HOMEMADE STRAWBERRY CAKE
The one thing that sets this strawberry cake apart from others? Reduce fresh strawberry puree down and add to the best white cake batter.

- Make the reduced strawberry puree and allow it to cool completely. See note. You can make it a few days ahead of time and store it covered in the refrigerator or cover and freeze it for up to 3 months. Thaw before using in the recipe.
- Preheat the oven to 350°F (177°C). Grease and lightly flour two 9-inch cake pans.
- Whisk the cake flour, baking powder, baking soda, and salt together. Set aside.
- Using a handheld or stand mixer fitted with a whisk attachment, beat the butter and sugar together on high speed until smooth and creamed, about 2 minutes. Scrape down the sides and up the bottom of the bowl with a rubber spatula as needed. Beat in the egg whites on high speed until combined, about 2 minutes. Then beat in the sour cream and vanilla extract. Scrape down the sides and up the bottom of the bowl as needed. With the mixer on low speed, add the dry ingredients until just incorporated. With the mixer still running on low, slowly pour in the milk *just* until combined. Do not overmix. Whisk in 1/2 cup of reduced strawberry puree, making sure there are no lumps at the bottom of the bowl. The batter will be slightly thick. Stir in food coloring, if desired. (I use 1 small drop.)
- Pour batter evenly into cake pans. Bake for around 24-25 minutes or until the cakes are baked through. To test for doneness, insert a toothpick into the center of the cake. If it comes out clean, it is done. Allow cakes to cool completely in the pans set on a wire rack. The cakes must be completely cool before frosting and assembling.
- Using a blender or food processor, process the freeze-dried strawberries into a powdery crumb. You should have around 1/2 cup crumbs. Set aside. In a large bowl using a hand-held or stand mixer fitted with a paddle or whisk attachment, beat the cream cheese for 1 minute on high speed until completely smooth and creamy. Beat in the butter until combined. Add the confectioners' sugar, strawberry powder, 1 Tablespoon milk, and vanilla and beat on medium-high speed until combined and creamy. Add 1 more Tablespoon of milk to slightly thin out, if desired. Taste, then add a pinch of salt if needed. Yields about 3 cups of frosting.
- First, using a large serrated knife, slice a thin layer off the tops of the cakes to create a flat surface. Discard (or crumble over ice cream!). Place 1 cake layer on your cake stand or serving plate. Evenly cover the top with frosting. Top with 2nd layer and spread the remaining frosting all over the top and sides. Refrigerate for at least 45 minutes before slicing. This helps the cake keep its shape when cutting- it could slightly fall apart without time in the fridge.
- Cover leftover cake tightly and store in the refrigerator for 5 days.
STRAWBERRY TORTE
German Erdbeerkuchen (strawberry cake) with vanilla pudding

- Preheat the oven to 350° Fahrenheit. Grease the bottom of an 11" tart pan and lightly sprinkle with some flour. Be sure not to grease the sides of the tart pan as this will interfere with the batter rising.
- Use a large mixing bowl and a hand mixer and beat the softened butter, sugar, vanilla extract, and salt together on high speed until smooth. About 2-3 minutes.
- Reduce the speed to low and add in one egg at a time. Allow each egg to fully incorporate into the batter before adding the next egg.
- Slowly add the milk into the batter. Beat on low until the milk is well combined.
- Add the flour and baking powder to the batter and continue to beat on low speed. Use a spatula to scrape the sides. Beat until the dry ingredients are well combined.
- Pour batter into the tart pan. Use a spatula to spread the batter evenly.
- Bake for 20 minutes. Remove from the oven and transfer onto a cooling rack. Remove from the tart pan and allow it to cool completely.
- Use a medium mixing bowl and combine instant pudding with heavy whipping cream. Use a hand mixer and whisk until the mixture is creamy. Set aside.
- Use a small bowl and whisk 1 tablespoon cornstarch with 1/4 cup of water until there are no lumps. Set aside.
- Use a small saucepan and bring a ¼ cup of water and ½ cup of sugar to a boil. Once the water has reached a boil, reduce the heat to medium and whisk in the liquid cornstarch into the boiling sugar water.
- Whisk continuously for about 3-5 minutes until the mixture becomes thick and syrupy. Remove from heat and set aside.
- Once the cake has fully cooled. Spread the pudding cream mixture with a spatula or cake spreader evenly across the cake.
- Top the filling with sliced strawberries. Use a pastry brush to glaze the strawberries. Allow to harden for 30 minutes.

STRAWBERRY CAKE DELUXE
This one's for the hubby! Strawberry cake is his favorite and this one especially. It's close to a banana bread but with strawberries.

