While making a pitcher of my Strawberry Mojitos, I had a request for one without any alcohol. It seemed to be a hit! You can adjust the taste by adding less or more of any ingredient. Refreshing and light, it's perfect on a hot summer day!

2 large limes, quartered
½ bunch mint leaves
7 strawberries, quartered
1 cup white sugar
3 cups carbonated water

Steps:

Squeeze the lime quarters into a sturdy glass pitcher. Toss the juiced limes into the pitcher along with the mint, strawberries, and sugar. Crush the fruits together with a muddler to release the juices from the strawberries and the oil from the mint leaves. Stir in the club soda until the sugar has dissolved. Pour into the sugared glasses over ice cubes to serve.

18 fresh strawberries, stemmed
1 bunch fresh mint leaves
2 cups freshly squeezed lemon juice
6 cups water, divided, or more as needed
¼ cup white sugar
2 tablespoons minced fresh ginger root, or more to taste

Steps:

Place strawberries, mint, lemon juice, 1 cup water, sugar, and ginger into an electric blender and blend well.
Pour into a pitcher, add 5 cups water, and stir well. Refrigerate or serve immediately over crushed ice.

Bring sugar and water to a boil. Add strawberries and remove from heat. Steep strawberries until syrup is cool. Puree in a blender and pass through a sieve. Fill half of glass with strawberry puree, then add ice and club soda, seltzer or gingerl ale; garnish glass with mint.
