FRENCH STRING BEAN SALAD
Steps:
- Fill a large bowl with ice water. Bring a large pot of water to a boil and add 1 tablespoon of salt. Add the beans and cook for 1 minute only. Time it carefully! You want the beans to be crisp-tender. Drain the beans and put them in the ice water until completely cool. Drain the beans again, dry on paper towels, and place them in a large bowl. In a small bowl, whisk together the mustard, vinegar, 1/2 teaspoon salt, and the pepper. While whisking, slowly add the olive oil to make an emulsion. Pour enough dressing over the beans to moisten them well, reserving the rest for another use. Toss with the dill, season to taste, and serve at room temperature. (If the beans aren't served immediately, refrigerate them and add a little extra vinaigrette and a sprinkle of salt before serving.)

- Make the dressing: Smash the garlic clove, sprinkle with a pinch of the salt, and, with the flat side of a large knife, mash and smear the mixture to a coarse paste. Whisk the garlic paste, lime juice, remaining salt and chili powder together in a bowl. Gradually whisk in the olive oil, starting with a few drops and then adding the rest in a steady stream.
- For the salad: Toss together the beans, corn, bell pepper, and onions. Add the dressing and toss to coat evenly. Gently fold in the tomatoes, avocado, and cilantro. Adjust seasoning with salt and pepper, to taste, and serve.

- Place beans in large Dutch oven and cover with fresh water.
- Add bay leaf and bring to a boil.
- Cover and simmer for 30 minutes.
- Stir in salt and simmer another 30 minutes, until beans are tender.
- Remove bay leaf and drain beans.
- Allow beans to cool to warm, but no longer hot.
- Combine lemon juice, lime juice and salt.
- Beat in olive oil gradually until mixed well.
- Add garlic and cilantro.
- Check seasonings.
- Pour dressing over warm beans and toss.
- Add chopped tomatoes and onions and toss well.

- Cover beans with cold water, soak overnight, then drain. Place beans, thyme, bay leaves, onion, carrots and celery in a large pot, and barely cover with cold water. Add the salt and black pepper, and simmer until the beans are tender, about 40 minutes.
- Meanwhile, combine the garlic, parsley, capers, pumpkinseed oil and vinegar in a large bowl. Season to taste with salt and black pepper.
- When the beans are done, drain them, remove the thyme and bay leaves and toss the warm beans with the dressing and the cubed meat. Serve at room temperature.

STYRIAN "GIGANTES" (SCARLET RUNNER BEAN CASSEROLE)
This is a styrian version (Styria, Province of Austria) of a hearty, simple and vegan Greek Bean dish, that tastes heavenly and uses "Käferbohnen" (Scarlet runner beans) instead of white giant beans. If you can't get hold of Scarlet Runner Beans use giant beans instead. The original recipe calls for about 200ml olive oil, i cut that lavish amount in half, and still find it's enough oil left :). Prep.time comes without beansoaking time!

- If using dried beans, soak them overnight and cook according to package instructions (usually for 90min.).
- Cut onion in about 0,5cm pieces, mince garlic, peel and seed tomatoes (put in boiling water for about 30sec.) and chop into bite size pieces.
- Heat olive oil and add onion and garlic. Let fry until translucent.
- Add beans and tomatoes. Stir.
- Salt and pepper to taste.
- Transfer to baking dish and let bake for about 20-25 minute at 175°C (until the beans go lightly crispy).
- Enjoy with white bread, such as baguette, ciabatta or pita. The oil onion mixture tastes heavenly when dipped into.

- Stryian Pumpkin Seed Oil. First up, we have my all-time favorite foodstuff from this part of Austria. No food item is as intrinsically linked to Styria or as beloved as the famous Styrian Pumpkin Seed Oil (Steirisches Kürbiskernöl).
- Stryian Horseradish. Styrian Horseradish (Steirischer Kren) is yet another foodstuff I love due to its pungency, something which is often missing in Austrian cuisine.
- Scarlet Runner Bean Salad. One of the most popular salad dishes in Austria, the scarlet runner bean salad (Käferbohnensalat) is one of the foods you simply have to try when visiting Graz.
- Styrian Fried Chicken. Although you can sample fried chicken (Backhendl) throughout Austria, it is the Styrian variant that stands head and shoulders above the rest.
- Verhackert. Another true specialty of Styria, Verhackert is a popular and yummy spread which is similar to bacon jam. It is made from smoked, finely chopped bacon that is blended with salt, minced garlic, and sometimes even pumpkin seed oil.
- Styrian Wines. Wine is deadlocked with beer as Styria’s favorite alcoholic tipple. Styrian wine is mainly white, though there are excellent local red wines.
- Brettljause. Since I’ve now covered Styrian wines, I’ve got to mention Brettljause, a wooden sharing platter with a selection of local Styrian delicacies.
- Styrian Beers. Most Styrian beer is a good quality brew of the light, continental-lager, or pilsner type. One of the most popular beer styles in the region is the Märzen, a medium body beer with a flush of lightly toasted, spicy malt flavors, and bright, glowing golden and copper-orange hues.
- Zotter Chocolate. While Vienna’s got the Sachertorte, Linz the Linzertorte, and Salzburg the Salzburger Nockerl, there isn’t a Styrian sweet specialty.
- Pork Knuckle Soup. Hearty and delicious are two words that describe traditional Styrian cuisine and this is perhaps no better exemplified than when eating Styrian “Pork Knuckle Soup” (Klachelsuppe).