- 1. Heavily grease and flour one tube cake pan, a bundt pan will do. Preheat oven to 325.
- 2. Mix all dry ingredients with a whisk. Chop the strawberries and place in the measuring cup up to the 2 cup level with 1/2 cup of the sugar in the recipe along with the balsamic vinegar. Stir well and allow to stand while finishing the batter.
- 3. To the dry ingredients add the vanilla, the eggs, the oil and mix well. Will be sort of crumbly. With the mixer add the can of drained crushed pineapple. Then add in the strawberry mixture and continue to use the mixer until all is well mixed. Lastly stir in the pecan pieces.
- 4. Pour the batter into the cake pan. Place in the oven on a baking sheet to prevent melted shortening from falling onto the oven floor. Bake at 325 degrees for 1 and 1/2 hours or until tests done. Allow to cool in the pan about 20 minutes before removal.
- 5. Place the powered sugar in a screen strainer and dust the top of the cake until desired amount is reached. Better to wait until cake is completely cooled to slice. Very moist!
DELUXE STRAWBERRY MARGARITA CAKE
For this cake I used inspiration from a couple of popular cakes- Jello Poke Cake and Strawberry Margarita Cake. The end result is an absolutely delicious, lush dessert! I brought this cake to work and it instantly disappeared! For a non-alcoholic version you can sub the Tequila with Water.

- Preheat oven to 350°F.
- Grease and flour 9x13 cake pan (or two 9x9 pans).
- Combine white cake mix, strawberry margarita mix, tequila, vegetable oil and egg whites in large mixing bowl.
- Mix until well combined.
- Pour into pan.
- Place in preheated oven for approximately 30 minutes, or until an inserted toothpick comes out clean.
- Cool completely.
- With a fork, poke wholes generously all over top of cake.
- In a saucepan, boil 1 cup of water.
- Add Strawberry Jello and stir for 2 minutes or as directed on package.
- Add 1/2 cup of Cold water and 1/2 cup of Tequila to Jello and combine.
- Pour carefully over cake and allow to soak into holes.
- Refrigerate for at least 4 hours or overnight.
- Mix 2 tbsp of lime rind in with cool whip.
- Frost cake.
- Garnish with Pink Sugar Crystals, Lime Slices and Strawberry Slices
- Serve and enjoy!

STRAWBERRY CAKE

- Butter and line the bases of three 18cm cake tins. Heat the oven to 180C/160C fan/gas 4. Blend the butter and sugar in a food processor until smooth and creamy. Add the eggs, flour and yogurt and blend again. Add 200g strawberries (save the best ones to decorate) and the vanilla. Blend once more, until the mixture is well combined.
- Divide the cake batter evenly between the three cake tins. Spread and smooth the tops with a spatula, then bake for 25-30 mins, until the cakes have risen and a skewer inserted into the centre comes out clean. Return to the oven for another 5 mins if any wet mixture clings to the skewer. Leave in the tins for 5 mins, then turn onto a wire rack and leave to cool completely. The cakes can be made up to two days before icing, or frozen for two months.
- For the icing, blend the butter and half the sugar until smooth and creamy, add the soft cheese and the remaining sugar and blend again. Be careful not to over mix as the icing will become runny. (If you do overmix, don't worry - keep mixing with an electric whisk and it'll thicken back up).
- Layer the cakes with the jam and half the icing. Invert the final cake on top, so the base of the cake it now the top, giving you a flat surface. Pile the rest of the icing on top of the cake, using a palette knife to spread the icing over the top and down the sides. Save a little icing to pipe rosettes around the edge of the cake, if you like. Top with the remaining strawberries. Can be made up to a day ahead of serving, keep somewhere cool or in the fridge. Will keep for three days.

STRAWBERRY DELUXE CAKE
This is like strawberry shortcake on steriods lol! I have made it with pineapple too, delish both ways!

- Mix and bake cake according to package directions, substituting milk for water. Bake in 13x9x2 pan. Cool.
- Spread top of cake with stawberries (juice too).
- Mix vanilla pudding according to package directions. Add softened cream cheese and mix well with mixer.
- Spread mixture over strawberries. Top with Cool Whip. Refridgerate.
- You can garnish the top with fresh strawberries. A neat way of doing this is to cut them with a boiled egg slicer and fan them out.
- Crushed pineapple (juice included) can be used instead of strawberries. Really good either way.

- Wash and hull the strawberries and gently puree them in a food processor, blender, or with a hand (stick) blender. You want them to be good and chopped up but not all liquid.
