STUBB'S BARBECUED BLUE CHEESE BURGERS

Which brings us to a recent mash-up we did with barbecue and burgers. The two are related, of course, but involve different live fire cooking techniques. Burgers call for high heat, barbecue, low; barbecue cooks away from the heat for a long time, burgers sizzle directly over the fire. This burger combines the best of both. To make a barbecue burger, you sprinkle burgers with Stubb's Bar-B-Q Spice Rub. Leave it on long enough for the rub to partially penetrate the meat-a half hour or so will do it. During that time, build your fire, adding hickory chips or chunks (or those of your favorite hardwood) to impart a smoke flavor to the fire. And because barbecue is all about building layers of flavor, stuff slices of blue cheese into the center of each burger, then pile bacon, grilled onions, lettuce, tomato, and avocado onto the butter-grilled bun. - Step 1: Line a rimmed baking sheet with plastic wrap. Divide the ground beef into 8 equal balls. Run your hands under cold running, then form the balls into flat patties slightly larger than the diameter of the buns, placing them on the prepared baking sheet. (Use a light touch and avoid over-handling the meat.) ShareTweetPin37 Shares Step 2: Divide the blue cheese equally between 4 patties, leaving a margin on each patty of 1/2 inch. Top with the remaining patties, and using your fingertips, seal the edges so the cheese doesn't leak out during grilling. ShareTweetPin37 Shares Step 3: Generously season both sides of each burger with Stubb's Beef or Bar-B-Q Spice Rub. Cover with plastic wrap and refrigerate for 30 minutes to 1 hour. ShareTweetPin37 Shares Step 5: Set up the grill for direct grilling and preheat to high. Brush and oil the grill grate. Grill the bacon, onion, and burgers until browned on both sides and cooked through (the internal temperature of the burgers should be 160 degrees), 3 to 6 minutes per side. STUFFED BLUE BURGERS

- Mix meat, Worcestershire sauce, salt, garlic powder, pepper, minced onion, oregano (if using), and basil (if using).
- Shape the meat mixture into 12 thin patties, each about 4 inches in diameter.
- Mix the cream cheese and the blue cheese.
- Top 6 patties with the cheese mixture, spreading it to within 1/2-inch of the edge (if the mixture is difficult to spread, try heating in the microwave for about 15 seconds).
- Press the mushrooms into the cheese.
- Cover each patty with one of the remaining 6 patties, sealing the edges well.
- Broil or grill the patties (4-inches from the heat), turning only once if possible, until preferred doneness and cheese is melted, about 10 to 15 minutes.
- Low-carb serving: top with a bit of grated Swiss cheese and enjoy!
- High-carb serving: eat with a bun and other condiments.
- To make it extra-special, top each with a couple strips of crispy bacon.
GOURMET BLEU CHEESE BURGERS

- Mix ground beef with gourmet sauce, salt, and pepper.
- Form into four patties.
- Divide each patty through the center and flatten.
- Make four double-decker patties by placing 1 ounce of bleu cheese on one patty and covering with second patty.
- Pinch edges to seal cheese inside.
- Grill or pan fry to desired doneness.

BARBECUE AND BLUE CHEESE BISON BURGER
This burger is super lean and healthy but not lax on flavor.. If you haven't tried buffalo this is a great place to start. I use my recipe for Cholestoral free mayo in this recipe

- Sauté the onions in the olive oil over medium-high heat until translucent. Turn off the heat and let it cool.
- 2 When the onions are cool enough to touch, use your (clean) hands to gently mix them in with the bison burger meat, and add everything else. Do not overwork the meat, it will result in a tough burger. Just gently fold it until the onions, sage, salt and pepper are well mixed inches.
- 3 Form patties with the meat, using about 1/4 to 1/3 of a pound of meat per patty. Here's a tip on making the patty: if you press a slight indentation in the center of each patty it will help keep the burgers in a nice disk shape when cooking. Otherwise the burger will start to get a little egg-shaped as the edges contract from cooking.
- 4 Grill or fry the burgers on medium heat, about 6-7 minutes per side, less or more depending on the thickness of the burger and the heat of the pan/grill, or until the internal temperature is 140°F for medium rare, or 160°F for well done. A note on internal temperature. If you are getting the ground meat from a source you trust (we got ours from Whole Foods) that does their own grinding on site, or you grind your own meat, you can safely cook the burgers rare or medium rare. Otherwise you'll want to cook the burgers until well done. Don't press on your burgers while cooking, and keep the flipping to a minimum. Let the burgers rest about 5 minutes before serving.
- Spread butter on each bun and place in in a hot skillet butter side down for a couple seconds until toasted.
- Mix bleu cheese in mayo and spread on bun.
- add barbecue sauce, lettuce and tomato.

- Mix the bison meat with the minced garlic and add the butter a dash of Worcestershire sauce (bison meat is lean so the butter adds fat= moisture). Form the meat into 8 burgers. With your thumb, create an indentation in the middle of the burger- this will help the burger cook evenly. Coat each burger with approximately ½-1tsp.
- Next, prepare your grill for medium heat, 350 degrees- creating a direct and indirect zone (coals on one side).While the grill is heating up, slice the onion into thin slices. Take 2 large pieces of foil as a double layer and create a “hobo packet” where you create a packet that is sealed on all sides that will cook the onions on the grill. Before sealing the foil packet, add the sliced onions, 1 tbsp. of cider vinegar and ½ cup of BBQ Sauce.
- First, oil your grill grates so your meat does not stick, then place your burgers and the hobo packet on direct heat. If your burgers are cooking too quickly you can put them indirect so they continue to cook without getting burned. Cook until the internal temperate reads 140 degrees for medium burgers, (I recommend using an internal read thermometer such as the Thermapen) flipping halfway through. When the burgers are getting almost done, add the cheese to the burgers.
- Next, place the sliced buns on the indirect side and let them toast on the grill for a few minutes. Pull off the hobo packet at this point.
