STRAWBERRY-ORANGE OATMEAL BARS

Strawberry-Orange Oatmeal Bars image

A strawberry-orange filling, combined with a coconut-almond-oatmeal crust, makes for fruity and flavorful bar! Adjust the amount of maple syrup used in the filling according to the sweetness of your strawberries--and feel free to use brown sugar instead of maple syrup, if you prefer.

Time 1h10m

Yield 12

Number Of Ingredients 15

cooking spray
1 cup rolled oats
¾ cup whole wheat flour
¾ cup shredded sweetened coconut
½ cup sliced almonds
1 teaspoon ground ginger
½ teaspoon kosher salt
½ cup maple syrup
6 tablespoons unsalted butter, melted
1 teaspoon vanilla extract
3 cups sliced fresh strawberries
3 tablespoons maple syrup, or as needed
1 ½ tablespoons cornstarch
1 tablespoon orange juice
¼ teaspoon grated orange zest

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line an 8x8-inch baking pan with enough parchment to have overhang on all sides. Lightly grease parchment with cooking spray.
  • Stir together oats, whole wheat flour, coconut, almonds, ginger, and salt in a large bowl. Add 1/2 cup maple syrup, melted butter, and vanilla extract. Stir until mixture is thoroughly combined. Reserve 1 cup of the crust mixture to use as the topping. Press the rest of the crust mixture firmly and evenly into the bottom of the prepared pan.
  • Combine strawberries, 3 tablespoons maple syrup, cornstarch, orange juice, and orange zest in a bowl. Toss to combine until there are no longer any dry lumps of cornstarch. Pour strawberry mixture evenly over the crust.
  • Sprinkle reserved crust mixture over the strawberries and lightly press down into strawberry mixture.
  • Bake in the preheated oven, until the top is golden brown and strawberries are bubbling, 45 to 50 minutes. Cool completely in pan. Remove from pan using parchment "handles" and slice into bars.

Categories     Bar Cookie

Time 45m

Yield 8-10 serving(s)

Number Of Ingredients 7

1 cup flour
1 cup rolled oats
1/2 cup butter, softened
1/3 cup light brown sugar, firmly packed
1/4 teaspoon baking powder
1/8 teaspoon salt
3/4 cup strawberry jam

Steps:

  • Preheat oven to 375°F.
  • In a large bowl, mix everything together but the jam.
  • Measure out 2 cups of this mixture. Leave the rest in the bowl and set aside.
  • Take the 2 cups of the mixture and press it into the bottom of an 8 inches square pan, coated with cooking spray. Using a large spoon, distribute jam on top of the mixture in the pan. Spread it evenly all over. (I used the squeeze-bottle spread for this and it made this part of the process a lot quicker).
  • Take the remaining mixture and spread it over the jam. Press down lightly.
  • Bake 25 minutes.
  • Remove the pan from the oven and allow to cool for at least 15 minutes before cutting into bars.

INDIVIDUAL STRAWBERRY-ORANGE BAKED OATMEAL

Individual Strawberry-Orange Baked Oatmeal image

Not only do the strawberry and orange pieces make this baked oatmeal taste wonderful, but they also stud the pale oatmeal with a wonderful deep red. My main complaint with baked oatmeal is the excess amount of sugar added, making it taste more like dessert. This oatmeal is only slightly sweet, with the option of adding additional honey to drizzle on top. The individual serving size is quite small (which allows one to enjoy the oatmeal with toast, fruit and milk for a complete, healthy breakfast) but the individual aspect also makes it quite pretty. Created for RSC #11.

Provided by LUv 2 BaKE

Categories     Breakfast

Time 45m

Yield 4 serving(s)

Number Of Ingredients 10

1 cup old fashioned oats
2 tablespoons oat bran
1 1/2 tablespoons ground flax seeds
1 blood orange (zest, fruit and juice)
1/2 cup strawberry, chopped (frozen or fresh)
2 tablespoons honey
1/2 teaspoon brandy extract
1 egg
1 cup skim milk
honey, to drizzle on oatmeal after baking, if desired (optional)

Steps:

  • In a medium bowl add oats, oat bran, and ground flax.
  • Zest the peel of one whole blood orange and add zest to the medium bowl. Cut the orange in half width wise (like you would a grapefruit). Run your knife around the fruit just inside the peel of the orange. Then cut along the membranes of the fruit sections. Scoop out the orange sections (ie the pulp only) with a spoon and add orange sections to the bowl. Squeeze out the juice remaining in the now fruitless orange halves into the bowl as well.
  • Add chopped strawberries, honey, brandy extract, egg and milk into the bowl, stir until well mixed.
  • Spray out 4 individual ramekin dishes (5oz) with cooking spray and equally divide oatmeal into the 4 dishes.
  • Bake for 350F for 25-35 minutes. Oatmeal will be golden brown around the edges and will poof up slightly. Enjoy!

