3 cups diced fresh pineapple (1/4-inch dice)
1/4 cup chopped fresh cilantro
1/4 cup crumbled queso fresco
3 tablespoons minced seeded jalapeno (about 1 medium jalapeno)
2 tablespoons fresh lime juice (about 1 lime)
2 tablespoons minced garlic (about 3 garlic cloves)
1 tablespoon finely grated ginger
1 vine-ripe tomato, seeded and cut into 1/4-inch dice
Kosher salt
Nonstick baking spray, for the foil
2 medium taro roots (approximately 13 ounces each), peeled
Kosher salt

Steps:

  • For the pineapple salsa: Add the pineapple, cilantro, queso fresco, jalapeno, lime juice, garlic, ginger and tomato to a large bowl and stir to combine. Add salt to taste. Let stand for at least 20 minutes to allow the flavors to combine.
  • For the taro chips: Preheat the oven to 375 degrees F. Line 2 baking sheets with foil and very lightly coat the foil with baking spray.
  • Using a mandoline, slice the taro root into 1/8-inch-thick rounds. You want the taro to be thin but still sturdy. If you can see through the taro after you've sliced it, it is too thin.
  • Spread the taro chips between the baking sheets, making sure they do not overlap. Bake, rotating the baking sheets halfway, until the chips are brown in spots and crispy, 15 to 20 minutes. Season immediately with salt. Let cool for 10 minutes, then serve with the pineapple salsa.

2 pounds boneless skinless chicken breasts, cut into strips
1 tablespoon olive oil
1 each medium green, sweet red and yellow peppers, julienned
1 medium onion, cut into thin wedges
2 tablespoons fajita seasoning mix
1/4 cup water
2 tablespoons honey
1 tablespoon dried parsley flakes
1 teaspoon garlic powder
1/2 teaspoon salt
1/2 cup unsweetened pineapple chunks, drained
8 flour tortillas (10 inches), warmed

Steps:

  • In a large nonstick skillet, cook chicken in oil for 4-5 minutes. Add peppers and onion; cook and stir 4-5 minutes longer. , In a small bowl, combine seasoning mix and water; stir in the honey, parsley, garlic powder and salt. Stir into skillet. Add pineapple. 1 avocado
1/3 cup sour cream
2 jalapeno peppers (1 chopped, 1 whole)
1 cup fresh cilantro, chopped
4 teaspoons fresh lime juice, plus wedges for serving
Kosher salt and freshly ground pepper
1/4 cup vegetable oil, plus more for the grill
1 pound peeled and deveined large shrimp
2 1/2 teaspoons fajita seasoning
2 bell peppers (red and/or orange), sliced
3 thickly sliced fresh pineapple rings
8 small flour tortillas

Steps:

  • Halve the avocado and scoop into a food processor. Add the sour cream, chopped jalapeno, 1/2 cup cilantro and 2 teaspoons lime juice; process until smooth. Season with salt and pepper.
  • Heat a grill to medium high and oil the grates. Toss the shrimp with 2 tablespoons vegetable oil, 2 teaspoons fajita seasoning, the remaining 2 teaspoons lime juice, a big pinch of salt and a few grinds of pepper in a large bowl. Thread the shrimp onto skewers, leaving a little space between each shrimp. Toss the bell peppers, pineapple and whole jalapeno with the remaining 2 tablespoons vegetable oil, 1/2 teaspoon fajita seasoning, 2 pinches of salt and a few grinds of pepper in another large bowl.
  • Grill the shrimp until cooked through, 2 to 3 minutes per side; transfer to a large bowl. Grill the pineapple and tortillas until well-marked, 1 to 2 minutes per side. Transfer to a cutting board.
  • Place the bell peppers and whole jalapeno in a grill basket and grill, flipping, until charred, 5 to 6 minutes. Chop the pineapple and add to the shrimp. Thinly slice the jalapeno (remove the seeds for less heat). Add to the shrimp along with the bell peppers and remaining 1/2 cup cilantro; season with salt if needed and toss.
  • Divide the shrimp mixture among plates. Serve with the tortillas, avocado sauce and lime wedges.

1 1/2 lbs perch fillets, skinned and cut into 1/2-inch strips (you may sub tilapia,or for a vegetarian version, use Worthington Scallops)
1 cup chopped fresh pineapple (may sub canned)
1/4 cup diced red onion
1/4 cup diced red bell pepper
1/4 cup diced green bell pepper
2 tablespoons jalapenos, seeded and chopped
2 tablespoons fresh cilantro, chopped
4 (10 inch) tortillas, warmed

Steps:

  • Combine lemon pepper, cumin, salt, and 4 tbls. lime juice in a resealable plastic bag; add fish. Seal and shake; chill 20 minutes.
  • Combine pineapple, bell peppers, jalapeno, cilantro, and remaining lime juice in a medium bowl; set aside.
  • Grill fish, covered with grill lid, on a grill rack coated with nonstick cooking spray over medium heat 4 to 6 minutes on each side or until fish flakes with a fork. You may broil if you wish instead of grilling. If using vegetarian scallops, heat under broiler, turning once or twice).

1 tablespoon chipotle-in-adobo sauce (from a 7-ounce can)
1 packed teaspoon grated lime zest and 2 tablespoons fresh juice, plus 1 more lime, halved
2 tablespoons extra-virgin olive oil, plus more for brushing
Kosher salt and freshly ground pepper
1 medium white onion, cut into 1/2-inch rounds
1/2 medium pineapple, cored and cut into 1/2-inch rounds
8 flour or corn tortillas (each 6 inches)
1/3 cup packed chopped cilantro, plus sprigs for serving
Avocado slices and sour cream, for serving

Steps:

  • Heat grill to medium-high; place a large cast-iron skillet on grates to preheat. Toss shrimp with adobo, zest, oil, and 1/2 teaspoon salt. 2 small red bell peppers, cut into strips
2 teaspoons Jamaican jerk seasoning

1 tablespoon vegetable oil
chopped fresh cilantro
lime wedges

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Wrap the tortillas in aluminum foil and heat in the oven.

1 can (8 ounces) sliced pineapple
1 envelope fajita seasoning mix
1 pork tenderloin (1 pound)
1 medium sweet red pepper, sliced
1 medium onion, sliced
4 flour tortillas (8 inches), warmed
1 cup shredded Monterey Jack cheese
1 medium ripe avocado, peeled and sliced

Steps:

  • Drain pineapple, reserving juice; set pineapple aside. In a large resealable plastic bag, combine seasoning mix and reserved juice; add the pork. Seal bag and turn to coat; refrigerate for 15 minutes., Meanwhile, place the red pepper, onion and pineapple on a double thickness of heavy-duty foil (about 12 in. square).
