1 tablespoon olive oil
4 bone-in pork chops
1 teaspoon garlic salt
1 teaspoon ground black pepper
1 tablespoon olive oil
1 (6 ounce) package sliced fresh mushrooms
1 (10.75 ounce) can golden mushroom soup (such as Campbell's®)
2 tablespoons water

Steps:

  • Heat 1 tablespoon olive oil in a large skillet over medium heat. Sprinkle pork chops with garlic salt and black pepper. Fry pork chops in the hot oil until browned, 5 to 8 minutes per side. Transfer chops to a plate.
  • Heat 1 tablespoon olive oil in skillet; cook and stir mushrooms in the hot oil until soft, 5 to 8 minutes. Scrape up and dissolve any browned bits of food into mushrooms as you stir. Pour golden mushroom soup and water into skillet and stir into mushrooms.
  • Place pork chops and accumulated juices into mushroom sauce, spooning sauce over chops. Simmer until meat is no longer pink inside and juices run clear, occasionally spooning more sauce over chops as they cook, 10 to 15 minutes.

This Pork Chops in Creamy Mushroom Gravy recipe is inspired by an old classic, however this one is made entirely from scratch. It's loaded with fresh mushrooms, just a splash of half and half and ready in 30 minutes making it the perfect healthy comfort food dinner!

¾ teaspoon coarse kosher salt, divided
4 small boneless pork loin chops, about 1 ½ pound
2 teasopoons canola oil
1 shallot, minced
2 cloves garlic minced
½ teaspoon dry thyme
1 8-ounce package mushrooms, finely diced
½ teaspoon chopped rosemary
2 tablespoons dry vermouth or white wine
¼ teaspoon freshly ground pepper
2 tablespoons flour
1 ¼ cup reduced-sodium chicken broth
¼ cup half-and-half

Steps:

  • Pat pork dry with paper towels. Sprinkle ¼ teaspoon salt over pork. Heat oil in a large skillet over medium high heat. Add the pork chops and cook until just browned, 2 to 3 minutes. Flip over and cook 2 to 4 minutes longer until the bottom is browned. Set pork on a plate and tent with foil to keep warm.
  • Return the skillet to medium heat. Add shallot, garlic, thyme and the remaining ½ teaspoon salt. Cook, stirring constantly until fragrant and starting to brown, 20 to 45 seconds. Add mushrooms and rosemary and stir to coat with the shallot mixture. Cook, stirring often until the mushrooms have released their juices and the juices have evaporated and the mushrooms have started to brown, about 7 minutes.
  • Add vermouth and pepper and cook, stirring until the liquid has evaporated, 1 to 3 minutes. Sprinkle flour over the mushroom mixture and stir to coat. Add broth and cook, stirring until the flour has dissolved into the broth. Increase heat to medium-high, and bring to a simmer, stirring often until the sauce is thickened. Add the pork back to the skillet and turn to coat in the sauce. Heat the pork, turning often, in the sauce until it is hot and just barely pink in the center, 1 ½ to 3 minutes. Transfer the pork to 4 plates. Stir the half and half into the gravy. Spoon the gravy over the pork chops.

4 each pork loin chops
10 medium (blank)s cremini mushrooms, sliced
1 large shallot, thinly sliced
3 cloves garlic, minced
2 cups chicken broth

3 tablespoons white wine
1 cube beef bouillon
2 tablespoons chopped fresh Italian parsley
1 pinch salt and ground black pepper to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Melt 2 tablespoons butter in a large skillet over medium-high heat. Add pork chops and cook until golden brown, 3 to 5 minutes per side. Transfer to a baking dish.
  • Bake in the preheated oven chops are no longer pink in the center, about 25 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).
  • Meanwhile, melt remaining 1 tablespoon butter in a small saucepan over medium heat. Add mushrooms, shallot, and garlic and saute until mushrooms are crisp-tender, about 5 minutes.
  • Whisk 1/2 cup chicken broth and flour together in a small bowl until a smooth, thin paste forms. Slowly add flour paste to the mushroom mixture, stirring to combine. This is my Grandma's recipe that she gave me when I got married. Pork chops are baked then served with a rich mushroom sauce. It takes a little bit of work, but is great for a special dinner - my husband loves it!

