2 containers (5.3 oz each) strawberry Greek yogurt
3/4 cup milk
2 eggs
2 cups Bisquick™ Original pancake and baking mix
1 1/2 cups sliced strawberries
Strawberry syrup, if desired

Steps:

  • Heat nonstick griddle or skillet over medium-low heat (325°F); brush lightly with vegetable oil, if necessary. In medium bowl, beat 1 container yogurt, the milk, eggs and Bisquick™ mix until mixed well. If batter seems thick, add an additional 1 to 2 tablespoons milk.
  • For each pancake, pour slightly less than 1/4 cup batter onto hot griddle, spreading batter into 4-inch circle. Cook until edges begin to dry and bubbles begin to form on top. Turn; cook other side until golden brown. Top 2 pancakes with dollop of yogurt from remaining container, 4 tablespoons sliced strawberries and strawberry syrup.

1 cup unbleached flour
1/2 teaspoon salt
1 teaspoon baking powder
1 tablespoon butter
1 cup flavored yogurt (fruit flavored is best, as suggested by Sackville Girl)
1/2 cup milk
1 egg

Steps:

  • Dump all of the dry ingredients (flour, salt, baking powder) into a large bowl. Mix well, then make a dent in the center of the mixture using a soup spoon.
  • Place the butter in a covered bowl and melt in the microwave.
  • Spoon the yogurt into a medium sized bowl. Add the milk, melted butter, and the egg in with the yogurt and whisk until everything becomes one color.
  • Pour the wet mixture into the dent in the dry mixture.
  • Mix with a wooden spoon until the flour disappears.
  • Spray a griddle or pan with PAM cooking spray.
  • Scoop the batter with a 1/3 cup measure into the pan. (if you like larger pancakes you may use a larger scoop but there will be fewer pancakes).
  • Cook on both sides until golden brown. Serve hot with fresh fruit, syrup, extra yogurt, powdered sugar, or just plain.
  • ENJOY!

Homemade Strawberry Syrup with fresh strawberries! It's great to top pancakes, waffles, yogurt & much more!

2 cups strawberries (10 oz)
1/2 cup granulated white sugar (100 grams)
1 tablespoon lemon juice (15 ml)
1/2 cup water (120 ml)
2 teaspoon cornstarch (mixed with 1/4 cup water)

Steps:

  • Rinse the strawberries and chop off the stem from the top. Dice them into quarters or halves and place them in a pan on medium heat.
  • Add sugar, lemon juice and 1/2 cup water to the pan.
  • Let it all come to a boil and then let the syrup simmer on medium heat for 10-12 minutes until strawberries are very soft.
  • Then mix 2 teaspoons of cornstarch with 1/4 cup water, stir and add to the pan. Let the syrup simmer on low-medium for 6-7 minutes.
  • Once it thickens up a little, remove pan from heat and let the syrup cool down.
  • Store in an airtight containers and keep it refrigerated. Use this homemade strawberry syrup as a topping on pancakes, yogurt!

1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
4 teaspoons sugar
2 large eggs, beaten
4 tablespoons butter, melted
1 cup low-fat strawberry yogurt (about 8 oz.)
1 1/2 cups buttermilk
1/2 teaspoon vanilla

Steps:

  • In a mixing bowl, mix flour, baking powder, baking soda, salt and sugar.
  • Add in the eggs, buttermilk, melted butter, yogurt and vanilla and mix until smooth.
  • Spray griddle with Pam or use a slab of butter for each pancake and heat over medium heat.
  • Pour approximately ½ cup of batter onto a preheated griddle.

  • Mix all of the dry ingredients together in a large bowl
  • Now add the milk, butter, vanilla extract and slightly beaten eggs to the dry mixture
  • Once all mixed heat a little bit of butter in your frying pan if it is not non-stick and start pouring in the batter to make a neat medium sized circle. Fry 1 minute on each side, or until the pancake is golden brown. Repeat this process until all of the mix is used up.
  • Add the strawberries to the pancakes while on your plate and scoop the mascarpone
  • cheese on top!
  • If you like to over indulge, add on some golden syrup as well!! SUGAR OVERLOAD!!!

1 cup flour (or 3/4 cup flour plus 1/4 cup cornmeal or other flour for texture and flavor)
2 tablespoons sugar
1 1/4 teaspoons baking powder

1 cup plain yogurt (nonfat, low-fat, or whole milk yogurt all work)
2 eggs
2 tablespoons butter (melted, or vegetable oil)​
For serving: butter, maple syrup, honey, and/or jam

Steps:

  • Gather the ingredients.
  • Heat a griddle or large frying pan over medium-high heat. Rotate it regularly to make sure it's evenly heated.
  • Once it's hot, turn down the heat to medium and maintain a hot surface. (You want a drop of water to bounce or dance on it but not splatter or explode-that's too hot). Adjusting the heat and maintaining an even pan temperature is the key to evenly cooked pancakes.
  • While the griddle or pan heats up, make the batter. Combine the flour, sugar, baking powder, baking soda, and salt in a medium bowl.
  • In another medium bowl, whisk together the yogurt and eggs.
  • Add the yogurt-egg mixture to the flour mixture and stir to combine.
  • Stir in the melted butter or oil. If the batter is too thick (which can happen based on the consistency of the yogurt that is used), slowly add 1/4 to 1/3 cup milk.
  • Brush or spray oil onto the hot griddle or pan. Spoon the batter into even cakes and cook until bubbles form on the surface of the cakes, about 2 minutes.
  • Using a spatula, flip the cakes over and cook until they are golden brown on the other side-about another 2 minutes. Working in batches, only cook as many pancakes as will fit on your pan without touching.
  • Transfer the pancakes to a platter or individual plates.
  • Serve pancakes hot, with butter, maple syrup , honey, or jam as you like.
