STRAWBERRY JELLY CAKE
This layer cake is affectionately referred to as "Grandma's Cake" by many Southerners. Using jelly as the filling and the frosting is a wonderful way to add fruity flavor to a cake year-round. The jelly seeps into the cake, so there's no need to brush on a simple syrup to keep it moist. This recipe uses cake flour, which has less protein than all-purpose flour and yields a more tender crumb. But it can be prone to clumping. Sift it into the mixing bowl, or use a whisk to aerate it and break up any lumps. "Frost" the sides of the cake with jelly or buttercream, or just let it drip down the sides. When making this cake in the summer, you can top it with sliced fresh strawberries.

Steps:
- Heat oven to 350 degrees. Using baking spray, grease and flour 3 (8- or 9-inch) cake pans.
- Sift the 3 cups cake flour and the baking powder into a medium bowl. Add the salt and stir to combine.
- In the bowl of a stand mixer fitted with the paddle attachment, or a large bowl using an electric mixer, combine the butter and sugar. Beat on medium until light and fluffy, about 4 minutes.
- Add eggs, one at a time, beating until each is incorporated before adding the next. Add the vanilla extract.
- Reduce the mixer speed to low, and alternate adding the flour mixture and milk, one third at a time, until both are fully incorporated.
- Scrape down the mixer attachments, and the sides and bottom of the bowl. Beat just until the batter comes together. (Don't overmix.) Pour the batter evenly into the cake pans.
- Bake until the cake is browned on top, and a toothpick inserted into the middle comes out clean, about 25 minutes.
- Remove from the oven and place the cake pans on a wire rack. Let the cakes cool in the pans completely, about 30 minutes, before inverting onto the rack.
- Once the cake layers are cool, add the strawberry jelly to a small bowl and microwave in 10-second intervals, just until the jelly becomes spreadable.
- To assemble, place a layer of cake on the serving dish, then spread ½ cup of jelly on top. Repeat with the remaining two layers, adding more jelly on top to drizzle down the cake. Top with fresh, sliced strawberries.
STRAWBERRY JELLO ANGEL FOOD CAKE RECIPE - (3.9/5)

Steps:
- In a large bowl big enough to hold a whole angel food cake inside, mix jello according to directions, MINUS 1/2 cup of cold water, until all jello is completely dissolved. Pour strawberries into jello. Place cake upside down into bowl, pushing down into jello/strawberries mixture, holding down with your hands for a few minutes, giving the cake a little time to absorb some of the liquid. Take something heavy enough to hold down cake almost completely in jello and place on top of cake in bowl. I usually use a few heavy plates that fit inside the top of the bowl well, about the size of the cake. Or if your bowl has a tight fitting lid that will hold your cake down in the jello, use that. Refrigerate until firmly set, I refrigerate mine until the next day. To release cake, fill sink with warm water, hold bowl down in water, making sure not to let it get in the bowl, for about 1 minute. Place large plate over top of bowl and invert, hold for a few seconds, if cake doesn't fall to plate, hold in water a few more seconds, repeat until cake falls out onto plate when inverted. Serve with whipped cream if desired.

Steps:
- Heat oven to 350°F.
- Prepare cake batter and bake as directed on package for 2 (9-inch) round layers. Cool cakes in pans 10 min.; invert onto wire racks. Gently remove pans. Wash and dry cake pans; reserve 1 for later use. Cool cakes completely.
- Meanwhile, add boiling water to gelatin mix in small bowl; stir 2 min. until completely dissolved. Stir in cold water. Pour 1/3 cup gelatin into 9-inch round pan sprayed with cooking spray. Refrigerate 10 min. or until gelatin is set but not firm. Top with fruit then remaining gelatin. Refrigerate 30 min. or until gelatin is firm.
- Dip knife in warm water, then run around edge of pan to loosen gelatin from side of pan. Dip pan in warm water, just to rim, for 15 sec. Lift from water and gently pull gelatin from edge of pan with moistened fingers. (Do not remove gelatin from pan.) Spread 1/2 cup COOL WHIP over gelatin; cover with 1 cake layer, rounded side up.
- Place remaining cake layer, rounded side up, on serving plate; spread with 1 cup of the remaining COOL WHIP. Invert gelatin-filled pan over frosted cake layer; remove pan. Spoon remaining COOL WHIP into resealable plastic bag. Cut hole in one bottom corner of bag; use to pipe COOL WHIP into spaces between layers.