1 clove garlic, pressed
6 pork chops
salt and pepper to taste
1 (8 ounce) can mushrooms, drained
1 cup dry sherry
1 (10.5 ounce) can beef broth
2 tablespoons cornstarch

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Melt the butter in a large skillet over medium heat. Add garlic, and saute until fragrant. Season pork chops with salt and pepper, then fry them in the skillet just until browned on both sides, about 3 minutes per side. Remove the pork chops to a baking pan or Dutch oven.
  • Pour the mushrooms into the skillet with the pork drippings and garlic, and stir in the sherry and beef broth, scraping any bits of pork that are stuck to the pan. Bring to a boil, then pour over the pork chops in the baking pan. Cover with a lid, or aluminum foil.
  • Bake for 45 minutes in the preheated oven, then remove the lid or foil, and continue to bake for another 15 minutes. Remove the chops from the pan to a serving platter, and place the dish on the stove over medium heat. Stir together the cornstarch and water. When the juices in the pan come to a boil, slowly stir in the cornstarch mixture and cook until thickened, about 2 minutes. Spoon sauce over the chops, and serve.

Steps:

  • Season the pork chops with salt and pepper; sprinkle all over with 1 1/2 tablespoons flour. Heat 1/2 tablespoon olive oil in a large nonstick skillet over medium-high heat. Working in 2 batches, add the chops and cook until golden and just cooked through, 3 to 4 minutes per side, adding 1/2 tablespoon olive oil to the skillet between batches. Transfer the chops to a plate and keep warm.

6 oz box stuffing mix, any flavor (or 2 cups homemade stuffing)

  • Prepare stuffing mix according to box directions. Cool completely.
  • Preheat oven to 350°F.

2 (1-inch thick) bone-in pork chops (14 ounces each)
2 tablespoons olive oil, plus extra for coating pork chops
Salt and freshly ground black pepper
2 medium shallots, thinly sliced
5 ounces cremini mushrooms, sliced
1 tablespoon roughly chopped fresh Italian parsley leaves
1/2 cup white vermouth
1 tablespoon unsalted butter

Steps:

  • Heat the oven to 400 degrees F and arrange a rack in upper third.
  • Pat the pork chops dry with paper towels and put on a cutting board. Using a small paring knife, cut a 2-inch opening horizontal to the cutting board, halfway up the meat in each chop. Move the knife back and forth in a fan motion to open the interior of the pocket without significantly widening the opening. (You don't want to pierce through the meat but simply create a pocket for the stuffing.) Brush the exterior of the chops with oil, season well with salt and freshly ground black pepper, to taste, and set aside until the stuffing is ready.
  • Heat 1 tablespoon of oil in a large ovenproof frying pan over medium-high heat. When the oil shimmers, add the shallots and cook until softened. Add the mushrooms, season well with salt and freshly ground black pepper, and cook, stirring rarely, until browned, about 10 minutes. Stir in the parsley and remove to a plate to cool slightly. Wipe out the frying pan and return it to the stove over medium-high heat. Taste the stuffing and adjust the seasoning, as necessary. Stuff half of the mushroom mixture into the pocket of each chop. If the filling is falling out, secure the chops closed with toothpicks.
  • Add the remaining 1 tablespoon oil to the pan over medium heat. When the oil shimmers, arrange the stuffed chops in the pan and cook until browned, about 4 minutes. Flip the chops to the other side and transfer the pan to the oven. Bake until the pork is cooked and an instant-read thermometer, inserted into the center of the chops, registers 160 degrees F, about 12 to 15 minutes.
  • Remove the pan from the oven and set the pork aside on serving plates to rest. Return the pan to the stove over medium heat and add the vermouth. Cook, scraping the bits from the bottom of the pan with a spatula, until the alcohol smell is cooked off and is slightly reduced, about 1 minute. Remove the pan from the heat, add the butter, and let it melt. Taste the sauce and adjust the seasoning. Drizzle the sauce over the chops and serve with a gratin, mashed potatoes, or polenta, if desired.

Deliciously easy oven baked stuffed pork chops with pan gravy only looks like you slaved in the kitchen for hours.

1-2 pound pork tenderloin
4-6 cups prepared stuffing
1 cup chicken (or pork) stock
2 tablespoons cornstarch or arrowroot

Steps:

  • Preheat oven to 375 degrees.
  • Slice the pork tenderloin into 1 1/2 to 2 inch thick slices to make thick pork chops. Cut each chop about 3/4 of the way through, leaving it attached at one end.
  • Stuff each chop with prepared stuffing and place on a roasting pan.
  • Bake until pork is cooked and stuffing is hot in the middle, 20-30 minutes depending on thickness.
  • In a small saucepan, combine chicken stock and cornstarch until smooth. Pour in the juices from the cooked pork chops. Bring to a boil and cook for one minute.

