Forget take-away! This stuffed crust pizza is surprisingly easy to make and tastes amazing! Shredded chicken, a chipotle spiked tomato sauce, yellow pepper and red onion all make perfect toppings for the ultimate pizza.

250 g Strong White Bread Flour
1 tsp Salt
1/2 7g sachet Fast Action Yeast
1 tsp Golden Caster Sugar
170 ml Warm Water
3 tbsp Olive Oil
1 Onion (chopped)
3 Cloves Garlic (crushed)
1 400g tin Chopped Tomatoes
3 tbsp Tomato Puree
2 tbsp Chipotle Paste
100 g Cooked Chicken (shredded)
1 Yellow Pepper (sliced)
1 small Red Onion (sliced)
150 g Mozzarella (cut into strips (for stuffed crust))
100 g Mozzarella (sliced (for topping))

Steps:

  • Make the dough. Mix the flour, yeast and salt together in a large bowl. Mix together the sugar and warm water then make a well in the centre of the dry ingredients. Pour the sugar and water into the well. Gradually mix the wet and dry ingredients together and then turn out onto a floured work surface. Knead for 10 minutes. Flour the outside of the ball of dough then place in an oiled bowl. At this stage you can either prove for about 15 minutes somewhere warm or put it into the fridge until you're ready to use.
  • Preheat the oven to 200° C. Make the sauce. Heat the olive oil over a medium heat. Add the onion, garlic, plenty of salt and 40ml of water. Once the water has evaporated pour in the tin of tomatoes and cook down until it's almost dry. Mix in the tomato puree and chipotle paste and leave to cook a little more until it has a thick consistency. Tip out onto a plate and allow to cool.
  • Split the dough in half and roll each ball of dough out into a circle. Place on trays and spread the strips of mozzarella around the outer edge of the pizza making sure to leave a little gap at the edge. Carefully fold the dough over the cheese and tuck in tightly pressing to seal. Repeat with the second pizza.
  • Spread the sauce around the middle of each pizza and split all the toppings between the two pizzas. Bake for 15 minutes until all the cheese is melted.

1 (11 ounce) can refrigerated thin pizza crust
1 cup mild thick & chunky salsa
1/2-1 chipotle chile in adobo, finely chopped
1 (5 ounce) package cooked chicken breast strips (southwestern style)
1/4 cup chopped onion
1/2 cup chopped red bell pepper
1/2 cup chopped green bell pepper
1 1/2 cups shredded Mexican blend cheese

Steps:

  • Heat oven to 400 degrees. Spray or grease a 15 X 10 inch or larger dark or nonstick cookie sheet. Unroll dough on cookie sheet; starting at center, press dow into a 15 X 10 inch rectangle.
  • In small bowl, mix salsa and chipotle chile, spread to within 1/2 inch of edges of dough.
  • Top with chicken strips, onion, and peppers. Sprinkle with cheese.
  • Bake 10 to 12 minutes or until crust is golden brown and cheese is melted.

2 cups shredded pepper Jack cheese (8 oz)
1/2 cup hot water
1/3 cup chipotle ranch dressing
5 tablespoons chopped fresh cilantro
1 1/2 cups shredded deli rotisserie chicken
1 cup chopped tomato

Steps:

  • Heat oven to 400°F. Spray 12-inch pizza pan with cooking spray.
  • In medium bowl, stir Bisquick™ mix, 3/4 cup of the cheese and the hot water with spoon until soft dough forms. Press dough evenly in pizza pan.
  • Bake 8 minutes. Spread dressing evenly over partially baked crust. Sprinkle 4 tablespoons of the cilantro and 3/4 cup of the cheese on dressing. Top with chicken, tomato and remaining 1/2 cup of the cheese.
  • Bake 8 to 10 minutes or until edges of crust are golden brown. Sprinkle with remaining fresh cilantro.

1 (13 7/8 ounce) package of refrigerated pizza dough
1 (14 ounce) jar pizza sauce
12 count crystal farms mozzarella string cheese
4 cups of mozzarella shredded cheese
1/2-1 lb sausage
1 (70 count) package pepperoni
1 (2 1/4 ounce) can sliced olives
1/2 green bell pepper
1 tablespoon chopped onion
1 tablespoon butter
1 teaspoon garlic

Steps:

  • Fry up your sausage until cooked. Drain it (really really greasy!).
  • Chop your olives, onion and pepper.
  • Cover your pan with tinfoil, spray it/grease it. Pop open your tube of dough and lay it out in the pan (13x9in). Smooth it out so all edges are touching the sides.
  • Grab your string cheese and start laying them around the edges (3 wide for long ways in the pan, 2 for the short). Roll dough over string cheeses, smooth together edges to prevent cheese from gooshing out.
  • Bake for 8 minutes in a 425F oven.
  • While that bakes, put 1tbsp butter in a microwave safe bowl and 1tsp garlic, melt in microwave.
  • Remove your dough when the time is up and brush your dough with the melted butter.
  • Add your toppings! Add cheese, LOTS and LOTS of cheese.
  • Put back in oven to bake more for about 6 to 8 more minutes. Remove from oven, let cool for a bit, slice and ENJOY!

12 rhodes dinner rolls or 1 loaf rhodes bread dough, thawed & risen
5 sticks mozzarella string cheese
1/2 cup pizza sauce
favorite pizza toppings

Steps:

  • Spray counter lightly with non-stick cooking spray. Roll combined rolls or loaf into a 16-inch circle. Cover with plastic wrap and let rest 10-15 minutes.
  • Remove wrap and place on a 14-inch sprayed pizza pan (edges will overlap pan). Cut each string cheese in half and arrange, 1-inch in around the edge of the dough circle. Bring the edge of the dough over the cheese and press to seal it inside. Continue this around the entire circle. Press seams a second time to make sure they are fully sealed.
  • Top with sauce and your favorite pizza toppings. Bake at 400°F 10-20 minutes or until crust is golden brown.
