Steps:
- Place sugar in a small heavy skillet; cook and stir over medium-low heat until melted and caramel-colored, about 10 minutes. Stir in almonds until coated. Spread on foil to cool. , Place romaine, onion and strawberries in a large bowl. Whisk together dressing ingredients; toss with salad. Break candied almonds into pieces; sprinkle over salad. Serve immediately.

- Caramelize pistachios according to directions. Set aside.*
- Add all of the Strawberry Poppy Seed Dressing Ingredients (EXCEPT the poppy seeds and sesame seeds) to your blender; blend until smooth. Add poppy seeds and sesame seeds and pulse until combined. For a tangier dressing, add more vinegar, for sweeter, add more sugar. Add additional milk to thin if desired. Store in the refrigerator while you prepare salad.
- Combine Spinach Salad ingredients in a large bowl and toss to combine. If serving entire salad immediately, drizzle with desired amount of dressing and toss to coat. If there might be leftovers, drizzle dressing on individual salad servings. Season with freshly ground salt and pepper to taste.
STRAWBERRY SALAD WITH CREAMY POPPY SEED YOGURT DRESSING
Avocado, snap peas, leftover cooked asparagus, and goat cheese are all tasty additions to this salad. For further variety, swap the almonds for pistachios, pine nuts, pecans, or a combination of several nuts. Top with grilled chicken for a complete meal. Yields 6-8 serving; 4 servings when topped with chicken and served as a main dish.

- Place the salad ingredients in a large bowl. Mix all of the dressing ingredients well. Drizzle just enough of the dressing over the salad to lightly coat when tossed. Store the remaining dressing in a jar in the refrigerator; shake well before using. The dressing will keep for about a week.

- For the salad: Wash heads of lettuce and let drain extremely well. Wash and slice strawberries. Tear lettuce into pieces, add strawberries and onions.
- For the dressing:Put all of the ingredients in a container with a lid. Whisk quickly, place the lid on and shake well.
- Just before serving, pour the dressing over the salad and toss well.
