I've never made jam before in my life, and suddenly got the urge to try. When I looked up recipes I realized I was lacking the exact ingredients called for, so I improvised with what I had, and the result was so fantastic, I just had to share! This recipe is pectin free and made with frozen berries.

2 (16 ounce) packages frozen sliced strawberries
3 squeezes lemon juice
1 cup granular sucralose sweetener (such as Splenda®), or to taste

Steps:

  • Place strawberries in a pot over low heat; add lemon juice. Mash with a potato masher as strawberries thaw. Stir in sweetener when strawberries are the consistency of your liking.
  • Increase heat to medium and bring to a boil. Continue to cook until reduced and thickened, 10 to 15 minutes.
  • While jam cooks, place a small plate in the freezer.
  • Put a small amount of jam on the cold plate and run your finger straight through, dividing it in half. If the mixture runs back together, continue to cook until thickened, 5 to 10 minutes more; if it stays divided, jam is ready to serve.

This simple strawberry jelly has an incredible strawberry flavor without the seeds in a standard strawberry preserve.

4 cups strawberry Juice (From 4 pounds strawberries, see note)
1-2 tbsp lemon juice (optional)
1 package powdered fruit pectin (Sure Gel)
4 cups sugar

Steps:

  • Wash and hull the strawberries, and place them in a saucepan with a splash of water and lemon juice (if using). Mash with a potato masher and simmer over medium heat for about 10 minutes until they've released their juices.
  • Strain the strawberry pulp through a jelly bag or dampened cheesecloth for at least 2 hours, preferably longer for a better yield.
  • It takes roughly 4 pounds of strawberries to make the 4 cups of juice needed for this recipe. If you're a bit short for any reason, add water or fruit juice.
  • Bring the juice to a boil on the stovetop and add the powdered pectin. (Don't add the sugar yet.) Return the mixture to a boil, stirring frequently to distribute the pectin, and boil hard for about a minute.
  • Add the sugar, and return to a boil. (This is important, don't add the sugar until last or the strawberry jelly may not set.)
  • Boil hard for about 1 minute, and then pour into prepared canning jars leaving 1/4 inch headspace.
  • Store in the refrigerator, or process in a water bath canner for 10 minutes. Turn off the heat and allow the jars to stand in the canner for an additional 5 minutes before removing them to cool.
  • Check seals and store any unsealed jars in the refrigerator for immediate use.

20 medium cooking apples (or any)
12 pineapple or 12 other variety quince
2 quarts cranberries
2 vanilla beans
to taste sugar

Steps:

  • The apples and quince must be washed, the stem and blossom ends scooped out, and each one quartered.
  • Remove any bruises to clean flesh.
  • Pick over the cranberries, discarding any less than perfect. Place all in non aluminum pot and barely cover with water Boil until they are quite soft. Strain through jelly bag.
  • Slice vanilla beans once lengthwise, and place in clean pot. Add strained liquid and boil gently for 12 minutes.
  • Set beans aside. Measure juice, using 1 cup juice to 1 cup sugar, and cooking no more than 4 cups at a time. Place in clean pot. Boil until jelly sheets from spoon.
  • Pour into 1/2 pint sterilized jars and seal.
  • Process 5 minutes in boiling bath.
  • NOTE: Cheat if you like, and add more water to the fruit after the first straining.
  • Boil and strain that, combine with the first liquid and continue as directed.
  • There's so much pectin in the fruit you can get away with it. Of course if you're going for the top prize at the fair, you might want to forego that this time. Use the vanilla beans in the water you boil for your next few pitchers of herbal iced tea.

I cant beleive this recipe is not on zaar. My nan and mum used to make this for us when we were kids. I took on this recipe and made it for my kids. It wasn't until I went to the supermarket and DS now 21, and DD now 17 saw the strawberries and asked me to make it. Its so easy to make, the worst part is waiting for it to set!

500 g fresh strawberries, hulled and halved lengthways
85 g raspberry jelly crystals
1 cup boiling water
200 ml cold water
whipped cream or ice cream, to serve

Steps:

  • Arrange strawberries in a 5 cup dish.
  • Place jelly crytals in a medium heatproof jug and add boiling water until the jelly crystals dissolve.Stir in cold water. (Cool just a little if using a non heat proof dish)
  • Pour jelly mixture over the stawberries.
  • Cover and refrigerate for 2-3 hours.
  • Serve strawberry jelly with cream or ice cream -- or both!

1 sachet gelatine
450ml strawberry or apple juice
15-18 very ripe strawberries
whipped cream , for decoration

Steps:

  • Ask a grown-up to put 6 tsp boiling water into a jug. Sprinkle on the gelatine, then whisk carefully until it dissolves.
  • Pour in the juice and whisk, making sure it's all mixed in.
  • Pull the green hulls out of the strawberries. Use a knife to cut them into slices or small chunks.
  • Put some pieces of strawberry into 6 glasses leaving a few to decorate at the end. They should be full but with plenty of room around them.
  • Pour the juice into 6 glasses, filling them almost to the top. Put them on a plate or tray in the fridge to set. They will take about 4 hours to set.
  • When the jellies are set, decorate with whipped cream and extra strawberries.
