HOT MINCEMEAT PANCAKES
My hubby is a mincemeat fan, so when I was looking through my "Better Homes and Gardens" cookbook and I came across a recipe for mince pancakes that looked good, I decided to give it a try, with a few changes that were more to my liking. The pancakes are wonderful, the recipe is easy to prepare, and the mincemeat does not come across as a strong flavor. Even those who aren't mincemeat fans can enjoy these very different pancakes.

Steps:
- In a mixing bowl stir together flour and baking powder.
- In a small bowl combine egg, milk, and oil using a fork or whisk.
- Stir egg mixture into flour mixture just until combined.
- Gently fold in mincemeat.
- While griddle or frying pan heats up prepare hard sauce.
- In a small bowl beat butter with an electric mixer for 30 seconds.
- Gradually add half the powdered sugar, beating to combine.
- Add the orange zest and juice, beat to combine.
- Gradually add the remaining powdered sugar and beat until light and fluffy.
- For each pancake, pour about 1/4 cup of the batter onto hot griddle.
- Cook over medium heat 1 to 2 minutes on each side or until pancakes are golden brown, turning to cook second sides when pancakes have bubbly surfaces and slightly dry edges.
- Serve immediately with hard sauce.

DELICIOUS STUFFED POTATO PANCAKES
Very yummy potato pancakes with ground beef inside. So good! My hubby, who doesn't like potato pancakes, loved this! You can change it up the way you like. Serve with sour cream. These are even good next day!

Steps:
- Mix together the potatoes, flour, baking powder, 3 eggs, and salt and pepper in a bowl. In another bowl, mix the ground beef, onion, garlic salt, 1 egg, and bread crumbs until well-combined.
- Heat the oil in a skillet over medium-low heat, and drop a rounded tablespoon of potato mixture into the hot skillet. Spread and flatten the pancake out a little, and place about 2 teaspoons of beef mixture on the pancake, spreading the filling out almost to the edges of the pancake. Drop another rounded tablespoon of potato mixture on top of the beef, and spread it out to completely cover the beef. Fry until the bottom of the pancake is golden brown, about 5 minutes, then flip and fry the other side until golden, 1 to 2 more minutes.

- Heat a large skillet over medium/high heat. Add 1-2 Tbsp olive oil and 1 lb ground meat. Saute, breaking it up until cooked through then season with 1 tsp salt and a pinch of pepper. Remove to a separate dish.
- In the same skillet, add 2 Tbsp oil then add onions and carrots. Stir and saute over medium heat for 5 min until golden and softened. Season lightly with salt and pepper. Return meat with juices to the pan.
- Press in 1 garlic clove and add chopped parsley. Cook stirring 1 minute or until fragrant. Remove from heat.
- Mash or stir together 6 cups mashed potatoes with 1 egg and 1 cup flour. Place a rounded ice cream scoop of mixture into a well-floured hand and pat it into a disk. If potatoes seem too sticky, sprinkle with a little flour to keep it from sticking to your hand.