STRAWBERRY JELLO POUND CAKE
This is a variation of a Lemon Jello Pound Cake I found on another recipe site. I'm experimenting with cake decorating/sculpting, and it carves rather nicely. It called for lemon jello instead of strawberry, lemon extract instead of vanilla, and apricot nectar instead of orange juice. I will continue to experiment with different flavors of jello, extracts, and juices. I would like to encourage you to do the same and post your variations in your reviews. NOTE: For my purposes, I used cupcake tins for my layers, so I've set the servings accordingly. UPDATE: Originally, I posted this with orange juice instead of strawberry-banana nectar, so the first 2 reviews reflect that. I have since tried strawberry-banana nectar, and I like it much better for the strawberry flavor. If you want to try what's been reviewed or can't find the nectar, try the OJ. It's just got a little bite to it where the nectar is a more mellow flavor.

STRAWBERRY JELLO ANGEL FOOD CAKE RECIPE - (4.2/5)

Steps:
- In a large mixing bowl that can be sealed, dissolve jello in boiling water. Add frozen strawberries that have been thawed, and stir until well blended. Turn Angel Food cake upside down and push down in the jello mixture. Cover with lid and seal tightly. Turn bowl upside down two or three times to distribute the strawberries. Turn right side up and push cake down in the jello one more time. Place in the refrigerator until jello has set, approximately 4 hours or overnight. Check after thirty minutes to make sure the cake is submerged in the jello. (Sometimes I have to lay a plate on top to get it to submerge.) Set out on the counter for a few minutes to reach room temperature. Invert cake on a serving platter. Frost with whipped cream or cool whip and serve immediately. Store leftover cake in the refrigerator. Notes: If you do not have a big enough bowl with a seal, you can use a large bowl and place a plate on top of the cake and seal with a plastic wrap or foil. This cake can be made with a sugar free angel food cake, sugar free jello, and unsweetened strawberries.

STRAWBERRY JELL-O AND ANGEL FOOD CAKE RECIPE BY TASTY
Here's what you need: instant strawberry gelatin dessert mix, strawberries, angel food cake mix, greek yogurt, whipped cream, strawberries, pistachio, chocolate chips
Provided by Sarah LaDue
Yield 5 servings

Steps:
- Mix Jell-O according to package directions. Fill the glasses between ¼ - ⅓ full (depending on how many servings you are making).
- Carefully place chopped strawberries on top of Jell-o and place glasses in the fridge 2-4 hours until completely set.
- While waiting, thinly slice angel food cake. Then, using either a cookie cutter or the top of a teacup, overlap 2 slices of cake and cut out circles that are just slightly smaller than the serving glasses (so that the cake creates a good snug fit).
- Mix together yogurt with ½ - 1 cup (245 ml) whipped cream. Then, place in the fridge until you are ready to assemble trifles.
- Melt Hershey's chocolate chips in a Ziploc bag in the microwave for 30 seconds (knead bag every 10 seconds). Cut off a tiny corner of the bag and draw shapes onto wax paper. Set wax paper in the freezer for 20 minutes to harden.
- When Jell-o glasses are set, remove them from the fridge. Top Jell-o with the cutout cake slices, then top with a good dollop or two of the whipped yogurt mixture.
- Add your garnishes of whole strawberries, chocolate shapes, and chopped pistachios and serve.
- Enjoy!
