SAVORY STUFFED CELERY BITES

Steps:
- Coarsely chop the olives. Separate and wash celery stalks. Cut stalks into bite sized pieces.
- Mix the cream cheese and sour cream together. Stir in the walnuts and chopped olives. Spread filling onto the celery pieces. It's also good on crackers.

STUFFED CELERY BITES
This is from Easy Everyday Low Carb. Spread the cream cheese before cutting into bites. This can be made 4 hours in advance. Add nuts just before serving.

Steps:
- Lightly coat a skillet with cooking spray. Add pine nuts and garlic.
- Cook over medium heat for 3-5 minutes or until nuts are golden brown; set aside.
- Remove tops and wide base from celery.
- Using a vegetable peeler, remove two thin strips from the rounded side of the celery, creating a flat surface.
- In a small bowl combine the cream cheese and the shredded cheese.
- Spread or spoon cheese mixture into celery.
- Cut each filled stalk into 2 inch pieces.
- Sprinkle half the pieces with the pine nut mixture and half with the sunflower seeds.

CHEDDAR-STUFFED CELERY
I can't believe that there isn't a recipe like this already posted but I searched 7 pages and could not find one. It is simple and tasty. Lovely on an appetizer tray or on your salad plate. I like to use McLaren's Imperial but any nice nippy cheddar will do. I use Lite Mayo

- Cut each filled stalk of celery into 2-inch pieces.
