- Preheat oven to 350 degrees F (175 degrees C) grease and flour a 9 inch Bundt pan. Pour boiling water over raisins and let stand 5 minutes. Drain well and dry raisins with a cloth towel.
- In large bowl, combine sausage, brown sugar and white sugar. Stir until mixture is well blended. Add eggs and beat well.
- In a separate bowl, sift together flour, ginger, baking powder and pumpkin pie spice.
- Stir baking soda into coffee.
- Add flour mixture and coffee alternately to sausage mixture, beating well after each addition. Fold raisins and walnuts into cake batter.
- Pour batter into greased and floured 9 inch Bundt pan. Bake at 350 degrees F (175 degrees C) for 1 1/2 hours or until toothpick inserted into cake comes out clean. Cool in pan 15 minutes, then turn out onto wire rack.

SAVORY SAUSAGE AND CHEDDAR BREAD PUDDING
A holiday favorite, this make-ahead breakfast casserole brimming with sausage and sharp cheddar is perfect for feeding a crowd.

- Grease a 9 x 13-inch baking dish with butter.
- In a large sauté pan (preferably nonstick) over medium-high heat, melt 1 tablespoon butter. Add the sausage and cook, stirring with a wooden spoon to break the meat into small clumps, until browned, about 10 minutes. Transfer the sausage to a large mixing bowl, leaving the fat in the pan.
- Turn the heat down to medium, then add the onions to the pan along with 1 tablespoon of butter. Cook the onions, stirring constantly, until soft and translucent, about 5 minutes. Add the onions to the mixing bowl with the sausage, along with the bread cubes, grated cheese and parsley. Toss well, then spread the mixture evenly into the prepared baking pan.
- In a medium bowl, whisk together the eggs, half-and-half, salt and pepper.
- Pour the egg mixture evenly over the bread mixture. Cover tightly with saran wrap and refrigerate for at least a few hours or overnight.
- Preheat the oven to 350°F. Bake for about one hour, uncovered, until puffed and golden brown. Serve immediately.
- Note: The cook time is based on cooking the bread pudding directly out of the refrigerator. If it's left to sit out at room temperature before baking, check for doneness after 45 minutes.

- Preheat the oven to 400 degrees. Grease an 8 by 8-inch baking dish.
- Heat a skillet over medium-high heat. Cook the sausage while breaking into small pieces. Add the onion and bell pepper to the sausage and cook until the vegetables are soft and the sausage is no longer pink. Remove to a paper towel-lined bowl or plate and let drain and cool slightly.
- In a medium-size bowl whisk together the flour, baking powder, baking soda, dried sage, garlic powder, salt, and pepper. Add the milk and mayonnaise stir to combine.
- In a separate bowl mix the cooled sausage mixture with the pepper jack cheese, and parmesan cheese. Toss to combine. Add the egg and stir to combine.
- Pour half of the batter into the prepared pan and spread to cover the bottom. Spread the sausage mixture evenly over the first layer of batter. Carefully spread the remaining batter over the sausage mixture. It's not necessary to make the batter completely cover the sausage. It will spread some while baking.
- Bake for 20-25 minutes, or until firm and golden brown.

SAUSAGE-AND-CHEESE PANCAKE BREAKFAST CASSEROLE
This one-pot breakfast casserole is bound to please anyone with a love of sweet-and-savory dishes. Try using cooked bacon or ham instead of sausage, and Swiss or Gouda cheese instead of Cheddar for your own customized casserole.

- Butter an 8-inch-square baking dish; set aside. Put 3 tablespoons of the butter in a microwave-safe small bowl or liquid measure; microwave for 30 seconds to 1 minute to melt the butter.
- Whisk together the flour, baking powder, baking soda, 3 tablespoons of the sugar and 1/2 teaspoon salt in a large bowl. In a separate small bowl, whisk together the buttermilk, 2 eggs and the melted butter. Add the wet ingredients to the dry ingredients and stir until just combined.
- Heat a large nonstick skillet or griddle over medium heat. Melt a little of the remaining 1 tablespoon butter in the skillet. Working in batches, pour the batter by 1/4 cupfuls into the skillet and cook until the bottoms are golden brown and small bubbles appear on the tops, 2 to 3 minutes. Flip and cook until golden brown on the other sides, about 2 minutes. If the pancakes brown too quickly, reduce the heat to medium-low. Transfer the pancakes to a plate as finished. Repeat until all the batter is used, adding more butter to the skillet as necessary. (You should have at least 12 pancakes.)
- Whisk together the half-and-half, the remaining 5 eggs, the remaining 1 tablespoon sugar, the pepper and 1/4 teaspoon salt in a large bowl.
- Shingle half of the pancakes in the prepared baking dish. Scatter with half of the sausage, sprinkle with half of the cheese and scallions. Pour half the egg mixture evenly over the pancakes. Repeat with the remaining pancakes, sausage, cheese, scallions and egg mixture. Cover the dish with plastic wrap and refrigerate for at least 8 hours or up to overnight to allow the pancakes to soak in the custard.
- Preheat the oven to 350 degrees F. Remove the plastic wrap, cover the casserole loosely with foil and bake for 30 minutes. Uncover and continue to bake until golden brown, the custard is set and the center feels firm but springy, about 30 minutes more. Let cool 15 minutes before serving. Serve warm with maple syrup if you like.

- Preheat oven to 350.
- Brown sausage and cook bacon, quarter biscuits, and dice onion.
- Mix all ingredients well in a large bowl.
- Spray a large bundt pan with nonstick spray and pour in mixture.
- Bake at 350 for 30 minutes.
- Cool at least 5 minutes before attempting to remove from pan.
- Slice and serve immediately, or take it to the office!
