- Preheat the oven to 375 degrees F.
- In a large saute pan over medium heat, saute the sausage until no longer pink. Remove the sausage (leave in the fat), and set aside. To the pan, add the onion, celery, and apple and sprinkle with salt and pepper. Cook until the apple is no longer crisp, about 5 minutes. Add the garlic and cook an additional couple of minutes. Remove from the heat, stir the sausage back in and set aside.
- In a food processor, pulse the bread with the sage, rosemary, and thyme into coarse crumbs.
- Heat the butter in a medium saute pan and cook the crumbs over medium-high heat until coated with butter and lightly toasted, about 3 minutes (be careful not to burn). Mix the breadcrumbs into the sausage mixture.
- Prepare the roast as if making a jellyroll. Place the roast with the short side toward you, and fat facing down toward the counter or cutting board. Use a sharp knife to slice the roast open at about 1/2-inch from the bottom of the roast (parallel to the cutting board), being careful not to cut all the way through. Continue cutting, unrolling the roast as you work until you have a large, thin piece of meat. Place the rolled out piece of meat between 2 sheets of waxed or parchment paper, and lightly pound with meat mallet to increase the meat surface area by 10 to 20 percent. Be careful not to pound through the meat. Salt and pepper the pork and top with the filling, spreading evenly across the pork, leaving a 1-inch margin around the perimeter.
- Starting with the short side, roll up tightly jellyroll style, and secure the roast with kitchen twine.
- Heat a large saute pan over medium heat and add oil. Add the roast and brown on all sides. Place in a roasting pan fitted with a rack and add the wine in the bottom of the pan (to keep the juices from burning), and bake for 45 minutes to 1 hour, or until the internal temperature hits 145 degrees F on an instant-read thermometer. Remove the roast from the oven and allow to rest for a full 10 minutes before slicing and serving.
APPLE STUFFED PORK ROAST

- With a knife sharpener, poke a hole through the roast to make a tunnel.
- Then take a knife and cut through until the hole is wide enough to stuff.
- In a large bowl, mix together apple juice and brown sugar.
- Place roast in bowl and turn a few times.
- Let sit in fridge fat side up for about an hour.
- In the meantime, peel and dice apples.
- Start making stuffing, adding apples and raisins before adding the stuffing mix so they get soft.
- Let apple stuffing cool while the pork in in the fridge.
- Preheat oven to 350°F .
- Line a roasting pan with heavy duty foil.
- Remove pork from fridge and Pour some of the marinade into the foil lined pan.
- Just enough to coat the bottom.
- Discard the rest.
- Start stuffing the roast.
- It's easiest to use your hands.
- Make sure you stuff it way down so you don't forget the middle.
- Bake about 20 minutes per pound - 170 degrees using a meat thermometer.
- Remove from oven and let stand 10 minutes.
- Carve 1 1/2 inches wide.

- Preheat oven to 300 degrees F (150 degrees C).
- Heat margarine in a skillet over medium heat; cook and stir onion, mushrooms, and celery in the hot margarine until vegetables are tender, about 12 minutes. Transfer vegetables to a bowl. Stir bread into vegetables until moistened; season with salt and black pepper.
- Cut the pork loin almost in half lengthwise, cutting to about 1 inch from the bottom; open pork loin like a book. Cover with plastic wrap and lightly pound with a meat mallet to flatten the meat. - Heat the oil in a saucepan and cook the onion for 5 mins until soft. Remove from the heat. Once cool, transfer to a bowl and mix in sage, breadcrumbs, sausage meat and some seasoning.
- Untie the pork and score the skin well with a sharp knife. Cut down the length of the meat, then open out like a book so you can stuff the sausage meat inside. Close back up to resemble original shape and tie at intervals with string to hold it together. Weigh so you know how long it will need to cook for. This can be done ahead; chill until needed.
- Heat oven to 240C/220C fan/gas 9. Rub the joint all over with salt and pepper and place in a roasting tray. Cook for 25 mins, then turn to 180C/160C fan/gas 4 and cook for 20 mins per 450g/1lb. Remove, and check it's cooked through: any juices that run out should be clear. Transfer to a dish, then cover with foil to rest while you make the gravy.
- Spoon most of the fat out the tray, leaving the meat juices. Place tray on the hob or transfer juices to a frying pan. Stir in the flour for 1 min followed by the stock and cider, and bubble for a few mins. Strain into a jug. Serve the pork sliced, with the crackling, potatoes, gravy and veg.

