STUFFED TOMATOES IN PUFF PASTRY

Stuffed Tomatoes in Puff Pastry image

Lift the "lid" off a tomato pastry dish for a surprise: a savory mixture of sausage, onions, celery, and Parmesan cheese.

Provided by Martha Stewart

Categories     Food & Cooking     Appetizers

Number Of Ingredients 11

6 small vine-ripened tomatoes
Salt
1 sheet frozen puff pastry, (9 1/4- by- 9 1/2 inches), thawed
1 tablespoon olive oil
1 small onion, coarsely chopped
1 small celery stalk, cut into thin half-moons (1/3 cup)
8 ounces sweet Italian sausage, casings removed, crumbled
2 tablespoons finely chopped fresh flat-leaf parsley
1/2 cup finely grated Parmesan cheese
1 large egg
1 tablespoon heavy cream

Steps:

  • Preheat oven to 400 degrees. Cut tops off tomatoes, and reserve. Remove and discard seeds; salt flesh. Drain upside down on a rack set over a baking sheet. Meanwhile, roll out puff pastry to a 13-by-12-inch rectangle; cut into 6 pieces. Press into cups of a standard muffin tin, overhanging sides. Cover with plastic wrap; set aside.
  • Heat oil in a nonstick skillet over medium-high heat until hot but not smoking. Add onion and celery; cook until onion is golden, 3 minutes. Add sausage; cook, stirring occasionally, until browned, 10 minutes. Remove from heat; stir in parsley and cheese.
  • Divide sausage mixture among tomatoes; place 1 in each pastry shell. Lightly beat egg with cream; brush onto edges of shells. Turn corners of pastry up around tomato slightly.
  • Bake until pastry is golden, 15 minutes; return tomato tops halfway through baking. Let rest 10 minutes before serving.

Time 46m

Yield 6 servings

Number Of Ingredients 15

1 cup dried morel mushrooms
1 cup dried chanterelle mushrooms
1 cup dried shiitake mushrooms
1 cup warm water
3 cups white wine
6 medium tomatoes, cored, seeded plus 1 tomato, chopped
1/2 teaspoon salt
2 tablespoons olive oil
2 tablespoons minced shallots
1 tablespoon minced garlic
1 cup finely diced onion
1 1/4 cup panko crumbs (Japanese)
1/4 teaspoon pepper
3 1/2 ounces goat cheese, room temperature
1 tablespoon chopped fresh parsley leaves

Steps:

  • Put mushrooms, water, and wine into a container and soak until mushrooms are rehydrated. Remove mushrooms and squeeze out excess liquid. Reserve the liquid. Roughly chop mushrooms.
  • Sprinkle the cored and seeded tomatoes with salt and place upside down to drain. In a saute pan heat 2 tablespoons of olive oil and add shallots, garlic, and onion. Cook until translucent. Add mushrooms and cook for about 5 minutes then add 1/2 cup of the reserved mushroom liquid to pan and cook for another 4 or 5 minutes, or until most of liquid is absorbed. Add the panko and the chopped tomato and stir to combine. Season the mushroom mixture with salt and pepper and remove from heat.
  • Preheat the broiler. Mix together the room temperature goat cheese and parsley and reserve. Stuff each tomato with the mushroom stuffing and top with thin layer of goat cheese mixture. Place tomatoes on a baking sheet and put under the broiler for 2 to 3 minutes until cheese is slightly melted and golden.

  • PRE-BAKE THE PUFF PASTRY: Line a rimmed pan with parchment paper. Unfold the puff pastry sheet and set it on the parchment. Stretch it if necessary to about 14 x 14 inches and 1/8 inch thick. Score a line 1/2 inch in from all sides with a knife to make a border (not cutting all the way through). Prick the dough with a fork over the entire sheet of pastry except the border. Spread a very thin layer of Dijon over the inside surface. Brush the border with the eggwash (egg plus water). I use my fingers for both these steps. Bake for 15 minutes until golden brown. If pastry is puffed up in the middle, gently press it down.
  • MAKE TOMATO TOPPING: Squeeze handfuls of the tomato halves over the sink to remove most of the juice and seeds (this will help prevent the tart becoming soggy). Place in a bowl. Add oil, capers, garlic, herbs, salt and pepper. Mix together. Taste and add a pinch of sugar if needed.
  • ASSEMBLE TART AND BAKE: Sprinkle cheeses over the pre-baked tart inside the border. Place tomatoes on top of the cheese in a single layer, cut side facing up. Spoon on any of the tomato seasonings left in the bowl. Bake the tart for another 12-15 minutes. Remove from oven, transfer to a cutting board and cut into 16 squares with a sharp knife. Serve warm . Can be made ahead - Note 1.

13 EASY TOMATO APPETIZERS - INSANELY GOOD

Category Appetizers, Recipe Roundup
  • Fresh Tomato Bruschetta. Bruschetta is one of my all-time favorite appetizers! There’s just something about the simplicity of grilled bread topped with fresh ingredients.
  • Baked Feta and Tomatoes. Do you love Mediterranean flavors? If so, you’ll adore this baked feta and tomato dish! It’s simple to make but tastes delicious.
  • Caprese Skewers. Here’s another fun (and simple!) Mediterranean dish. It combines cherry tomatoes, basil leaves, and mini-mozzarella balls. Add a little salt and pepper and drizzle them in a balsamic-olive oil mixture for added flavor.
  • Sun-Dried Tomato Ricotta Crostini. Let’s take a slight detour here for a second. Do you guys know the difference between bruschetta and crostini? I only ask because I didn’t know until very recently.
  • Stuffed Cherry Tomatoes. No shade to stuffed peppers, but stuffed tomatoes are phenomenal. Each one is a bite-sized mouthful of ambrosia. Juicy cherry tomatoes are stuffed with garlic- and dill-infused cream cheese.
  • Mediterranean Tomato and Feta Dip. This dense, chunky dip is bright, zesty, and out of this world. It’s cool and refreshing and ideal for summer parties.
  • 5-Ingredient Burst Tomato Spread. Burst tomato spread is like warm bruschetta, and I’m here for it. It features tons of bold tomato flavor with just a hint of garlic.
  • Barefoot Contessa Sun-Dried Tomato Dip. Sun-dried tomato dip is thick, creamy, and low-carb- and keto-friendly. Each serving has just two net carbs. And the amount of flavor in each bite is almost unbelievable.
  • BLT Bites. BLTs are scrumptious, but they don’t make good appetizers. BLT bites, on the other hand, are delightful appetizers. They, too, are a type of stuffed cherry tomato, but you won’t use cream cheese.
  • Tomato Tart With Puff Pastry. Don’t you just love the flaky yumminess of puff pastry? Now, picture that topped with Gruyere cheese, parmesan, and juicy tomatoes.
