A super simple bar where the delicious crust is also the topping!

Provided by Sarah Mir

Number Of Ingredients 7

250 ml your favourite jam (a little less is ok too!)
1 cup rolled oats
1 cup flour (can use WW Pastry Flour)
1/2 tsp baking powder
1/4 tsp salt
2 tbsp sugar ((optional, but recommended if your jam isn't super sweet))
1/2 cup melted butter

Steps:

  • Preheat oven to 350F and line a square tin with parchment paper (for easy removal!)
  • Combine the dry ingredients together and then gently mix in the melted butter. If you are using sugar stir it in here too.
  • Pat two-third of the mix into the bottom of the pan
  • Spread the jam over it
  • Scatter the remaining crumble over top
  • Bake for 25-30 minutes, the crumble should be nice and golden.
  • Let cool in tin for 5 mintues. Then lift the parchment paper and bars onto a wire rock to cool. Cut into desired shapes

Strawberry jam bars are all about that unbeatable combo of buttery shortbread cookie dough and sweet-tart strawberry jam!

2 cups all purpose flour
1/2 cup brown sugar
1/2 tsp salt
1/4 tsp ground cinnamon
1/4 tsp ground nutmeg
1 cup unsalted butter, room temperature
1 tsp vanilla extract
1 cup strawberry jam (or other fruit preserves)
1/4 cup rolled oats

Steps:

  • Preheat oven to 350F. Butter a 7 x 11 inch tart pan with a removable bottom, and set aside.
  • In the bowl of a food processor, add the flour, brown sugar, salt, cinnamon, nutmeg, butter, and vanilla extract.
  • Pulse until the ingredients are combined, and continue to pulse until the dough comes together into a single clump.
  • Reserve about 1 cup of the shortbread dough for topping the crumble bars, and crumble the rest into your prepared baking pan.
  • Press the dough evenly into the bottom of the pan with your fingers.
  • Spread the strawberry jam evenly over the dough.
  • Mix the reserved dough with the rolled oats, and crumble evenly over the jam layer. Some of the strawberry filling will show through, and that's good.
  • Bake for about 35-40 minutes until just starting to turn golden brown on the edges.
  • Allow to cool before removing from the pan and slicing. Note: shortbread is quite soft right out of the oven, and will firm up as it cools.

I got this recipe from my friend Donna. This recipe is easy and everyone seems to like it. You can substitute any flavor jam or preserves for the strawberry called for in the recipe. Feel free to experiment with your favorite.

1/2 cup butter margarine, softened
1/2 cup packed brown sugar
1 large egg
1 (18 1/4 ounce) package white cake mix or 1 (18 1/4 ounce) package yellow cake mix
1 cup finely crushed corn flakes
1 1/2 cups strawberry jam or 1 1/2 cups strawberry preserves

Steps:

  • In a mixing bowl, cream butter and brown sugar until smooth.
  • Add egg and mix well.
  • Gradually add dry cake mix and corn flakes.
  • Reserve 1 1/2 cups of dough for topping.
  • Press remaining dough in a greased 13 x 9 baking pan.
  • Carefully spread jam over crust.

1 1/2 cups all-purpose flour
1 1/2 cup oats
1 cup packed brown sugar
1 teaspoon baking powder

One 10 to 12-ounce jar strawberry preserves

Steps:

  • Preheat the oven to 350 degrees F. Butter a 9-by-13-inch rectangular pan.
  • Mix together the butter, flour, oats, brown sugar, baking powder and salt. Press half the oat mixture into the prepared pan. Spread with the strawberry preserves. Sprinkle the other half of the oat mixture over the top and pat lightly. Bake until light brown, 30 to 40 minutes. Let cool completely, and then cut into squares.

3/4 cup (1 1/2 sticks) unsalted butter, at room temperature
3/4 cup sugar
1 large egg plus 1 large egg yolk, at room temperature
3/4 teaspoon baking powder
1/2 teaspoon fine salt
1/2 teaspoon almond extract
1 1/2 cups all-purpose flour
1/3 cup jam of your choice
1 tablespoon amaretto (you may also use another brandy or distilled spirit of your choice)
1/2 cup slivered almonds

Steps:

  • Preheat the oven to 350 degrees F. Line an 8-inch square baking pan with parchment paper, leaving an overhang on 2 sides for gripping and removing the bars after baking.
  • Beat the butter, sugar, egg and egg yolk in a medium bowl with a hand mixer until light and fluffy, about 2 minutes.
  • Add the baking powder, salt and almond extract and mix on low. Slowly incorporate the flour just until the batter comes together. Press two-thirds of the batter onto the bottom of the pan, reserving the remaining batter.
  • Stir together the jam and amaretto in a small bowl. Spread the fruit mixture over the batter, leaving a 1/2-inch border. Mix the slivered almonds into the reserved batter and crumble it on top. It will not cover all the jam, but it will spread during cooking.
  • Bake the bars until the jam is bubbly and the topping turns golden brown, about 35 minutes. Cool the bars in the pan on a rack. Use the parchment to lift the whole thing from the pan and cut it into 12 squares.

2 eggs, divided
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1/4 cup granulated sugar
1 tsp. almond extract
1 cup strawberry jam
1 tsp. powdered sugar

Steps:

  • Heat oven to 350ºF.
  • Beat butter, cake mix and 1 egg in large bowl with mixer until crumbly. Reserve 3/4 cup crumb mixture; press remaining onto bottom of 13x9-inch pan sprayed with cooking spray. Bake 10 min.
  • Meanwhile, beat cream cheese, granulated sugar and almond extract until blended. Add remaining egg; mix well.
  • Spread cream cheese mixture over crust; top with strawberry jam. Sprinkle with reserved crumb mixture.
  • Bake 45 min. or until center is set and crumb topping is lightly browned. Cool completely. Refrigerate 30 min. before cutting into bars.
