This soft unleavened Indian flatbread is easy to make with simple ingredients. This one dough recipe can be cooked three different ways to make either roti, chapati, or puri. Make some to accompany your next curry dish!

2 c whole wheat flour
1 tsp salt
¾-1 c warm water
2 tsp ghee, (clarified butter) or oil

Steps:

  • Mix the flour and salt in a bowl. Add a bit of the warm water and the ghee. Mix with your hands to combine.
  • Continue adding water, mixing constantly with your hands until a soft and slightly sticky dough forms.
  • Turn the dough out onto a lightly floured surface and continue kneading until the dough is very soft and pliable.
  • Divide the dough into 8, roughly even, sections. Roll each section into a ball.
  • Flatten each ball and roll each section out, on a lightly floured surface, to 6 inches in diameter. (Keep the dough that you are not working with covered with a lightly damp tea towel to keep them from drying out.)
  • Heat a cast iron skillet (or other sauté pan) over medium high heat.
  • Place the rolled out dough onto the hot, dry skillet.
  • Cook the roti on the first side just until the bottom is dry and the roti releases from the pan, roughly 1 min.
  • Flip the roti and cook it on the second side for 2 min until brown spots start to form.
  • Flip the roti back to the first side and move it in the pan as it cooks and puffs, pressing lightly with a towel on the area that is puffing, to encourage the air to spread out through the roti. Cook the roti for 30 sec - 1 minute, until fully puffed or until the bottom has brown spots.
  • Remove the roti. Brush it with ghee or oil, if desired, and wrap it in a tea towel to keep it moist.
  • Continue with your remaining dough. (You may need to reduce the heat slightly as you continue to cook your roti. If the bubbles in your roti are burning and popping, most likely your pan is too hot.)
  • Serve the roti immediately or transfer the roti to a bread basket covered with a towel to keep them warm.
  • Heat 1 Tbsp of oil in a cast iron skillet and cook the rolled out dough rounds in the skillet as directed above. (The bread may not be as likely to puff.)
  • Fill the skillet with 1 inch of oil. Heat the oil to 350-370F and deep fry the flattened dough rounds, flipping once, until golden.
  • Let the puri cool on a paper-towel lined plate.

NAAN (INDIAN FLATBREAD)



Naan (Indian Flatbread) image

Indian flatbread, or na'an, is traditionally cooked in tandoors, a clay cooking vessel that acts partly like an oven and partly like a barbeque pit to produce this unique bread. You can still approximate the texture and flavor of it using a grill or the broiler of your oven!

2 1/2 teaspoons active dry yeast (1 envelope)
2 tablespoons sugar
4 1/2-5 cups all-purpose flour, more for dusting and rolling
2 teaspoons salt
1 teaspoon baking powder
3 tablespoons milk
2 tablespoons Greek yogurt, plain
1 large egg, lightly beaten
2 tablespoons vegetable oil, more for the bowl
3 tablespoons ghee (Indian-style clarified butter) or 3 tablespoons unsalted butter, melted

Steps:

  • In a small bowl, combine yeast, sugar, and 1/4 cup warm (110 to 115 degrees F) water; let stand until foamy, 5 to 10 minutes.
  • Into the bowl of your food processor, place 4 1/2 cups flour, salt, and baking powder; fit with the dough blade (or use a stand mixer with the dough hook) and mix to combine.
  • Add in the yeast mixture, milk, yogurt, egg, 2 tablespoons vegetable oil, and 3/4 cups warm water and knead until smooth and elastic (2 to 3 minutes - food processor; 5 to 8 minutes - mixer; 8 to 10 minutes - by hand); dough should be soft, but not too sticky, so add flour as needed.
  • Lightly oil a large bowl, add dough, turning to coat, then cover bowl with plastic wrap, then a clean kitchen towel; let dough rise, in a warm place, until doubled, about 1 to 1 1/2 hours.
  • Punch dough down and divide into 8 equal pieces, which you will roll into a ball and place on a lightly floured baking sheet; cover with a damp kitchen towel, and let rise until doubled, about 40 to 60 minutes more.
  • If using a tandoor, heat it to 450 degrees F (if using your oven, place a pizza stone on bottom rack and heat to 450; or the grill should be st for direct heating at medium-high heat).
  • On a lightly floured work surface, roll each dough ball into a disk about 5 inches in diameter; roll and stretch one end to form a teardrop shape.
  • If using a tandoor, drape a piece of dough over the round cloth gadhi, then press bread onto the hot clay wall; cook until the top puffs, gets blishtered and browned, 1 to 2 minutes; gently pry off clay wall and spread with ghee.
  • If using the oven, turn on the broiler, lay 1 or 2 pieces of dough on the pizza stone, and cook until the bottoms are browned and the tops blister and puff and are lightly toasted, 2 to 4 minutes; remove from oven and spread with ghee.
  • If using the grill, oil the grate lightly, then lightly brush the dough with butter, place buttered side on grill and cook until the bottom is browned and the top is puffed 1 to 2 minutes; lightly butter the top of the dough, then flip and grill the other side until lightly browned, 1 to 2 minutes.

Subru Uncle's Channa Masala(Delicious Chickpea Curry We All Love image

This goes well in my house. It was taught to me just the day before I left Oman for Orlando by Subru uncle who has worked for 13 years as a chef in my house. For this recipe, the tamarind juice must be prepared by soaking a 3 inch piece of tamarind in 1 1/2 cups of hot water, squeezing the tamarind piece and extracting the juice. Then collect the required amount of the same in a cup and use.

