ITALIAN STUFFED JALAPENOS
Steps:
- Preheat oven to 350 degrees F and set a rack in the middle of the oven.
- Place jalapenos on a sheet tray and roast for 10 minutes. Remove from the oven and let cool. Turn broiler on medium.
- Heat the oil in a medium saute pan. Add the sausage and cook for 5 to 7 minutes. Add the onions, peppers, and garlic and cook to soften for about 5 minutes. Remove and place in a large bowl. Cool to room temperature, then add mascarpone, and Parmesan. Mix ingredients thoroughly and season with salt and pepper.
- Place approximately 1 tablespoon of mixture into each jalapeno half, and top with 1/2 teaspoon of mozzarella cheese.
- Place the sheet tray of stuffed peppers in oven and broil until mozzarella cheese melts.

STUFFED JALAPENOS
A friend of mine taught me how to make these peppers a few years ago. My husband loves these peppers! He can't BBQ without throwing some of these on the grill first, so he has something to snack on while he BBQ's.

Steps:
- Soak 10 toothpicks in a small bowl of water (Soaking the toothpicks in water help prevent them from burning over the flame).
- Wash peppers.
- Make one slice on each pepper, from stem to tip.
- Seed each pepper, rinse, and pat dry.
- Stuff each pepper with a spoonful of cream cheese.
- Wrap each pepper with a 1/2 strip of bacon and secure with a wet toothpick.
- Grill for a few minutes on each side until bacon is crisp.

STUFFED JALAPENOS
A relatively easy stuffed jalapeno recipe. What's different is that the jalapenos are stuffed with bacon, but not completely wrapped in it. All of us like bacon, but wrapping the pepper in bacon has a few drawbacks: 1) You won't really taste anything besides the bacon, and 2) the bacon will probably be undercooked when the pepper is ready. This lets all the ingredients. Finally, you could certainly add a lot of different things to the pepper stuffing, but I wanted to keep the recipe simple.

Steps:
- Brown up the bacon in a skillet until it reaches the desired level of crispness. Set aside and let cool.
- Cut each jalapeno in half. I would suggest using a teaspoon to scrape out the seeds and veins. The idea is not to make this a super spicy recipe, but one that a majority of people will enjoy and where the flavors meld together.
- Use a spoon to fill each jalapeno half with some cream cheese. Do not overfill the pepper.
- Finely crumble the bacon and mix with the shredded cheese.
- Mound the cheese/bacon mixture on each pepper.
- Grill over medium heat until the pepper has softened and the cheese melted. You can also smoke the peppers if you desire.
- Optional: Melt some butter, toss with the panko bread crumbs, and bake at 350 degrees until the panko is golden brown. Top each pepper before grillingwith some panko breadcrumbs for a crispy topping.

MEXICAN STUFFED JALAPENOS
We love stuffed jalapenos and this is one that I played around with until I came up with this. These are always gone as soon as they come out of oven or off the grill

- Cut the top off the jalapeno and deseed the pepper. Mix the ingrediants (all except little smokies) Place some of the mixture in the bottom of the jalapeno and then take 1/2 of the little smokey and put in the jalapeno then finish with rest of mixture. Place bacon on top of jalapeno holding with a toothpick. Cook until bacon no longer looks raw. You can cook these in the oven or on the grill. I use a jalapeno stand.

Steps:
- cut a slit in each jalapeno pepper so that you can open it up. Remove the entire contents of the inside of the pepper. Leaving some of the placenta and seeds will result in a hotter pepper, so how much you clean on the inside is totally up to your taste. I recommend using disposable latex gloves while doing this, because failure to do so may result in unintended pains later -- particularly if you are a male :).
- Preheat oven to 375 degrees.
- Soften the cream cheese in the microwave for about 20 seconds.
- Place the cream cheese in a bowl.
- Add the ranch dressing powder and the grated cheese to the bowl with the cream cheese. MIx well.
- Fill the jalapenos with the creame/ranch/cheese mixture.
- Trim any excess fat from the bacon, preferably with kitchen scissors.
- Wrap all of the peppers with the bacon.
- Cook at 375 degrees for about 40 minutes. Keep an eye on them, because depending on the fat in the bacon, thickness of the bacon and so on, your time will vary. This can also be put on a grill -- it will take far less time but will demand your constant attention.
- Enjoy the best stuffed jalapeños you have ever had.

- Preheat the oven to 375°. Using the flat side of a chef’s knife, crush the garlic and 1/2 teaspoon of salt to a paste. Scrape the garlic paste into a medium bowl and add the cream cheese, scallions, egg yolk, cumin, mustard and 1/3 cup of cilantro. Stir with a rubber spatula until well combined. Season with a generous pinch each of salt and pepper, then fold the cheddar into the filling.
- On a rimmed baking sheet, toss the jalapeños with the olive oil and a pinch each of salt and pepper until well coated. Arrange them cut side up and spoon 1 1/2 to 2 tablespoons of filling into each one. Bake for about 20 minutes, rotating the sheet from front to back halfway through, until the filling is puffed and bubbling and the jalapeños are tender. Garnish with minced cilantro and serve with lime wedges.
