SUGAR FREE EASY CHOCOLATE PEANUT BUTTER FUDGE
I found this recipe while looking for something special to make my diabetic uncle for thanksgiving. A word on the sweetener. I have tried different combinations of sweeteners, including Splenda packets, Sweetzfree liquid Splenda, and powdered erythritol. I had the best results using the powdered erythritol and Sweetzfree, which is a very concentrated liquid. I have found that with chocolate, using artificial sweeteners with no sugar alcohols produces only an "OK" result. Adding a low glycemic sugar alcohol (not maltitol) improves the flavor and texture when working with unsweetened chocolate.

- Mix in the rest of the ingredients, adjusting sweetener to taste.
- Pack or spread into a loaf pan. Cool to room temperature, or you can put it in the refrigerator. Cut into 18 pieces and serve.

Steps:
- Make sure your coconut butter is melted before starting. Combine all ingredients in a food processor. Then smooth the fudge into a container or candy molds. Plastic containers work well, because you can pop the fudge right out. Place in the fridge for a few hours, or freeze for a few minutes. You can freeze it for longer periods of time; just be sure to thaw at least 15-20 minutes prior to eating.View Nutrition Facts

- This recipe calls for the use of a microwave. However, you could make this on the stove using a double boiler or similar method. Also, you will need a large microwave-safe bowl for cooking this as well.
- Prepare a square glass baking dish with aluminum foil which also overlaps the sides of the dish. Grease or spray this lined baking dish to prevent sticking as well. You can set this aside.
- I like to start by spraying my bowl with nonstick before cooking in it. Place the chocolate chips into the bowl and cook for 30 seconds on medium. Covering the bowl loosely with a microwave safe paper towel can help prevent a possible mess (at least in my kitchen). Stir in the evaporated milks and then the sugar alternative, butter and vanilla. Cook for another 30 seconds and stir again. Continue this process until everything has melted and blended together- about 4- 4 1/2 minutes total.
- Obviously this will be hot so please take precautions. Remove the bowl from the microwave and pour the fudge into the prepped baking dish. Allow to cool at room temperature. Then refrigerate your fudge until you are ready to cut it into squares.

- First you should prepare a suitable shape for your peanut butter fudge treats. You can use a rectangular or square shape (approx. 10 × 15cm) as well as small silicone praline molds. We tried both and found both variants extremely appetizing. You can use the silicone molds without preparation, we covered the box mold with baking paper beforehand so that the finished peanut pralines can be easily removed from it later.
- Then all the ingredients come in a small saucepan. We used peanut butter made from roasted peanuts. This gives the fudge another nice, hearty taste. While stirring, the ingredients are now heated on a medium setting until they have mixed well and a homogeneous mass is formed. This can now be carefully poured into the prepared molds. If you like, you can sprinkle a handful of whole peanuts on top.
- After half an hour in the freezer or about 1 to 2 hours in the refrigerator, our Clean Eating and SugarFree Peanut Butter Fudge can be carefully removed from the mold. Cut the hardened mass with a sharp knife into approx. 18 small, bite-sized pieces. Theperfect snack for all nutrition and health-conscious people with a sweet tooth is ready.
- The little treats should be kept in the refrigerator. This way they stay fresh and firm for a few days without any problems.

- Line a pan with parchment: Line a 9x5 loaf pan with parchment paper. I like to use binder clips on each side to keep the parchment in place.
- Melt dark chocolate: Place chips in a microwave-safe bowl and microwave using 30-second intervals, stirring after each interval, until completely melted and smooth. It will likely take 1 to 3 minutes (depending on your microwave). You can also use a double-boiler to melt your chocolate if desired.
- Add peanut butter: Quickly add peanut butter to the melted chocolate and stir until completely combined.
- Transfer to loaf pan: Pour peanut butter chocolate mixture into the prepared loaf pan and spread evenly. Sprinkle chopped peanuts on top.

- To microwave this recipe, combine together the peanut butter with the butter in microwave safe mixing bowl. Microwave on high stopping to stir every 30 seconds until the two ingredients are blended together smoothly. It should take about a minute and a half to do.
- To make this on the stove, over medium high heat, melt together the peanut butter and butter, stirring continuously, until blended smoothly.
- Remove the blended butters from the heat and stir in the remaining ingredients. Then transfer to the prepped baking dish. Use the back of a buttered spatula if needed to press the fudge into place. Then allow the fudge to cool in the refrigerator for until firm (two to three hours) before cutting into servings.