2 cups chickpeas, soaked overnight in plenty of water
4 small onions, peeled, washed and finely chopped
5 -6 garlic cloves, peeled, washed and finely chopped
2 inches fresh ginger, peeled, washed and finely chopped
1 -2 medium green chili, washed, ends trimmed and slit
1 tablespoon cumin seed
4 tablespoons pure wesson canola oil
1 1/2 teaspoons turmeric powder
3 teaspoons coriander powder
2 bay leaves
1/2 teaspoon baking powder
1/4 cup water, to cook tomatoes
2 medium tomatoes, washed, peeled and finely chopped
3/4 teaspoon red chili powder
3 teaspoons salt
1 teaspoon garam masala powder
1/2 cup tamarind juice

Steps:

  • Soak the chickpeas overnight in a large pot in lots of water.
  • The next day, throw out the water in which the chickpeas were soaked, wash them well, and then add fresh water to the pot.
  • Bring to a boil.
  • If the chickpeas were not soaked overnight in water, then it will be hard to bring them to a boil and to cook them soon. In that case, add the baking powder to the pot of chickpeas and water, and, then bring to a boil. The chickpeas will boil quickly with the addition of baking powder.
  • Boil until the chickpeas are tender.
  • Remove from heat and keep aside.
  • Heat oil in a large pot on high flame.
  • Once its hot, toss in the cumin seeds.
  • Allow to crackle.
  • Tear the bay leaves into 2 parts, add to the pot and saute for 10 seconds. {Chef's Tip: If the bay leaves are torn and then added to the pot, it brings out the aroma better}.
  • Once they stop crackling, toss in the ginger, garlic, onions and green chilli.
  • Stir-fry on medium flame until the raw smell of the ginger and garlic is gone and the onions are browned.
  • Add turmeric, red chilli and corriander powders.
  • Mix well and stir-fry for 5 minutes on medium flame.
  • Then add the tomatoes, mix well and cook on medium flame for 5 minutes.
  • Add 1/4 cup water, stir well and cook on high flame until the tomatoes are extremely softened.
  • The consistency of the tomato mixture should be mushy and in simpler words, really soft.
  • Add 3 tsps.
  • of salt.
  • Mix well.
  • Add a little shy of 1/2 cup tamarind juice.
  • Stir in garam masala powder.
  • Mix well, then add the cooked chickpeas, 1 1/2 cups of water and about 1 1/4 cups of water in which the chickpeas were cooking.
  • Mix well and boil on high flame for 10 minutes.
  • Remove from heat, garnish with corriander leaves and serve hot with parathas/rice/rotis/white bead with yogurt on the side.

1/2 cup water, heated to 110 degrees F
1 tablespoon honey or 1 tablespoon agave syrup
2 teaspoons instant yeast
1/2 cup buttermilk
3/4 cup rice flour
3/4 cup brown rice flour
3/8 cup potato starch, plus more for dusting
3/8 cup cornstarch
2 teaspoons guar gum or 2 teaspoons xanthan gum
1 1/2 teaspoons salt
1/4 teaspoon baking powder
1/4 cup cooking oil
2 large eggs, beaten (or use gluten free egg replacer or substitute)
unsalted butter, for buttering tops of naan (or Earth Balance spread)

Steps:

  • If using milk, whether cow's or rice milk, with vinegar, mix and set aside for 15 minutes until thick. If it does not reach the consistency of butter milk, use less than 1/2 cup.
  • Add warm water to a medium sized bowl; add sugar or honey; stir to dissolve; add yeast; stir; and set aside until frothy, about 5 minutes. If it does not bubble start over with fresh yeast.
  • In a large bowl, add remaining dry ingredients; whisk thoroughly.
  • Add buttermilk, beaten eggs, to yeast mixture; whisk well.
  • Add dry ingredients to wet ingredients; using a rubber spatula, stir until it reaches a soft dough the consistency of creamy mashed potatoes; allow to rest for 20 minutes.
  • Scatter 2 tablespoons potato starch to a clean, flat surface; scoop 1/3 cup at a time of dough; add to floured surface; knead with dusted hands; shape into a disk as wide as your spatula.
  • Using a wide, thin spatula, transfer to preheated cast iron skillet.
  • Using the back of your fingers or a pastry roller dusted with starch, immediately flatten and distribute dough in pan working from the center, moving outwards.
  • Fry on each side for approximately 2 1/2 minutes; coat tops of fully cooked naan with salted butter.
  • Repeat with remaining dough adding additional potato starch as needed for kneading.
  • Serve warm and store uncooked dough covered in the refrigerator for up to 3 days.

Kind of like a chapati, a flat pita, or a whole wheat tortilla. It is thin, perfect for scooping up dips or rolling into wraps. You could probably make these on a grill, too, and they would be lovely. These turn out to be around 6- or 7-inch diameter breads, more or less. If you want larger breads (think burrito-sized) then cut these into 8-10 pieces instead of 12.

1 teaspoon salt
2/3 cup warm water

Steps:

  • Mix flours together.
  • Mix salt into water to dissolve.

  • Knead briefly on floured surface, let rest 10-15 minutes.
  • Cut into 12 equal parts.
