We used a marbled, tender piece of ribeye as the star of this comfort food classic. Two kinds of mushrooms are cooked until crispy to add an extra element of flavor. The whole dish is brought together with a rich, tangy sauce made with sour cream and Dijon and served over egg noodles.

1 pound ribeye steak, trimmed of excess fat and cut into 2-by-1/2-inch strips
Kosher salt and freshly ground black pepper
2 tablespoons vegetable oil
5 tablespoons unsalted butter
1 medium yellow onion, sliced
8 ounces white button mushrooms, quartered
7 ounces shiitakes, caps sliced (stems removed and discarded)
1 tablespoon chopped fresh thyme
1 clove garlic, minced
1/2 cup dry white wine
2 tablespoons all-purpose flour
3/4 cup sour cream
1 tablespoon Dijon mustard
1 tablespoon Worcestershire sauce
1 1/2 cups beef broth or beef stock
10 ounces medium or wide egg noodles
1/2 cup fresh flat-leaf parsley leaves, chopped
1 tablespoon chopped chives, plus more for serving

Steps:

  • Bring a large pot of salted water to a boil.
  • Season the beef with 1 teaspoon salt and a generous amount of freshly ground black pepper. Heat the vegetable oil in a large skillet over medium-high heat. Add the beef and cook, untouched, until starting to turn brown in some spots, about 1 minute. Use tongs to flip the pieces and continue cooking until deep golden brown but still undercooked in the center, about 1 minute (the beef will finish cooking in the sauce). Transfer the beef to a bowl and return the skillet to the stovetop on medium-high.
  • Add 1 tablespoon butter to the skillet. Add the onion and 1/2 teaspoon salt and cook, stirring occasionally to scrape up the browned bits in the pan, until the onions are softened, 4 to 5 minutes. Add 2 tablespoons butter, the button mushrooms, shiitakes and thyme and cook, stirring occasionally scraping up any browned bits, until the mushrooms have released some liquid and are starting to crisp up, 5 to 6 minutes. Stir in the garlic and cook until fragrant, about 1 minute. Pour in the wine and bring to a boil. Reduce the heat to medium and simmer until evaporated, about 5 minutes.
  • Sprinkle the flour over the vegetables and stir until incorporated. Fold in the sour cream, Dijon, Worcestershire sauce and 1/4 teaspoon freshly ground black pepper. Pour in the beef broth and stir until smooth. Bring to a simmer and cook, stirring occasionally, until the sauce has thickened, about 5 minutes.
  • Meanwhile, while the sauce reduces, cook the egg noodles according to the package directions for al dente. Drain and toss with the remaining 2 tablespoons butter, the chopped parsley and chives.
  • Fold the beef and any accumulated juices from the bowl into the sauce and cook, stirring occasionally, until the beef is cooked through but still slightly pink on the inside, about 1 minute.
  • Divide the noodles between 4 bowls and top with the sauce and beef. Sprinkle with more chives, if desired.

1 ¼ cups reduced-sodium beef stock, divided

Steps:

  • Remove any fat and gristle from the roast and cut into strips 1/2-inch thick by 2-inches long. Season with 1/2 teaspoon salt and 1/2 teaspoon pepper.
  • Melt 1 tablespoon butter in a large skillet over medium heat. Add mushrooms and green onions and cook, stirring occasionally, until mushrooms are browned, about 6 minutes. Remove to a bowl and add 1 tablespoon butter to the skillet. Cook and stir one half the beef strips until browned, about 5 minutes, then remove to a bowl. Repeat with the remaining butter and beef strips. Pour wine into the hot skillet and deglaze the pan, scraping up any browned bits.
  • Combine flour and 1/4 cup beef broth in a jar with a tightly fitting lid and shake until combined. Stir into the skillet, whisking until smooth. Stir in the remaining broth and mustard, then return the beef to the pan. Bring to a simmer. Cover and simmer until the meat is tender, about 1 hour.
  • Stir in the prepared mushrooms and the sour cream five minutes before serving. Heat briefly and season with salt and pepper.

Steps:

  • Season beef generously with salt and pepper.
  • Heat oil in a large skillet over high heat until nearly smoking. Stir in beef; cook, stirring constantly, for 6-7 minutes, until liquid evaporates and meat browns. Remove meat from the pan and set aside.

1 (17 ounce) package refrigerated beef roast au jus
2 tablespoons butter
2 large fresh Portobello mushrooms, stems removed, coarsely chopped
1 sweet onion, cut into thin wedges

2 tablespoons tomato paste
1 (14 ounce) can beef broth

  • Preheat the oven to 350 degrees F (175 degrees C).