- Adjust the oven rack to the lower-middle position and heat oven to 325°Line a large rimmed baking sheet with aluminum foil and set a V-rack wire rack inside. Spray the rack with nonstick cooking spray.
- Butterfly the pork loin roast or ask your butcher to do this for you.
- Use paper towels to pat the pork dry and rub it on all sides with salt and sugar. Place the roast in a zipper-lock bag and refrigerate 1-4 hours.
- In a large skillet, cook the sausage and bacon until the sausage has browned, the bacon is cooked through but not crispy. Transfer the meat to a paper towel-lined plate reserving 2 tablespoons of the rendered fat in the skillet.
- Add the onion, celery and apple to the skillet. Season with salt and pepper and cook until the onion, celery and apple are tender. Add the minced garlic and remove the skillet from the heat. Pour the onion mixture into a large mixing bowl and wipe out the skillet.
- Add the reserved sausage/bacon mixture to the onion mixture, in the bowl, and stir well.
- While the above cooks, place the bread, sage, rosemary and thyme in the bowl of a food processor and pulse the mixture into coarse crumbs.
- Set the skillet over medium heat and add the butter. When the butter melts, add the coarse breadcrumb mixture and stir until the breadcrumbs are lightly toasted, about 3 minutes (do not allow the breadcrumbs to burn). Add the breadcrumb mixture to the sausage/onion mixture and stir well. Set aside.
- Remove the pork from the bag and set it in a second large baking tray. Pat it dry with paper towels and arrange it, fat cap down, on the tray.
- Cover the pork with the sausage/onion stuffing, leaving a ½-inch border on all sides.
- Cut 7 (10-inch) pieces of kitchen twine and set them next to the work area.
- Roll the pork tightly and tie it at 1-inch intervals along the length of the roast. Season it, on all sides, with kosher salt and black pepper.
- Heat the large skillet over medium heat and add 2 tablespoons oil.
- Place the roast in the skillet and brown on all sides (about 3 minutes per side).
- Set the roast in the V-rack wire rack on the rimmed baking sheet, fat side up, and set it in the oven. Pour the chicken stock under the roast in the bottom of the baking sheet.
- Roast the pork 50-60 minutes or until the thickest, middle part of the pork registers 145°F on a meat thermometer. Remove the roast from the oven, tent loosely with foil, and let it rest 10-20 minutes before slicing. Remove the kitchen twine before slicing.
- If desired and if there is enough, pour any rendered juices from the bottom of the pan through a mesh strainer and serve alongside the roast.

- Preheat oven to 450-degrees.
- Combine sage, rosemary, garlic, olive oil, wine and crushed red pepper flakes and purée in a food processor until smooth. Season with salt and pepper and combine.
- Lay the pork flat and massage the herb mixture on the inside and out.
- Roll up the pork like a roulette and tie it with the butcher twine. It does not have to look beautiful, just tie it up so that it stays together

- Mix the stuffing together and set aside.
- Make a slit in the roast to butterfly it. Put the roast on its back and put the stuffing on the top.

- Pre-heat the oven to 200°c.
- To make the apple stuffing, fry the apples and onion in a splash of olive oil until golden brown.
- Add the garlic and sage and allow to fry for another minute before adding the apple cider vinegar.
- Season to taste and set aside.
- Season the pork belly and place the apple stuffing on one edge (lay the pork belly on the counter in front of you). Carefully roll the pork belly and secure with string.
- Any left-over stuffing can be placed around the pork belly with the red onions in the roasting tray.
- Drizzle the pork belly with olive oil and season with more salt and pepper.
- Place the pork belly in the oven.
- Allow to roast for 30 minutes at 200°c before turning down the heat to 160°c. Allow to roast for another 2 hours. (I like to check the belly every 30 minutes or so to make sure the onions and apples aren't burning. If it seems like the roasting dish is too dry, you can add a cup of water/apple juice)
- After 2 hours, remove the belly from the oven and allow to rest for 10 minutes before carving and serving with the caramelised apples and onions from the roasting tray.
PORK FILLET STUFFED FEAST

