SO EASY AND TASTY APPLE STREUSEL
"Crisp fall apples, tossed in cinnamon and baked with delicious streusel. Almost as good as pie, with half the calories and it's in the oven in 10 minutes! Plus, it can be served warm with ice cream, and the smaller size means it won't be there to tempt you later. Enough for a small mini casserole dish that will serve 3-4 people. Double the recipe for an 8x8 pan, quadruple it for a 9x13 pan". Unless you double the batch and use a bigger pan, in which case, it's a great breakfast topping for oatmeal! Enjoy! A little history: In baking and pastry making, the term streusel (a German word meaning "something scattered or sprinkled", from the verb streuen, akin to the English verb 'strew') refers to a crumb topping of butter, flour, and white sugar (traditional German) that is baked on top of muffins, breads, and cakes (e.g. Streuselkuchen). Some modern recipes add various spices and occasionally chopped nutmeats. Although the topping is of German origin, it is sometimes referred to as Danish or Swedish.

- Preheat oven to 350°.
- Grease the bottom only of a small (4 cups or so) casserole dish. Peel and core the apples, slice and place in a bowl. Top with sugar, cinnamon and vanilla, toss to coat. Set aside while preparing topping.
- Make the streusel by cutting the cold butter into a bowl, adding flour, sugar, cinnamon, and nutmeg, if using. Rub it through your fingers until the streusel is a coarse, sandy/pebbly texture.
- Put the seasoned apples into the pan, top generously with the streusel, and bake at 350° about 30 minutes, or until the streusel is golden brown and the apple is starting to bubble up through the topping.
- Serve and enjoy!

- Preheat oven at 375 degrees with a cookie sheet on the center rack. Mix peeled and sliced apples in a large bowl with sugar, salt, cinnamon, nutmeg, and flour.
- Pour apple mixture into frozen pie crust.
- Make the streusel crumb topping by mixing together with a fork in a medium bowl the flour, cinnamon, and light brown sugar. Then mix in the softened butter with a fork, stirring and blending until the mixture resembles crumbs.
- Top the pie with the crumb topping, place on the cookie sheet in the preheated oven and bake for 40 - 45 minutes until the crust is a deep golden brown and the filling bubbles.
- Remove from oven, cool 30 minutes and serve warm with ice cream and caramel ice cream topping drizzled over pie, if desired.

- Transfer the pie crust from the tinfoil pan to the CENTER of a 10-inch glass pie dish. Set aside to thaw.
- Make the crumb topping: In a bowl, mash butter, flour, brown sugar and cinnamon together to resemble crumbs and then set aside.
- Make flour & sugar mix: In a bowl, stir ingredients together until all one color (beige) and set aside.
- Prepare the apples: Into a bowl, peel, core and slice a few apple slices, stir and cover well with the flour & sugar mixture as you go. Once all are cut and covered, set the apple bowl aside.
- Making the pie: Squoosh the pie crust thinly to fit the pan (you can use your fingers to do this), and then put the crust in the freezer for exactly 5 minutes. Meanwhile, heat oven to 425F degrees.
- Put 2 tablespoons softened butter into a large skillet over medium heat. When butter melts, empty the bowl of sugared apples on top of the butter, and cook for exactly 5 minutes, stirring occasionally. Take pie crust from the freezer and put in the hot oven for the same 5 minutes you are cooking the apples.
- When timer rings for the 5-minutes of the pie crust in the oven, remove pie crust from oven and pour apples from the skillet into the pie crust. Make sure apples form a flat surface as a base for the crumb topping. Pour crumb topping onto apples, making sure to cover all the apples, otherwise apples may burn.
- Return the pie to the oven, and set the timer for EXACTLY 30 minutes.

- Preheat oven to 425 degrees F (220 degrees C). Fit pastry shell into pie pan and place in freezer.
- To Make Apple Filling: Place apples in a large bowl. In a separate bowl combine 2 tablespoons flour, white sugar, 1/2 teaspoon cinnamon, nutmeg, and allspice. Mix well, then add to apples. Toss until apples are evenly coated.

APPLE AND PEAR STREUSEL PIE
You might think that a pastry chef would never recommend buying pie crusts but hey, its much better to make a pie with a pre-made crust than not to make a pie at all! For the best flavor, always look for the ones made with at least some butter, rather than all shortening. You can place the crust in a glass pie dish. That way you can check the bottom crust as it bakes and make sure it's getting nice and golden which to my mind is the most important step in pie-making. Nothing ruins a delicious pie like this classic combination of autumn fruits and warm spices faster than an undercooked, soggy bottom crust. You can mix the topping and keep it refrigerated for up to 7 days.

- Make the crust: Whisk the flour, granulated sugar and salt in a large bowl. Rub the butter pieces into the flour using your fingers until pea-size pieces form. - Combine the streusel mixture in a med. size bowl, and with 2 knifes or your hands combine until you have nice medium-size clumps. (streusel). Set aside.
- Combine the cake ingredients in a mixing bowl and stir well with a fork until combined (I cut up the apples in the can with a knife to make smaller chunks).
- Pour into a greased 9x13 pan and bake at 350F for 15 minutes.
- Remove from oven and cover top with the streusel mixture.
- Return to bake for 30 more minutes.
