Steps:
- In a medium bowl, fold sour cream and unprepared pudding mix into the whipped topping.
- Cut the cake into thirds, horizontally.
- Line a large trifle or other glass serving bowl with kiwi and strawberry slices, reserving two whole strawberries and two kiwi slices. Place one layer of cake in bottom of bowl, top with 1/3 of bananas and pineapple, and 1/3 of whipped topping mixture. Repeat layering until all ingredients are used.
- Make fan garnishes of whole strawberries by slicing from just below the stem. Garnish assembled trifle with fanned strawberries, reserved kiwi slices, and a sprig of mint. Refrigerate until serving.

- Beat pudding mixes and milk in medium bowl with whisk 2 min. Stir in 2 cups COOL WHIP.
- Reserve 2 strawberry halves and 3 kiwi slices for garnish. Place 12 donut holes in 2-qt. bowl; top with 1/3 of the pudding mixture and remaining strawberries. Cover with remaining donut holes and half the remaining pudding mixture; top with remaining kiwi, pudding mixture and COOL WHIP. Garnish with reserved fruit.

STRAWBERRY TRIFLE
This trifle is much lighter than traditional trifles but equally as good. It uses yoghurt and fresh fruits providing a much healthier version. You can substitute the cream topping for a low fat version. The frozen ready whipped cream works quite well with this recipe too.

Steps:
- Cut the cake vertically into halves.
- Slice the cake into fingers.
- Prepare topping mix as per instructions on the packet but using skimmed milk, or if using fresh cream, whip until stiff.
- Layer half the cake pieces, yoghurt, whipped topping, strawberries and kiwi in a 2 quart serving bowl.
- Repeat layers and sprinkle with almonds.
- Garnish with whole strawberries, if desired.
- Refrigerate for atleast 2 hours.
- For an alternative taste, grate the rind of an orange and a lemon and sprinkle over the sponge.
- Use orange flavoured yoghurt and top with tinned mandarines instead of strawberries.

INDIVIDUAL STRAWBERRY TRIFLES

- In a small shallow casserole dish, toss the strawberries with vinegar and let stand at room temperature for 15 to 20 minutes. After the strawberries have marinated, check for sweetness, adding sugar if desired.
- In a large bowl using an electric mixer, whisk the cream to soft peaks. Add the vanilla and confectioners' sugar. Whip until stiff peaks. Set aside.
- Using a serrated knife, slice pound cake lengthwise into 1/2-inch thick slices. You will only need 4 slices. Using a 2-inch cookie cutter, cut out circles from each cake slice. Line up 2 high ball glasses and place 1 cake circle in the bottom of each. Brush cakes with amaretto liqueur. Add 2 tablespoons of marinated strawberries and spread evenly. Using a different tablespoon, add a large dollop of whipped cream and spread evenly. Add a second layer of cake, pressing down lightly. Brush with amaretto liqueur. Add 2 tablespoons of marinated strawberries and spread evenly. Top with a large dollop of whipped cream, spreading evenly. Use remaining cake, cream and strawberries to create a more humble trifle dish.
- Cover trifles with plastic wrap and refrigerate for impromptu indulgence, Keeping in mind that it will store for up to 2 days.
- To serve, remove and discard plastic wrap. Grate amaretto cookie on top and sprinkle with demerara sugar.
HOLIDAY TRIFLE
This is a nice dessert for Christmas with its red & green fruit, but it can be enjoyed anytime of the year. I have made this using white chocolate or cheesecake instant pudding. Both, equally good. I also have cheated and bought a chocolate loaf cake and cut that up instead of baking a cake. I'm all for saving time!

- 1. Using (2) 9-inch round cake pans, bake cakes according to package directions; cool & cut 1 cake into 1-inch pieces; freeze other cake for future use.
- 2. In a medium size bowl, combine sweetened condensed milk and water; stir.
- 3. Add pudding mixes; beat until blended; Chill for 5 minutes.
- 4. Fold whipped cream into pudding mix.
- 5. In a trifle bowl, layer ingredients as follows: 2 cups pudding (spread, covering bottom of bowl), cake cubes (covering pudding), sprinkle with 1 tablespoons orange juice, top with 1 cup sliced strawberries, 1/2 cup raspberries and 1/3 cup sliced kiwis.
- 6. Repeat once again and top with pudding.
- 7. Garnish with extra fruit and/or chocolate curls or sprinkle with cocoa powder.