  • Remove beef roast from the package and place in a bowl, reserving juices. Shred into bite-size pieces using 2 forks.

1 tablespoon canola oil
4 tablespoons unsalted butter
1 1/2 pounds beef stew meat, cut into thin strips about 2 inches long and 1/2 inch wide
2 cups button mushrooms, sliced
2 cloves garlic, minced
1 medium Spanish onion, sliced
2 cups beef stock
2 tablespoons soy sauce
2 tablespoons grainy mustard
1 bay leaf
4 sprigs fresh thyme
12 ounces extra-wide egg noodles
1 cup sour cream
3 ounces cream cheese, cut into cubes and softened
Kosher salt and freshly ground black pepper
1/2 cup fresh parsley, roughly chopped

Steps:

  • In a Dutch oven or large, heavy pot over medium-high heat, add the oil and 2 tablespoons of the butter. Heat until the butter is melted and the oil is hot. Add the meat in batches and brown on both sides, about 3 minutes per side; set aside. Add the mushrooms, garlic and onion to the pot. Cook, stirring frequently, until the onions are translucent and slightly tender, 5 to 8 minutes. Add the meat back along with the beef stock, soy sauce, mustard and bay leaf. Bring to a simmer, using a wooden spoon to scrape up all the brown bits from the bottom of the pot, and simmer, covered, until tender, about 2 hours and 50 minutes. Add the thyme and cook for an additional 10 minutes.
  • Meanwhile, bring a large pot of water to a boil. Cook the egg noodles in the boiling water according to the package instructions. Drain the noodles and transfer to a bowl. Add the remaining 2 tablespoons butter to the noodles, stirring to melt the butter and distribute it.
  • Add the sour cream and cream cheese to the stroganoff and stir to incorporate. Season with salt and pepper if needed.
  • In a serving dish, place the egg noodles in an even layer and top with the stroganoff. Garnish with the chopped parsley.

1 small onion, chopped
2 garlic cloves, minced

1 teaspoon beef bouillon

  • In saucepan over medium heat, saute onion in oil about 5 minutes.

1 tbsp olive oil
1 onion, sliced
1 clove of garlic
1 tbsp butter
250g mushrooms, sliced
1 tbsp plain flour
500g fillet steak, sliced
150g crème fraîche
1 tsp English mustard
100ml beef stock
½ small pack of parsley, chopped

Steps:

  • Heat 1 tbsp olive oil in a non-stick frying pan then add 1 sliced onion and cook on a medium heat until completely softened, around 15 mins, adding a little splash of water if it starts to stick.
  • Crush in 1 garlic clove and cook for 2-3 mins more, then add 1 tbsp butter.
  • Once the butter is foaming a little, add 250g sliced mushrooms and cook for around 5 mins until completely softened.
  • Season everything well, then tip onto a plate.
  • Tip 1 tbsp plain flour into a bowl with a big pinch of salt and pepper, then toss 500g sliced fillet steak in the seasoned flour.
  • Add the steak pieces to the pan, splashing in a little oil if the pan looks dry, and fry for 3-4 mins, until well coloured.
  • Tip the onions and mushrooms back into the pan. Whisk 150g crème fraîche, 1 tsp English mustard and 100ml beef stock together, then stir into the pan.
  • Cook over a medium heat for around 5 mins.
  • Scatter with some chopped parsley, and serve with pappardelle or rice.

1 to 3 tablespoons grapeseed oil, as needed to sear steaks
1 (2 to 3-pound) beef bottom round roast, julienned
Salt and freshly ground black pepper
1 tablespoon paprika
1 large white onion, diced
2 cloves garlic, lightly crushed with the side of a knife blade, and minced
2 cups (about 6 ounces) white mushrooms, cleaned trimmed, and sliced
2 cups red wine
1 cup beef stock
1 pound egg noodles
1 cup sour cream
1/4 cup prepared horseradish
2 tablespoons minced fresh flat-leaf parsley

Steps:

  • Heat oil over medium-high heat in a large saute pan which should be large enough to accommodate the mushrooms, wine and beef.
  • Season beef with salt, pepper, and paprika, and set aside briefly.
  • To the heated pan, add white onion and garlic and saute until the onion becomes translucent. Add the mushrooms and saute until they give up their juices.
  • Add the beef strips to the pan, pour red wine, pouring over the meat, and allow the wine to reduce by half. Add beef stock and return to a boil. Cover, reduce heat, and allow meat to braise until it is fork tender, about 25 minutes.
  • Bring a pot of water to a boil for the noodles.
  • Using a slotted spoon, remove meat and mushrooms from pan, cover and keep in a warm place. Allow liquids to reduce and thicken with the pan uncovered.
  • While the beef stock is reducing, boil the egg noodles until al dente.
  • Remove sauce from heat and whisk in sour cream and horseradish (which will add stroganoff flavor and stabilize the sauce). Return meat and mushrooms to sauce.
  • Drain egg noodles well and spoon stroganoff over. Garnish with parsley.

