl. Stir in sweetener, 1/2 cup at a time, until dissolved. Add vanilla extract. Stir in chopped chocolate.
- Heat mixture in the microwave in 30-second intervals, stirring after each interval, until chocolate is melted and smooth, about 2 minutes total. Stir in walnuts.

- Read all of the instructions before making this sauce and have all of the ingredients ready on hand!
- In a non-stick small pot, add the water, powdered erythritol, and lakanto syrup. Put on medium heat and simmer until the water starts to boil. I use a gas burner, so my heat was definitely higher.
- Add the butter and start whisking with a whisk, still on medium heat, for a good 6-10 minutes until the liquid starts to become brown. First the butter will bubble like crazy and after a good 5 minutes, it will stop bubbling. Then it will start to smoke and then within 1 minute, the butter will brown. The butter NEEDS TO BROWN, this is the "burning" process for caramel. If it doesn't brown, your caramel will not work, so keep on heating, even turn up the heat if you have to, until it starts to smoke and the burn/change colour. Once the color changes, turn off the heat immediately and pour the cream in.
- Once your pour the cream in, the pot will bubble like crazy, just make sure you continue to stir. The caramel will be very light in colour. Sprinkle in the xanthan gum, and pour in the maple flavouring. Turn the heat back on to medium-high, and continue whisking vigorously for a good 1-3 minutes. The sauce will start to thicken even more and get more brown in colour.