- First make the stuffing by mixing all the stuffing ingredients together in a bowl. Next using a rolling pin beat the meat to flatten the pork fillet then cut in half. Next lay a large piece of cling film on a chopping board and line up the streaky bacon to the length of the pork fillet. Then lay the pork on the bacon and put the stuffing on top. Lay the other half of the pork fillet on top, with the skinnier end on top of the thicker end of the other piece. Then carefully roll in the cling film into a neat package. Leave to set in the fridge until you need to cook (can be made the day before)
- Heat the oven to 180C for a fan oven. Unwrap the pork and place on a baking tray, roast in the oven for approx 40-45 mins.
- Once cooked remove the pork from the tray, set aside to rest and cover in foil. Add 200ml of water to the baking tray and bring to the boil and lift all the sticky bits from the bottom of the tray. Strain the liquid into a small saucepan, add any juices from the rested meat along with the ginger wine and cream, simmer. Mix the cornflour with a little water, add to the sauce and simmer for a couple of minutes until thickened, add salt and pepper to taste.
- Calve the pork into slices, serve with any leftover stuffing and sausage and enjoy :)

- Buy a boneless, rolled pork loin.
- Rolled pork loin comes in two pieces.
- Cut each one lengthwise to, but not through, the other side.
- Open the meat like a book and pound to 1/2 inch thickness.
- Sprinkle each side with 1/4 teaspoons each of salt, pepper, and coriander.
- To prepare stuffing:.
- Cook sausage until slightly pink; drain well and pat dry with paper towels.
- Combine sausage and the next 9 ingredients; set aside.
- Lay out enough 10" pieces of string, spaced 2 inches apart, the length of meat.
- Place one piece of meat on strings, with strings crossing under meat horizontally.
- Spoon stuffing mixture evenly down center of one piece of meat.
- Top with remaining pork rectangle.
- Tie securely with the string at 2 inch intervals, securing sides together.
- Trim loose ends of string.
- Place roast on a greased rack in a shallow roasting pan.
- Insert a meat thermometer into the thickest portion of the meat, making sure it doesn't touch fat or stuffing.
- Bake at 325 degrees for one hour and 30 minutes or until meat thermometer registers 145 degrees.
- Combine cherry preserves and orange marmalade; stir well.
- Brush roast with preserve mixture.
- Bake an additional one hour or until thermometer registers 160 degrees, basting often.
- Allow approximately 30-35 minutes per pound.

- For the filling, either put all the ingredients in a small food processor and blend until well combined - the mixture doesn't have to be completely smooth - or pound with a pestle and mortar. Season with salt and pepper. Lay the pork out, skin-side down, and rub the filling over the meat. Roll it up as tightly as you can and secure at intervals with butcher's string. If you have time, leave the pork in the fridge, uncovered or loosely wrapped in kitchen paper, overnight - or even better, for 2 nights. This gives the flavours time to permeate the meat and allows the skin to dry out. An hour before you are ready to start cooking the pork, remove it from the fridge so it can come up to room temperature. Preheat the oven to 150°C/Fan 130°C/Gas 2. Arrange the potatoes and onion slices on the base of a large roasting tin and season with salt. Pour over the white wine or cider and the stock or water. Make sure the rind of the pork is dry and season it with salt. Place the pork on top of the potatoes and onions. Cover it with foil and put in the oven. Roast for 4 hours until the pork is cooked through. Check with a meat thermometer if you have one - the internal temperature should read 68°C. Turn the oven up to its highest setting and cook for a further half an hour to crisp up the skin. Remove from the oven and transfer the meat and potatoes to separate serving dishes. Leave the meat to rest for half an hour, uncovered, but keep the potatoes warm.

- Preheat oven to 400 degrees F.
- Brown sausage in a saute pan. Add apples and shallots and cook 3 minutes. Transfer to a mixing bowl, add walnuts and parsley, and season, to taste, with salt and pepper. Let cool before stuffing.
- Split the pork roast horizontally, forming a pocket; do not cut all the way through. Season roast inside and out with salt and pepper. Pack stuffing in the center and tie roast with enough butcher's twine to hold it together.

- Remove roast to a carving board, cover loosely with foil, and let rest 10 minutes before slicing. Slice roast into 12 pieces. Serve 2 slices per serving, garnished with parsley.