HEALTHY STRAWBERRY OATMEAL BARS

Healthy Strawberry Oatmeal Bars image

The easiest, best strawberry oatmeal bars with butter crumb topping. One bowl, simple ingredients, and 100% whole grain-perfect for a snack or dessert!

Provided by Erin Clarke / Well Plated

Categories     Dessert

Time 55m

Number Of Ingredients 13

1 cup old-fashioned rolled oats
3/4 cup white whole wheat flour
1/3 cup light brown sugar
1/4 teaspoon ground ginger
1/4 teaspoon kosher salt
6 tablespoons unsalted butter (melted (or substitute melted coconut oil to make vegan/dairy free))
2 cups small-diced strawberries (about 10 ounces, divided)
1 teaspoon cornstarch
1 tablespoon freshly squeezed lemon juice (from about 1/2 small lemon)
1 tablespoon granulated sugar (divided)
1/2 cup powdered sugar (sifted)
1/2 teaspoon pure vanilla extract
1 tablespoon milk (any kind you like)

Steps:

  • Place a rack in the center of your oven and preheat to 375 degrees F. Line an 8x8-inch baking pan with parchment paper so that the paper overhangs two sides like handles.
  • In a medium bowl, combine the oats, flour, brown sugar, ginger, and salt. Pour in the melted butter and stir until it forms clumps and the dry ingredients are evenly moistened. Set aside 1/2 cup of the crumble mixture, then press the rest into an even layer in the bottom of the prepared pan.
  • Scatter half of the strawberries over the crust. Sprinkle the cornstarch evenly over the top, then sprinkle on the lemon juice and 1/2 tablespoon of the granulated sugar. Scatter on the remaining berries, then the remaining 1/2 tablespoon sugar. Sprinkle the reserved crumbs evenly over the top. You will have some fruit showing through.
  • Bake the bars for 35 to 40 minutes, until the fruit is bubbly and the crumb topping smells toasty and looks golden. Place the pan on a wire rack to cool completely (you can speed this process along in the refrigerator).
  • While the bars cool, prepare the glaze: In a medium bowl, briskly whisk together the powdered sugar, vanilla, and milk until smooth. Feel free to add more milk if a thinner consistency is desired. Using the parchment-paper handles, lift the bars from the pan. Drizzle with glaze, slice, and serve.

STRAWBERRY OATMEAL BREAKFAST BARS

Strawberry Oatmeal Breakfast Bars image

I'm always on the lookout for easy and delicious things to make for breakfast that are on the one hand, relatively healthy and good for you, while on the other hand, not too good for you. I think these really do fit the bill. These are normally made with strawberry preserves, but here we're using fresh strawberries for a little lighter and lower-sugar approach. For best results, refrigerate before serving.

Categories     100+ Breakfast and Brunch Recipes

Time 2h

Yield 8

Number Of Ingredients 11

1 pound fresh strawberries
½ lemon, juiced
2 tablespoons white sugar
2 teaspoons cornstarch
1 ½ cups old-fashioned rolled oats
½ cup all-purpose flour
½ cup whole wheat flour
½ cup packed light brown sugar
½ teaspoon kosher salt
¼ teaspoon ground ginger
8 tablespoons unsalted butter, melted

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Butter a 9x12-inch baking dish.
  • Remove the green tops from strawberries using the tip of small, sharp knife or strawberry huller. Place the berries cut-side down on a work surface and cut in half. Slice each half lengthwise 3 to 5 times before turning and cutting across in a nice, uniform dice.
  • Combine diced strawberries, lemon juice, sugar, and cornstarch in a mixing bowl and stir until thoroughly combined and the cornstarch disappears. Set aside until needed.
  • Combine oats, all-purpose flour, whole wheat flour, brown sugar, salt, and ginger in a mixing bowl. Pour in melted butter and stir thoroughly until dry ingredients are evenly coated.
  • Transfer 60% of the oatmeal mixture into the prepared baking dish and spread out into an even layer. Press the mixture down with the back of a spoon or spatula to compress slightly.
  • Place strawberries over the top using a slotted spoon. Do not press down. Reserve any accumulated juices in the bowl. Top with remaining oatmeal mixture and press down lightly with the back of a spoon or spatula. Drizzle reserved juices on top.
  • Bake in the preheated oven until the top is golden brown, about 45 minutes. Press the top down with a spatula to compress slightly. Let cool completely, about 1 hour. Cut into bars and serve.
