1/2 cup water
1 1/4 cups sugar
8 cups fresh strawberries
1/4 cup light rum, coconut rum is a special treat
2 teaspoons lime zest
1/4 cup lime juice
1 tablespoon orange liqueur or 1 tablespoon orange extract

Steps:

  • In a saucepan combine water and sugar.
  • Heat over medium heat until mixture comes to a boil and sugar dissolves.
  • Remove from heat and cool syrup completely.
  • Place strawberries in a food processor bowl or blender container. Cover; process or blend till nearly smooth.
  • In a bowl stir together pureed strawberries, rum, lime peel, lime juice, and orange liqueur. Stir in the cooled syrup.
  • Freeze in a 4-quart ice cream freezer according to the manufacturer's directions.

6 ounces light rum
4 ounces lime juice

6 fresh strawberry slices, for garnish

Steps:

  • In a blender, combine the frozen strawberries, rum, lime juice and sugar. Blend until smooth and divide among 6 highball or hurricane-style glasses. Garnish each glass with a strawberry slice and serve immediately.

1 cup lemon lime-flavored seltzer
2 cups chopped strawberries
2 Tbsp. lime juice
2 Tbsp. lemon juice
2 cups boiling water
1 pkg. (3 oz.) JELL-O Strawberry Flavor Gelatin
1/2 cup sugar

Steps:

  • Blend seltzer, strawberries and juices in blender until smooth. Add boiling water to combined gelatin mix and sugar in medium bowl; stir 2 min. until completely dissolved. Add strawberry mixture; stir until blended.
  • Pour into 9-inch square pan. Freeze 1 to 1-1/2 hours or until ice crystals form 1 inch around edges of pan.
  • Spoon half the gelatin mixture into blender; blend until smooth. Pour into medium bowl. Repeat with remaining gelatin mixture. Add to blended gelatin mixture in bowl; mix well. Transfer to freezer container.
  • Freeze 6 hours or until firm.

1 part fresh strawberries, tops trimmed off
Lime juice, as needed
Lime wedges

Steps:

  • Add to a blender and puree: ice cubes, light rum, Triple Sec, fresh strawberries and lime juice. Rub the rim of a glass with lime. Roll the glass in sugar. Garnish with lime wedges. Taste and enjoy!

12 shortbread cookies (about 8 ounces)
3 tablespoons sugar
2 tablespoons unsalted butter, melted
1 tablespoon white rum
Pinch fine salt
2 tablespoons lime juice
2 tablespoons white rum
2 pints strawberry sorbet
1/4 cup light corn syrup
1 tablespoon lime juice
1 tablespoon white rum
1/2 teaspoon lime zest, plus 1/2 teaspoon more for garnish
1 1/4 cups heavy cream

Steps:

  • For the shortbread crust: Position an oven rack in the center of the oven, and preheat to 350 degrees F. Process the cookies, sugar, butter, rum and salt in a food processor until the texture of wet sand. Press the crumbs evenly into the bottom and up the side of a 9-inch glass pie plate. Bake until lightly browned, 8 to 10 minutes. Let cool completely on a wire rack.
  • For the sorbet filling: Mix the lime juice and rum in a measuring cup; set aside. Scoop 1 pint of the sorbet onto the bottom of the cooled crust, placing scoops evenly. Let stand until spreadable, about 5 minutes. Smooth the sorbet with an offset spatula, carefully covering the bottom of the crust. Drizzle 2 tablespoons of the rum mixture very slowly over the sorbet, allowing it to soak in. Repeat with the remaining sorbet and rum mixture. Smooth the top with the spatula. Loosely cover the pie with plastic wrap, and transfer to the freezer while preparing the whipped cream.
  • For the lime whipped cream: Beat the corn syrup, lime juice, rum and lime zest in a large bowl with an electric mixer on medium speed until combined. Add the heavy cream, and beat on medium-high speed until stiff peaks form. Remove the pie from the freezer, and quickly spread with the whipped cream, leaving a 1/2-inch border around the outside edge. Loosely cover the pie, and freeze until firm, at least 6 hours or overnight.
  • Garnish the frozen pie with 1/2 teaspoon of lime zest before serving.

Steps:

  • Blend the strawberries then push the resulting puree through a sieve to remove some of the seeds. Tip the sieved puree into the blender again and add the ice, rum and lime juice. Blend again and divide the mixture between 2 Martini glasses.
  • Thread the lime slices and strawberry halves onto the cocktail sticks and place onto the edge of the glass, serve immediately.

1 (3 ounce) package ladyfingers, split in half horizontally
2 tablespoons light rum or 2 tablespoons apricot nectar
1 (8 ounce) container thawed frozen non-dairy topping, divided
1 (8 ounce) package cream cheese, softened
1 (16 ounce) package frozen strawberries, thawed
1 (10 ounce) can frozen strawberry daiquiri concentrate, thawed
fresh strawberries (optional)

Steps:

  • Reserve 1 cup whipped topping in refrigerator.
  • Place ladyfinger halves, cut side up, in the bottom of 11×7 inch dish and brush with rum.
  • Put cream cheese in food processor and process until fluffy.
  • Add remaining whipped topping, strawberries and daiquiri mix and process with on/off pulses until blended.
  • Spoon over lady fingers and freeze 6 hours or overnight.
  • Remove from freezer 20-30 minutes before serving, top with remaining whipped topping and garnish with fresh strawberries if desired.

1 cup water
3/4 cup sugar
1 pint fresh strawberries
1/2 cup orange juice

Steps:

  • Combine water & sugar in a pan, stir over low heat until sugar dissolves.
  • Bring to a boil & boil gently for 5 minutes without stirring.
  • Set aside to cool.
  • Wash berries.
  • Remove caps.
  • Puree fruit in a blender or food processor until almost smooth.
  • In a medium bowl, combine fruit with cooled syrup and orange juice.
  • If you have an ice cream freezer, you can put the puree mixture into that & process using the directions with the machine.
  • Otherwise, pour into an 8 by 8 pan & cover with plastic wrap.
  • Place in freezer & freeze until almost firm, 1 to 2 hours.
  • Stir 2 or 3 times with a fork while freezing.
