This copycat 3 cheese chicken penne with Alfredo sauce is an easy to make copycat recipe from Applebee's restaurant.

2 chicken breasts from a rotisserie chicken, chopped
4 ounces of uncooked penne pasta
1/2 jar of your favorite Alfredo sauce
1/4 cup of Provolone cheese
1/4 cup of Mozzarella cheese
1/4 cup of Parmesan reggiano cheese, divided
4 tomatoes, chopped
3 tbsp of fresh basil leaves, chopped
2-3 cloves of garlic
2 tablespoons extra virgin olive oil

Steps:

  • Cook the pasta in salted water until it is al dente, about 12 minutes. Drain.
  • While the pasta is boiling, make the bruschetta chop the tomatoes, garlic and basil. Combine in a bowl with the olive oil. Set aside.
  • Combine the pasta with bottled Alfredo sauce from the jar. Heat slightly in a skillet. Add the provolone, mozzarella, and 1/2 of the Parmesan cheese.
  • Layer the pasta with the rotisserie chicken. Spoon on the freshly made bruschetta, and sprinkle with the remainder of the freshly grated Parmesan cheese.
  • Serve with a side salad and freshly made garlic bread.

2 cups heavy cream
1 cup crushed tomatoes in thick tomato puree
1/2 cup freshly grated Pecorino Romano (1 1/2 ounces)
1/2 cup shredded imported Italian fontina (1 1/2 ounces)
1/4 cup crumbled Italian Gorgonzola (1 1/2 ounces)
2 tablespoons ricotta cheese
1/4 pound fresh mozzarella, sliced
6 fresh basil leaves, chopped
1 pound imported penne rigate pasta
4 tablespoons (1/2 stick) unsalted butter

Steps:

  • Preheat the oven to 500 degrees F.
  • Bring 5 quarts of salted water to a boil in a stockpot.
  • Combine all the ingredients except the penne and butter in a large mixing bowl. Mix well.
  • Drop the penne into the boiling water and parboil for 4 minutes. Drain well in a colander and add to the ingredients in the mixing bowl, tossing to combine.
  • Divide the pasta mixture among 6 shallow ceramic gratin dishes (1 1/2 to 2-cup capacity). Dot with the butter and bake until bubbly and brown on top, 7 to 10 minutes.

Steps:

  • Slice the chicken into bite-sized cubes. Pour Italian dressing into a bowl and add the chicken. Marinade for 30 minutes.
  • Meanwhile, finely chop the tomatoes, mince the garlic, and combine them in a bowl. Mix in the basil and the oil to make a bruschetta topping. Set aside.
  • Preheat the grill on high for 10-15 minutes at 425-450 degrees Fahrenheit.
  • Cook the penne according to package instructions. Drain and divide into 2 microwave-safe bowls. Set aside.
  • Grill the chicken for 9-10 minutes, flipping halfway through.

9 ounces fresh spinach leaves
1 lb boneless skinless chicken breast, cut into bite-size pieces
1 teaspoon dried basil leaves
1 (14 1/2 ounce) jar spaghetti sauce
1 (14 1/2 ounce) can diced tomatoes, drained
2 ounces neufchatel cheese, cubed
1 cup mozzarella cheese, shredded, divided
2 tablespoons parmesan cheese, grated

Steps:

  • HEAT oven to 375ºF. Cook pasta as directed on package, adding spinach to the boiling water for the last 1 minute.
  • COOK and stir chicken and basil in large nonstick skillet on medium-high heat 3 minute Add spaghetti sauce and tomatoes; bring to boil. Simmer 3 minute or until chicken is done. Stir in Neufchatel cheese.
  • DRAIN pasta mixture; return to pan. Stir in chicken mixture and 1/2 cup mozzarella. Spoon into 2-qt. or 8-inch square baking dish.

1 medium onion, chopped
2 teaspoons olive oil
4 garlic cloves, minced
1 can (15 ounces) crushed tomatoes
1 can (8 ounces) tomato sauce
3 tablespoons minced fresh parsley or 1 tablespoon dried parsley flakes
1 teaspoon dried oregano
1 teaspoon dried rosemary, crushed
1/2 teaspoon crushed red pepper flakes

1-1/2 cups 2% cottage cheese
1-1/4 cups shredded part-skim mozzarella cheese, divided
1 cup part-skim ricotta cheese
1/4 cup grated Parmesan cheese

Steps:

  • Cook penne according to package directions., Meanwhile, in a large skillet, saute onion in oil until tender. Add garlic; cook 1 minute longer. Stir in the tomatoes, tomato sauce, parsley, oregano, rosemary, pepper flakes and pepper. Bring to a boil. Remove from the heat; cool for 15 minutes., Preheat oven to 400°. Drain penne; add to sauce. 2 cups low-fat cheddar cheese, grated
1 cup lowfat mozzarella cheese, grated
1/4 cup parmesan cheese, grated
500 g penne pasta (about 1 lb)
3 tablespoons butter or 3 tablespoons margarine
2 garlic cloves, minced
1/4 cup flour
1 tablespoon mustard powder
1/4 teaspoon nutmeg
3 cups milk
2 teaspoons dried basil
2 teaspoons dried oregano
2 teaspoons dried thyme
salt and pepper

Steps:

  • Preheat oven to 375°F.
  • Cook and drain pasta according to package directions, and pour into a 9x13" baking dish.
  • Meanwhile, melt butter in a saucepan over medium heat.
  • Add garlic and cook for 1 minute.
  • Stir in flour, mustard powder, and nutmeg. Gradually stir in milk and bring to a boil, stirring constantly.
  • Reduce heat and simmer for 1 minute.
  • Remove from heat.
  • Toss cheeses together and reserve about 3/4 cup of tossed cheese. Add remaining cheese to sauce a handful at a time, stirring until melted.
  • Stir in herbs, salt, and pepper.
  • Toss sauce with pasta. Sprinkle with reserved cheese.
  • Bake for 30 minutes, or until cheese on top is melted and crusty (you may need to add a couple of minutes under the broiler if you like your cheese really brown!).

  • Transfer to 11x7x2-inch glass baking dish.

1/3 cup Italian salad dressing
3 cups penne pasta
15 ounces alfredo sauce

6 tablespoons olive oil

Steps:

  • Chop Chicken and marinade in Italian dressing for 30 minute.
  • Chop tomatoes, add oil chopped Garlic and basil to make bruschetta. Set aside.
  • Cook Penne in boiling water.
  • Grill or broil Chicken.
  • Divide pasta between two microwavable bowls.
  • Pour Alfredo sauce.over the pasta in each bowl.

  • NB. I have edited this recipe from the original post. Thanks to JFitz who kindly pointed out I had omitted to include the Garlic in the Bruschetta. JFitz also added the that she cooked the meal in a casserole dish, in the oven. I have done this successfully also, but I have failed at it by using low quality shredded Italian 3 cheese mix. Always use fresh.
