4 small acorn squash, 1 to 1 1/4 pounds each
2 tablespoons unsalted butter, cut into 4 pieces
1/2 pound ground pork
1 tablespoon olive oil
1/4 cup chopped onion
1/4 cup chopped celery
1/4 cup chopped carrot
1/2 cup white wine
1 1/2 cups cooked rice
1 (10-ounce) package frozen spinach, completely thawed, drained and chopped
1/2 cup toasted pine nuts
1 1/2 teaspoons dried oregano
Generous pinch kosher salt
Freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • Cut 1-inch off the top of each acorn squash and scoop out the seeds. If necessary in order for the squash to sit upright, cut off a small portion of the bottom. Put 1 of the 4 pieces of butter in the cavity of each squash. Set squash on a sheet pan lined with parchment paper. Set aside.
  • In a large saute pan over medium heat, brown the ground pork until no longer pink. Remove the meat from the pan, add the olive oil and saute the onion, celery, and carrot until they begin to soften, approximately 7 to 10 minutes. Deglaze the pan with the white wine.
  • Return the pork to the pan along with the cooked rice, spinach, pine nuts, oregano and salt and pepper, to taste. Stirring constantly, heat mixture thoroughly, approximately 2 to 3 minutes. Remove from the heat. Divide the mixture evenly among the squash, top each squash with its lid and bake for 1 hour or until the squash is tender. Serve immediately.

1 Banana Squash (or a few smaller squash of your choice), halved, seeded, and ends chopped
3-4 Tbl olive oil
3 c. cooked quinoa (I cooked mine in veggie broth)
juice of 1 lemon (add a little zest for extra flavor)
2 apples, cored and chopped
3 stalks celery, diced
1 onion, diced
1 c. pecans (thinking of toasting these in the skillet for a few minutes next time so they maintain more crispiness)
1 c. raisins
Sage, 1 Tbl. fresh or 1 tsp. dried
sea salt and pepper to taste
optional veggie cheese of choice to sprinkle on right before serving

Steps:

  • Preheat oven to 375 degrees. Rub 1-2 Tbl olive oil onto flesh of halved squash. Rub in salt and pepper (to taste). Lay flesh down on baking sheet and bake for 45 minutes (30 for smaller squash.) While it bakes, add 2 Tbl. olive oil, onion and celery to skillet. Cook until softened and shimmery. Add sea salt and pepper to taste. In a large bowl toss apple with lemon juice. Add quinoa, pecans, raisins, sage and sauteed celery and onions. Pull the squash out of the oven, flip over and fill with quinoa stuffing. Cover with foil and bake for another 30-45 minutes, or until flesh is soft in the center.

If you are not familiar with banana squash, this is a great 'first-timer' recipe to try. Cubed squash is simmered, then glazed in a simple citrus sauce. It is basically foolproof and everyone will love it! Even my kids ate it up. This serves well with chicken, pork and fish.

1 ½ pounds banana squash, peeled and cubed
¼ cup butter
2 tablespoons water, or as needed
1 tablespoon orange juice
3 tablespoons apricot preserves
⅛ teaspoon ground cloves
¼ teaspoon salt
1 pinch ground black pepper

Steps:

  • Melt butter in a large skillet over medium heat. Add squash cubes and water. Cover, and cook for about 5 minutes, or until squash is tender. Stir occasionally, and add more water if necessary to prevent squash from sticking to the pan.
  • Reduce heat to low, and stir in the orange juice, apricot preserves, cloves, salt and pepper. Cook and stir uncovered until squash is evenly glazed.

1 ripe acorn squash
1 ripe banana
cinnamon
sugar
brown sugar
nutmeg
2 drops vanilla extract
butter substitute, if desired

Steps:

  • Preheat oven to 350F degrees.
  • Cut the acorn squash in half.
  • perpendicular to the lines.
  • Scoop out the sides and hack off the stem so that each half stands like a bowl.
  • Combine spices with mashed banana and add vanilla.
  • Add butter substitute if desired.
  • Fill each bowl with mixture and smear on sides.
  • Sprinkle more spices over the top.
  • Place in baking dish with a little water in the bottom.
  • Bake 45 minutes or until tender.