1 box pork flavored stove top stuffing
season salt
pepper
1 can(s) cream of chicken soup
tsp vegetable oil

Steps:

  • 1. cook stuffing according to package directions set aside Preheat oven to 400 degrees
  • 2. pound pork chops between plastic wrap until about 1/2 thickness.
  • 3. spoon approx a tablespoon of stuffing in center of flattened pork loin. Roll and sprinkle with season salt and pepper to taste.
  • 4. heat oil in pan on medium high heat. Sear pork chops on all sides (place seam side down to start) remove from pan and place in baking dish again seam side down. To retain moisture in pork put approx 1/4 inch of water in bottom of pan and bake approx 1 hour.
  • 5. In pan with pork drippings add one can of cream of chicken soup with half a can of water. Stir until creamy add salt and pepper to taste.
  • 6. Serve on remaining stuffing with cream gravy over the top

4 pork chops, center cut, 1 1/2-inches thick
3/4 cup flour
4 tablespoons oil
3 cups chicken broth
1 cup onion, julienned
1 cup mushroom, sliced
4 tablespoons cornstarch
3 tablespoons water
salt and pepper, to taste
1/2 cup butter
1 medium onion, minced
6 slices bacon, chopped
1 stalk celery, minced
1/2 cup fresh spinach, chopped
1 medium apple, diced
2 1/2 cups chicken broth
1/2 tablespoon poultry seasoning
1/2 cup raisins (optional)
3 cups stuffing cubes
salt and pepper, to taste

Steps:

  • To prepare pork chops for stuffing, make a 2-inch-wide slit on edge of chop opposite the bone and cut into center, making a deep enough pocket to hold stuffing in the middle of each chop. Set aside.
  • To make stuffing, saute minced onions, bacon, celery, spinach and apples in butter until onions look translucent. Add chicken broth and poultry seasoning and bring to a boil. Add raisins and cook 3 minutes, or until soft. Remove from heat. Add croutons, or stuffing mix, stir, season with salt and pepper and set aside until cooled to room temperature.
  • Divide stuffing into four equal portions and stuff pork chops. Season stuffed chops with salt and pepper and dust with flour.
  • In a pan large enough to hold the 4 chops, heat oil on medium high heat and brown the chops (about 2 to 3 minutes on each side), then reduce heat to medium. Add chicken broth, julienned onions, and mushrooms. Bring to a boil, then cover with foil, or an oven-proof lid, and bake in 350ºF oven for 35 to 40 minutes. Remove pork chops when done and keep warm while making pan gravy.
  • Place pan with drippings on medium heat and skim off fat. Bring to a boil, then reduce to simmer. Thicken with cornstarch/water mixture by adding gradually until gravy reaches the consistency you like.

4 slices day old bread, trimmed of some crust, cut in 1/4-inch cubes
1/4 cup butter or 1/4 cup margarine
1/2 cup onion, finely chopped
1/2 cup celery, finely chopped
2 tablespoons parsley, chopped
1/2 cup dark raisin
1 1/2 teaspoons salt
1 teaspoon dried marjoram
1/8 teaspoon pepper
6 pork chops, 1 1/2-inch thick (each about 3/4 pound)
1/4 cup flour
1 teaspoon salt
2 tablespoons butter or 2 tablespoons margarine
1 cup white wine or 1 cup apple cider

Steps:

  • Melt 1/4 cup butter in a large skillet over medium high heat and saute the chopped onion and celery, stirring, until onion is golden, about 5 minutes. Remove skillet from heat. Gently stir in bread cubes. Add parsley, raisins, 1 1/2 teaspoons salt, marjoram and pepper; toss lightly to combine. Set aside.
  • Preheat oven to 350°F Trim excess fat from chops, reserving the fat. Using a sharp paring knife, cut a pocket in each chop, all the way to the rib. Fill each pocket with 1/4 cup stuffing; fasten together with a couple of toothpicks.
  • Mix together the 1/4 cup flour and 1 teaspoon salt. Lightly coat the pork chops on both sides with flour mixture, reserving remaining seasoned flour for gravy.
  • Heat 2 tablespoons butter and reserved pork fat in a large skillet. Over low heat, cooking 3 at a time, brown chops well on both sides, turning with tongs, 8-10 minutes on each side or until browned. Remove each batch of browned chops to paper towels.
  • Pour off fat from skillet, and add apple juice, white wine, cider or a combo of liquids to skillet. Stir over medium heat to dissolve browned bits. Pour into the bottom of roasting pan. Stand chops bone-side down in bottom of pan. Cover with foil and bake in preheated oven 1 hour.
  • Uncover and bake 30 to 40 minutes, or until tender. Remove chops to platter and tent with foil to keep warm.
  • Optional Gravy: Over medium heat boil drippings, uncovered, until reduced to 1 cup. Dissolve reserved flour mixture in 1/2 cup of water. Add to drippings and bring to a boil, stirring; simmer 3 minutes. Taste and adjust seasonings. Strain if necessary. Serve with chops.

1 tbsp butter
1.5 cups mushrooms (sliced)
1/2 yellow onion (sliced)

Steps:

  • Pat 4 pork chops (bone-in or boneless) dry and season generously with salt and pepper on both sides.
  • Heat 1 Tablespoon olive oil and 1 Tablespoon butter in a large skillet over medium-high heat. When the butter melts, add the pork chops and sear for 5 minutes on each side (less for boneless). Remove from the pan and set aside.

