- Preheat oven to 350°.
- In a medium bowl, combine ground beef, Worcestershire sauce, yellow mustard and garlic. Season with salt and pepper and stir until fully combined. Form into small patties (approximately the size of your mushrooms).
- In a large bowl, toss mushroom caps with oil and season with salt. On a parchment lined baking sheet, place the mushrooms stem side up.
- Place your tiny burgers in the wells of the mushroom caps and bake for 20 minutes. Take the baking sheet out of the oven and place slices of cheddar on burgers. Return to the oven and bake for 10 minutes more.
- Garnish with a slice of tomato and a pickle chip. Serve.

- In a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Cook and stir mushrooms, onion and peppers in bacon drippings until tender. Using slotted spoon, remove to a small bowl; cool completely. - Line a plate with two paper towels. Place two small portobello mushroom caps on the paper towels, then cover with two more paper towels. Top with another plate.
- Meanwhile, in a small bowl, mix together mayonnaise, ketchup, worcestershire sauce, garlic salt, and hot chili sauce.
- Place a slice of Swiss cheese down on a counter top, then place a slice of American cheese on top, folding the corners of the American cheese in towards the center. Do the same with Swiss cheese, forming a ball shape.
- Place the cheese ball on one mushroom cap and then sandwich the other on top of it, pressing down to make the mushroom edges touch. Take a piece of clear plastic wrap and wrap it around the mushroom burger, twisting the sides like a piece of candy to release all of the air. Tuck the plastic wrap under the mushroom and refrigerate for 10-15 minutes.
- Put the egg, flour, and bread crumbs into 3 separate bowls.
- Remove plastic and coat mushroom burger in flour, egg, then bread crumbs. Dip in egg wash and bread crumbs one more time.
- Heat vegetable oil in a large pan until it is 375ºF (190ºC) and fry mushroom burger for 1-2 minutes or until golden brown.
- Remove burger onto paper towel to drain excess oil and let cool 1-2 minutes.
- Assemble burger, spread special sauce on buns.

- In a medium bowl, gently mix together the beef, soy sauce, 3/4 tsp of the pepper, 1/2 tsp of the salt.
- Using generous 1/3 cup per patty, shape mixture into 8 (4 1/2-inch) patties 3/8 inch thick.
- Refrigerate while preparing the stuffing.
- Heat a large nonstick skillet over medium high heat until hot.
- Add the butter and oil.
- Heat until hot and butter is melted.
- Add the mushrooms and cook for 2 min, stirring occasionally.
- Add the garlic and cook for 8-10 min or until the mushrooms are browned and the liquid has evaporated.
- Stir in the green onions, Worcestershire sauce, remaining 1/2 tsp pepper and remaining 1/4 tsp salt.
- Let cool.
- Mound about 1/2 cup of the stuffing in the center of 4 of the patties.
- Cover with the remaining 4 patties, sealing the edges firmly by pressing together with your fingers.
- Gently press the center of the burgers to eliminate mounding.
- Heat the grill or grill pan to medium heat.
- Grill for 5-6 minute.
- Flip the burgers and grill for 5-6 min more, or until no longer pink in the center.
- Top each burger with 1 slice of cheese, and grill for another min or so - until the cheese has melted.
- Meanwhile, in a small bowl, whisk together all of the mayonnaise ingredients.
- Place the buns on the grill, split side down, and grill for 30-60 sec or until lightly toasted.
- Spread each bun with 2 Tbs of the mayonnaise.
- Top with a burger and a tomato slice.
STUFFED CHEESY PORTOBELLO BURGERS

- In a large skillet, melt the butter over medium heat. Add the onions and cook just until translucent, about 5 minutes. Add the brown sugar and balsamic vinegar, cover and continue cooking, stirring occasionally, until the onions are caramelized, 20 to 25 minutes.
- Meanwhile, heat a grill, grill pan or cast-iron skillet over medium-high heat. Brush the tops of the portobello mushrooms with olive oil and season liberally with salt and pepper. Cook the mushrooms, stem side down, 5 to 7 minutes. Flip and continue cooking another 5 minutes. Remove to a work surface.
- Fold the shredded cheeses into the caramelized onions just before building the burger. Carefully spoon the caramelized onions and melted cheese into the mushroom caps.
- Build the burger by placing each stuffed mushroom on the bun bottoms. Top with the tomatoes and arugula. Smear the top buns with the Roasted Garlic Aioli and place on top of the other ingredients. Serve immediately.
- Preheat the oven to 400 degrees F.
- Slice off the top of the garlic head. Drizzle the cut side with the olive oil and sprinkle with salt and pepper. Wrap in foil and bake until tender and fragrant, 35 to 40 minutes. Allow to cool.
- Remove the garlic cloves from their skins and add to a food processor along with the mayonnaise, lemon juice and a pinch of salt and pepper. Pulse until pureed. Season and store in an airtight container in the refrigerator until ready to use.

- Clean gills from mushrooms. Combine goat cheese, thyme, 1 teaspoon lemon juice mix well. Stuff seasoned goat cheese into mushroom cavity. Grill stuffed mushrooms 10 to 15 minutes, add lemons and bread to the grill. Combine garlic, mayonnaise and remaining 1 teaspoon lemon juice for aioli. Spread aioli generously onto bun. Add arugula, grilled mushroom and grilled lemons to burger.
SWISS MUSHROOM BURGERS

- Preheat the broiler and line the bottom of a broiler pan with foil. Lightly mix the beef with 1 teaspoon salt and 1/2 teaspoon pepper in a large bowl. Gently form into 4 patties, about 3/4 inch thick. Arrange on the prepared pan and brush both sides with olive oil. Broil until browned, about 4 minutes per side for medium rare.
- Meanwhile, heat 2 teaspoons olive oil in a large skillet over medium-high heat. Add the onion and cook, stirring, 2 minutes. Add the mushrooms and cook 2 more minutes. Add the Worcestershire sauce and cook until the vegetables are tender, about 2 more minutes. Season with salt and pepper and remove from the heat. Combine the ketchup and mustard in a small bowl and set aside.
- Top each patty with one-quarter of the mushroom mixture and 1 slice cheese. Return to the broiler to melt the cheese, about 1 minute.
- Spread the buns with the ketchup mixture; sandwich with the patties and some lettuce. Serve with chips and/or pickles.
MUSHROOM STUFFED GRILLED PORK BURGERS
These are wonderful grilled, of course you may season the ground pork to suit your taste, but I find if you are grilling the pork burgers, that they are better mixed with just the bare basics such as salt and pepper, Worcestershire sauce and mustard (if using) as the middle filling has a lot of flavor. I just stated the basics LOL! The filling alone, can be prepared up to a day ahead, also the pork burgers can be stuffed a day ahead, covered an refrigerated until ready to grill. This recipe produces a lot of pork patties (around 12-14) I most always prepare/stuff the patties and freeze half for next time, unless that is, you are feeding a gang of hungry people! I have used half ground pork and half ground beef for this also.

- In a skillet, saute the mushrooms, onion and garlic until tender in butter (about 2-3 minutes); set aside to cool.

- Preheat oven to 425°F. Line a baking sheet with parchment. Brush both sides of mushrooms with olive oil; season with salt and pepper.