3 lb beef chuck roast
1 tablespoon Better than Bouillon beef base
1 cup water (less if you are adding mushrooms uncooked**)
1 teaspoon dehydrated onion flakes (can sub 1/2 teaspoon onion powder)
2 garlic cloves, crushed
2 tablespoons butter
16 oz mushrooms, sliced
4 oz cream cheese
1/2 cup sour cream

Steps:

  • Place the chuck roast into the slow cooker. The whisk together the water, beef bouillon, garlic and onion flakes and pour over the chuck roast. Cover and cook on high for 4-6 until the roast is tender and falls apart.
  • This step is optional but I love my mushrooms this way and feel it adds a lot of flavor. Do this while the roast is cooking after the roast is done.Get out a large skillet and heat to medium heat. Add the butter and mushrooms and saute for about 10 minutes until cold brown like the picture below.**Otherwise you can add the mushrooms right to the slow cooker but use 1/2 the amount of water because the mushrooms will produce water.
  • Once the roast is done, take it out of the crockpot and using two fork shred or slice the roast into bite size pieces.
  • Before adding the roast back in, add the cream cheese and whisk to combine. Then stir in the sour cream and mushrooms.
  • Place the shredded beef back into the slow cooker and let the meat sit for about 5 minutes to soak up the sauce.

1 Onion (peeled and finely chopped)
2 Garlic Cloves (peeled and finely chopped)
200 g Chestnut Mushrooms (sliced)
1 tbsp Tomato Puree
300 ml Beef Stock
1 tsp Dijon Mustard
1 tbsp Smoked Paprika
1 tsp Dried Italian Herbs
200 ml Creme Fraiche (or soured cream)
700 g Leftover Roast Beef (cut into strips)
2 tbsp Parsley (chopped)

Steps:

  • Heat the oil in a frying pan and gently fry the onions and garlic over a medium heat for 4-5 minutes.
  • Turn the heat up and add in the sliced mushrooms (and fresh steak strips if you don't have any leftover roast beef - see top tips below), and cook for a further 2-3 minutes until the mushrooms are tender.
  • Stir in the beef stock, tomato puree, smoked paprika, dijon mustard and dried herbs. Simmer for 10 minutes on a low heat.
  • Stir in the creme fraiche (or soured cream) and leftover roast beef. Simmer for 5 minutes and serve with the chopped parsley.

800 g beef roast
2 teaspoons sweet paprika
2 tablespoons olive oil
1 tablespoon Worcestershire sauce
250 g mushrooms, sliced
2 tablespoons thyme
1 tablespoon tomato paste
1/2 cup beef stock
1 red onion, sliced
1/2 cup sour cream

Steps:

  • Preheat oven to 200 degrees. Brush beef with oil and rub parprika over the entire roat. Season with salt and pepper. Roast beef for 20 minutes. Meanwhile, mix all ingredients except the sour cream in a bowl. Remove beef from oven, cover with mushroom mixture. Roast for a further 20 minutes on medium heat. Remove beef from pan leaving behind the mushroom mixture and cover to rest. Add the sour cream to the mushroom mixture and stir well to combine. Slice your beef and serve with lashings of mushroom gravy - divine!

2 pounds beef chuck roast
½ teaspoon salt
½ teaspoon ground black pepper
4 ounces butter
4 green onions, sliced (white parts only)
4 tablespoons all-purpose flour
1 (10.5 ounce) can condensed beef broth
1 teaspoon prepared mustard
1 (6 ounce) can sliced mushrooms, drained
⅓ cup sour cream
⅓ cup white wine
salt to taste
ground black pepper to taste

Steps:

  • Remove any fat and gristle from the roast and cut into strips 1/2 inch thick by 2 inches long. Season with 1/2 teaspoon of both salt and pepper.
  • In a large skillet over medium heat, melt the butter and brown the beef strips quickly, then push the beef strips off to one side. Add the onions and cook slowly for 3 to 5 minutes, then push to the side with the beef strips.
  • Stir the flour into the juices on the empty side of the pan. Pour in beef broth and bring to a boil, stirring constantly. Lower the heat and stir in mustard. Cover and simmer for 1 hour or until the meat is tender.
  • Five minutes before serving, stir in the mushrooms, sour cream, and white wine. Heat briefly then salt and pepper to taste.