1/2 teaspoon smoked paprika
1/2 teaspoon sage

  • Sprinkle the pork chops with 1/2 teaspoon salt and 1/2 teaspoon pepper covering all sides then set aside for 30-minutes;
  • While the pork chops are resting, in a small bowl, mix together the seasoning blend including flour, chili powder, garlic powder, onion powder, paprika, sage, marjoram, black pepper, and salt;
  • After 30-minutes, pat the pork chops off and then dredge in the seasoning blend until coated well on all sides;
  • In a large skillet, heat the olive oil until hot and then place the pork chops into the ban with at least 1" between each chop;
  • Cook the pork chops on medium-high heat for 2-3 minutes until golden brown, then turn;
  • Reduce the heat to low and cover the skillet with a lid then simmer for 5-6 minutes for thin chops and 8-10 minutes for thicker chops (cook to 145°F or until juices run clear)
  • Remove the pork chops from the skillet and set aside (cover to hold heat);
  • Now, add the chicken broth and vinegar to the skillet and use a wooden spoon to break up any fond (bits of food) on the bottom of the skillet;
  • Stir in the honey then simmer until reduced by half;
  • When reduced, add in the butter and stir until melted;
  • Remove the skillet from the heat, add the pork chops back into the sauce, and spoon the gravy over them;
  • Let the chops rest for another 1-2 minutes in the pan gravy before serving with sauce over the top and a sprinkle of fresh parsley.

1/2 soup can water

  • Preheat oven to 375.

Steps:

  • Prepare stove top stuffing according to directions.
  • Season pork chops lightly with salt and black pepper. Add the chops to the frying pan and cook for 4-5 minutes on each side. A minute before chops are done, add garlic to the pan.

4 center cut pork chops, 1 1/2-inches thick
3/4 c flour
4 Tbsp oil
3 c chicken broth
1 c onions, julienned
1 c mushrooms, sliced
4 Tbsp cornstarch
3 Tbsp water
salt and pepper, to taste
STUFFING:
1/2 c butter
1 medium onion, minced
6 slice bacon, chopped
1 stalk(s) celery, minced
1/2 c fresh spinach, chopped
1 medium apple, diced
2 1/2 c chicken broth
1/2 Tbsp poultry seasoning
1/2 c raisins, optional (but really good!)
3 c stuffing cubes
salt and pepper, to taste

Steps:

  • 1. To prepare pork chops for stuffing, make a 2-inch-wide slit on edge of chop opposite the bone and cut into center, making a deep enough pocket to hold stuffing in the middle of each chop. Set aside.
  • 2. To make stuffing, saute minced onions, bacon, celery, spinach and apples in butter until onions look translucent. Add chicken broth and poultry seasoning and bring to a boil. Add raisins and cook 3 minutes, or until soft. Remove from heat. Add croutons, or stuffing mix, stir, season with salt and pepper and set aside until cooled to room temperature.
  • 3. Divide stuffing into four equal portions and stuff pork chops. Season stuffed chops with salt and pepper and dust with flour.
  • 4. In a pan large enough to hold the 4 chops, heat oil on medium high heat and brown the chops (about 2 to 3 minutes on each side), then reduce heat to medium. Add chicken broth, julienned onions, and mushrooms. Bring to a boil, then cover with foil, or an oven-proof lid, and bake in 350ºF oven for 35 to 40 minutes. Remove pork chops when done and keep warm while making pan gravy.
  • 5. Place pan with drippings on medium heat and skim off fat. Bring to a boil, then reduce to simmer. Thicken with cornstarch/water mixture by adding gradually until gravy reaches the consistency you like.

I came up with this recipe because mom likes "soup food", and I get bored with it. Opened the cupboard and fridge and thought blue cheese and nutmeg sounded like they might work together. It sounds weird, but it tastes really good! The blue cheese adds just a little bit of tanginess to contrast with the sweetness from the nutmeg and garam masla (I used a store bought blend from McCormick - how authentic, who knows, but it tastes good!). I also used a cast iron skillet, which browns the meat very well.

1 can cream of mushroom soup
1 jar of baby white pearl onion
1/2 pint sliced fresh mushrooms
3 tablespoons crumbled blue cheese

1 tablespoon onion powder

Steps:

  • Slice mushrooms.

  • Stir well, scraping the fond (little brown bits) off the bottom of the pan.
  • Stir in the cooked mushrooms and blue cheese.
  • Continue stirring until the cheese in melted and thoroughly incorporated.
  • Add chops back to pan and simmer in sauce for 20 minutes.
  • Serve with noodles or rice and a vegetable.
